
These chicken quesadillas are a meal in one! Loaded with chicken and veggies and very filling (I couldn't finish mine). I made these for dinner with my leftover avocado mango salsa but these are also great for lunch or you can even serve them as appetizers.
Chicken Quesadillas
Gina's Weight Watcher Recipes
Servings: 4 • Serving Size: 1 quesadilla • Old Points: 7.75 pts • Points+: 10 pts
Calories: 386.9 • Fat: 18.6 g • Carb: 31.6 g • Fiber: 16.3 g • Protein: 37.7 g
Ingredients:
- 16 oz skinless chicken breast, fat trimmed
- cumin
- oregano
- garlic powder
- salt and fresh pepper
- cooking spray
- 1/2 small onion, cut into strips
- 1 bell pepper (red or green) cut into strips
- 1 clove garlic, minced
- 1 tbsp oil
- 1-1/3 cup Weight Watchers Mexican blend shredded cheese
- 1 cup avocado-mango salsa
- 8 low carb whole wheat flour tortillas, La Tortilla Factory
Directions:

Slice chicken breast in half so you have 4 cutlets. Season chicken generously with salt, pepper, cumin, oregano and garlic powder.
Lightly spray a skillet on medium heat with oil or if using a grill, grill chicken until cooked on both sides. Remove from heat and cut chicken into strips, set aside. To the skillet, add 1 tbsp oil and cook onions and peppers, season with salt and pepper. Cook about 2 minutes, add garlic and continue cooking until vegetables are soft being careful not to burn the garlic. When cooked, set aside.
Heat skillet on medium heat and lightly spray with oil. Add tortilla, top with cheese, chicken, onions, peppers, and pico de gallo or avocado-mango salsa. Top with the other tortilla. Cheese should be melted and the bottom of the tortilla should be golden brown. Put a plate on top of the quesadilla to flip it over onto the plate. Then slide the other side onto the skillet. Cook another minute and remove with a spatula. Cut into wedges and serve with sour cream if you wish.

I love chicken quesadillas! I cook them in half the time using a George Foreman grill. I don't have to turn them over....the grill does the work for me. I also brush the tortillas lightly with a small amount of olive oil. I'll have to try the low carb tortillas. Thanks for your great recipes!

ReplyDeleteGina I made these last night and loved them!! WOW......these were amazing! Thank you for the scrumptious recipe. I just ate 1/2 because 1/4 cup of my cheese was 3 points and I also did not have low calorie wheat tortilla. :( I calculated that 1 tortilla is 3 points....so that means that 2 tortillas are 6 points! Not including the cheese and chicken and other add ons! I am scared I have no clue how many points I really ate. I grilled teh chicken on Gerge Foreman and followed what you said on everything else. Is there any way I can figure out how many points I am eating? I was wondering what 1/4 cup WW cheese is worth and the low cal tortillas ( 2 of them) are worth so I can compare and deduct points from my 35 weekly.

ReplyDeleteI got Mango Peach salsa (0 points) from Target's refridgerated section and added 1/2 a 100 calorie pack of Wholly Guacamole (1 point for half the packet, 3 points for the whole packet) to each quesadilla. Delicious! Thanks, Gina! I will likely just make this chicken and the vegetable mix when I'm craving fajitas...for very few points!

My Mom and I are getting excited about Weight Watchers again after a few weeks of boredom, so thank you so much for making that possible!
I made these for the first time a couple weeks ago and again this week. They are wonderful. I love sauteed onions and red peppers, so I didn't miss the cheese so much (since I would tend to LOAD this with cheese on my own :-). I like that I can make them separately and give my husband more cheese for his, too. I love that it's a HUGE serving. It's good for nights when I'm really hungry. Thanks again for another fabulous addition to my dinner repertoire! I think it was pretty easy and fast, too. (I did use store-bought salsa to help with that.)

ReplyDeleteI made these the other night and they were absolutely incredible! I used pico de gallo instead of the avocado-mango salsa and I made it following this recipe: http://allrecipes.com/recipe/pico-de-gallo-3/ Instead of lime juice I used vinegar, and instead of jalapeño I used cayenne pepper. I also added a bit of lemon-pepper seasoning to it. Also, I used red, orange, and yellow peppers in the quesadilla instead of just red and the whole thing came out amazing! My housemate tasted it and loved it as well. We both agree that it tastes like something straight out of Chili's!! Thank you, Gina for being so awesome! It's so rewarding to eat healthy, delicious meals. :)
