Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here.

Shopping List
SPAGHETTI SQUASH ENCHILADA BOWLS
- spaghetti squash
- olive oil
- kosher salt
- black pepper
- homemade enchilada sauce (see here)
- part-skim shredded Mexican cheese blend
- chopped cilantro and scallions for garnish
TURKEY CHILI TACO SOUP
- 1.3 lbs 99% lean ground turkey
- onion
- bell pepper
- rotel tomatoes with green chilies
- canned or frozen corn
- kidney beans
- tomato sauce
- fat free refried beans
- taco seasoning (you can use 40& less sodium)
- fat free low sodium chicken broth
CROCK POT CHICKEN CACCIATORE
- chicken thighs
- crushed tomatoes (Tuttorosso my favorite!)
- red bell pepper
- green bell pepper
- onion
- dried oregano
- bay leaf
- salt and fresh pepper
- fresh herbs such as basil or parsley for topping
- pasta of your choice
BREADED CHICKEN CUTLETS WITH DECONSTRUCTED GUACAMOLE
- 2 (8 ounce) boneless chicken breasts
- seasoned salt (such as adobo seasoning)
- egg whites
- sazon (homemade or packaged)
- seasoned breadcrumbs
- Â olive oil
- avocado
- grape tomatoes
- red onion
- cilantro leaves
- kosher salt and black pepper
- cumin
- lime juice
- lime wedges
ONE-POT SPAGHETTI SQUASH AND MEAT SAUCE
- 1 lb 93% ground beef
- onion
- garlic
- kosher salt
- black pepper, to taste
- 28 oz can crushed tomatoes (I LOVE Tuttorosso)
- bay leaf
- pecorino romano cheese rind (optional, omit whole30)
- 1 Large (4 lb) spaghetti squash (makes 6 1/2 cups cooked)
- grated cheese for topping (optional, omit whole30)

Thank you so much for posting these meal plans. As a new mommy to 2 babies under 2 it’s so easy to eat terribly and lose my mind when it comes to dinner planning. This helps me out so much and it helps that your recipes are delicious! Thanks for taking the time to make this!
How would you recommend adapting the cacciatore for the instant pot? I just got one a few months ago and it’s still pretty new to me but I’m trying to learn.
It has a poultry button, I think that would be the right timing. It would be great in the Instant Pot.
I would love some ideas on football appetizers – I don’t see the “Party Apps” link – please point me in the right direction. I love ALL of your recipes, Gina!!
