Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here

Tuesday: Blackened Fish Tacos with Cabbage Mango Slaw
Wednesday: Pepper Steak with brown rice
Thursday: Chicken and Shrimo Laap (Larb)
Friday: Naked Salmon Burgers with Sriracha Mayo
Saturday: Dinner Out
Sunday: Spaghetti with Sauteed Chicken and Grape Tomatoes

  1. I use spinach a lot. I have found that by using fresh spinach instead of frozen, it saves me time. Washing fresh spinach may seam to be a slow process, but actually by the time I am done and have chopped it I am done in less than 20 minutes. Frozen spinach has to be thawed and dried, which takes for ever and I use a lot of towels, more than I have actually. 1 bunch of fresh spinach is usually equivalent to the 10 oz of frozen.
    I do prefer to use fresh ingredients whenever I can. It makes for a lot healthier food than canned (to much salt added).
