Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. SPAGHETTI WITH SAUTEED CHICKEN AND GRAPE TOMATOES
- skinless chicken breast halves

- gluten-free (or whole wheat spaghetti)

- extra virgin olive oil
- fresh basil
I use spinach a lot. I have found that by using fresh spinach instead of frozen, it saves me time. Washing fresh spinach may seam to be a slow process, but actually by the time I am done and have chopped it I am done in less than 20 minutes. Frozen spinach has to be thawed and dried, which takes for ever and I use a lot of towels, more than I have actually. 1 bunch of fresh spinach is usually equivalent to the 10 oz of frozen.
I do prefer to use fresh ingredients whenever I can. It makes for a lot healthier food than canned (to much salt added).
