BBQ Chicken Quesadilla

I love quesadillas, they make a quick lunch or light dinner and the kids love them! You can make them so many ways. Some favorites are Chicken Quesadillas, Picadillo Quesadillas and even these Cuban Sandwich Quesadillas, so it’s great to add new ideas to the list.

I’m excited to share this recipe from my friend Lisa’s (aka Hungry girl) new cookbook, Hungry Girl Simply Six where she uses 6 main ingredients for each recipe plus spices. Her book is filled with easy low-calorie dishes that are not just easy to whip up, but also look delish!

Variations and tips:

  • Use leftover rotisserie shredded chicken breast to save time.
  • To make them gluten-free, use Siete GF tortillas, you may need to use two as they are smaller.
  • Play around with different cheese options, I think pepper jack would taste great.
  • Add some avocado for a hint of creaminess and boost of healthy fats.

Ingredients

  • One 3-oz. raw boneless skinless chicken breast cutlet
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1 tbsp BBQ sauce with 45 calories or less per 2-tbsp. serving, plus more for serving
  • 1 large high-fiber flour tortilla with 110 calories or less, I used Ole Xtreme
  • 1/4 cup shredded reduced-fat Mexican-blend cheese
  • 2 tbsp chopped red onion
  • 1 tbsp chopped fresh cilantro
  • nonstick spray

Instructions

  • Bring a skillet sprayed with nonstick spray to medium-high heat. Sprinkle chicken with seasonings, and cook for about 4 minutes per side, until cooked through.
  • Once cool enough to handle, roughly chop. In a small bowl, coat chicken with BBQ sauce.
  • Lay tortilla flat, and spread BBQ chicken onto one half. Top chicken with remaining ingredients.
  • Clean skillet, if needed. Respray and return to medium-high heat. Cook the half-loaded tortilla for 2 minutes.
  • Fold the bare tortilla half over the filling with a spatula, and press lightly to seal. Carefully flip and cook until crispy, about 3 minutes.
  • Slice into wedges.

  1. I made these for dinner last night for my husband and myself. I like to buy chicken breast on sale and freeze it in single breast portions in Food Saver bags. I pulled one out of the freezer the day before, and it was thawed in the fridge. I then used my sous vide to cook (2 hours @ 140), and it was perfect and pulled apart easily. The quesadillas were quick work and crispy delicious! Will definitely make regularly. We had leftover chicken that we enjoyed in our salads today.

  3. Don’t know why this combination never occurred to me as a quesadilla since we love BBQ chicken pizza, so I am very happy to have found it on your website. I made this for dinner this evening with leftover roasted chicken from last night’s dinner. Delish and only took a few minutes to put together!

  4. I made this today using the tortilla recommended in the recipe. I was so excited but unfortunately it didn’t taste as good.

    My main problem is the chicken. I have yet to come across a recipe where chicken tastes good with very little oil.

    For this recipe, I even boiled the chicken (w dried herbs ginger garlic etc) and shredded it but still. 

  5. We loved this recipe! I forgot to use the garlic powder and onion powder. I shredded a rotisserie chicken, mixed the chopped onion and cilantro with it and added bbq sauce to the mix. I sprinkled some Mexican cheese on each small tortilla (definitely less than the quarter cup called for) and spooned the mix in. I also added some pickled jalapeños to add some heat. My husband ate 8 of them!

  6. I realized the other day that I make a ton of skinnytaste recipes but never post a review. I think that is because everything I have made from this site is AMAZING! This recipe was no exception. Had some tortillas and leftover shredded chicken from a pot pie and slapped these together for lunch! Another awesome, easy and delish recipe. Love it. Thanks!

  7. I made four of these last night for dinner. Two had cilantro and two did not as I wasn’t sure if my family would like it. Turns out the ones with cilantro were great! I used a rotisserie chicken, so it was fast, easy, delicious and I’ll be definitely making them again!

    My whole family loves these! It’s so easy and delicious! I use 2 of the small corn tortillas.

  10. I used 0 point bbq sauce (at 2 tbsp it was 10 pts…honey sweetened and low carb), 1 pt tortillas, 1 pt cheese. And I made 2!!! Used non fat Greek yogurt for dipping instead of sour cream, sooo good

    I mixed just a little bit of BBQ sauce with the chicken and made hers, then mixed more BBQ sauce in the chicken for my and my husband’s portions. Husband a fan as well. Thank you for a great recipe for regular rotation!

  12. When I put the nutrition facts into the calculator on the WW app, it says that it’s actually 9 points (not 5). So, just FYI!

    1. The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.

      The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, now you know why.

  13. This is one of our favorite recipes.  I use rotisserie chicken to save time. Primal Kitchen or Noble Made both make great low calorie bbq sauces.  

  14. My husband and I love BBQ chicken pizza so this recipe was a must try for us. Made it for supper tonight, and I highly regret not making an extra quesadilla for lunch tomorrow. So delicious!

  17. I knew as soon as I saw this I would make it!  It was soooooo good!  If you pre-cook the chicken, you can make a quick lunch or dinner anytime!

  19. These are delicious, fast, and easy!  And they are a great way to use up leftover chicken! I served with a simple salad and fat free refried beans…yummy!
