
This seriously addicting light dressing is the perfect topping on any salad or even great as a dip. Not a fan of cilantro? No worries, this dressing has so much flavor without, leave it out and add some fresh parsley instead.
The base of this recipe is a homemade ranch, with light buttermilk, Greek yogurt, low fat mayonnaise. Cilantro, lime, jalapeƱos, tomatillos scallions and spices give this dressing a Mexican flair, perfect served over cilantro lime rice, black beans and sweet slow cooked pork barbacoa to create your very own homemade Cafe Rio salad! Also fabulous over shrimp or chicken!
Use your leftover buttermilk to make buttermilk pancakes, strawberry scones, Irish soda bread muffins, skinny ranch dip and more!

- 1/2 cup lowfat buttermilk
- 1/4 cup light mayonnaise
- 1/4 cup fat free Greek yogurt
- 1 small jalapeno, seeds removed, leave them in if you want it spicy
- 1/4 cup of fresh cilantro
- 1 tomatillo, husks removed, chopped
- 1 clove garlic
- 1 scallion
- juice of 1/2 lime
- 1/2 tsp dried parsley flakes
- 1/8 tsp cumin
- 1/4 tsp fresh ground pepper
- 1/4 tsp salt
Combine all ingredients in a blender.
Makes 1-3/4 cup.

ReplyDeleteWe make a chutney almost with the same ingredients in Indian cuisine as well. We just don;t use mayo and buttermilk. But this looks perfect for salads and even as a spread on breads for sandwiches.

ReplyDeleteOh my goodness-thank you SOOO much for this! A local cafe does a FABULOUS salad with a tomatillo lime vinagarette that is absolutely addicting and I haven't been able to find anything even close to it but this looks perfect! I may do a grocery store run tomorrow just to make this! Yummy!

ReplyDeleteWe have a place here in Houston called Chuy's that has a similar sauce/dressing like this that we love but it clearly is not ww friendly. My hubby will be delighted to see it made over. We are HUGE fans of regional Mexican/South American cuisine and produce, so it would be great to see more recipes that call for tomatillo's. Especially this vinaigrette!

ReplyDeleteTomatillos were in my local supermarket, next to the tomatoes and peppers. I live in the suburbs of NY and had no problem locating them. If you can't find them, why not just use a red tomato, I'm sure the color won't be the same but the flavor should still be fresh and yummy! Or you could use a cucumber, seeds and skin removed.

ReplyDeletewhen I don't have any tomatillos, I substitute with some canned salsa verde (green salsa), which have tomatillos in it. If you can find green tomatoes, that would also work, but add a little lime juice for tartness.

I put it all together with 2% Mexican cheese and sliced avocado with the Tomatillo dressing and it was SO GOOD! I just wish my dressing was a little thicker. ReplyDeleteI made this with the turkey meatballs This so soooo good! Fresh and satisfying the cilantro dip is just lovely. I made extra! It is my new go to salad dressing. I did not have buttermilk and so I just measured out 1/2 cup of milk into the blender, then added the limejuice, and let it sit to sour while I prepared the rest of the ingredients. So easy and everyone loved it.

ReplyDeletejust an fyi, the spice of the jalapeno is actually in the veins. The seeds hold no spice. The more veins you leave the spicier the taste. This goes for all peppers as well.
ReplyDeleteOMG!!! This is my new favourite dressing. I had it tonight with your Southwest Turkey Meatballs and loved it. Can't wait to try it with a salad. I almost want to just eat it on its own! I used sour cream instead of buttermilk (because could only find a 1L carton and didn't want to waste it) and 1/2 a tomato plus some salsa verde instead of the tomatillo (because tomatillos are hard to find here). YUM!!!

ReplyDeleteIf anyone is worried about not being able to use leftover buttermilk, powdered buttermilk can be purchased. It is low fat and it keeps in your fridge for several months! I buy this instead of regular buttermilk because I find I rarely use the leftover buttermilk when I need it for a recipe.

I did only use half the mayo, because the people I was cooking for don't care for mayo, would that have made a big difference?
ReplyDeleteYeah, I would keep the mayo, you can't even taste it and it's thicker. Or use more yogurt less buttermilk which would make it thicker.

ReplyDeleteI just made this dressing and it ROCKS however, I took the seeds out of the jalapeno but I guess the veins are really HOT so it just burned my lips and tongue enough to make me cry and swear......any suggestions how to tone it down a lot without making the recipe so large I will not be able to use it up within a week?
ReplyDeleteIt's hard to tone it down without adding more to the recipe. The membrane can be spicy, sounds like you have a hot one!

I came home and made the dressing right away. Oh man! I am SOO glad I did! It's absolutely delicious! After tasting this dressing, I think I will be eating salad everyday for the next week! So this morning I made an egg white omelet, with left over reduced fat mexican blend cheese, a chopped tomato and the dressing! It was so good! My BF is raving about how good it is. It was such a nice change from our usual boring breakfasts. The dressing absolutely made the omelet!

ReplyDeleteDressing is delicious. Used a couple of canned tomatillos and didn't have any buttermilk so made my own using nonfat milk and white vinegar. The whole family enjoyed it, my 8 year old loved it so much she took the blender to her room and finished the rest of the dressing.

ReplyDeleteI just made this, but I substituted the LIGHT mayo for LOWFAT, and I made my own buttermilk with fat free milk and a few tsp of lemon juice (mainly cuz i didnt wanna buy a whole thing of butter milk, but it also cut the fat down by half to sub out those two ingredients). This recipe is suck a great idea, and it turned out way better than I expected! Thank you!!!

ReplyDeleteThis dressing is so so so so soooooo good!!!! I can't even tell you how many times I've made it and I could seriously sit down and eat it with a spoon. I have made it every time with a cucumber instead of tomatillo bc I wasn't sure if I'd like it and know I LOVE cucumbers. I actually forgot about taking the seeds and skin off the cucumber and always make it as is...I put about 1/2 to 2/3 of a cucumber depending on size because I like the extra pulp it gives. You nailed this one!!!

ReplyDeleteThis was amazing (taste-wise), but way too thin. I doubled the greek-yogurt and the mayo, however, it remained thin and liquid-y. Any extra advice? Perhaps omit the buttermilk? Meatballs were amazin though, congrats!
ReplyDeleteI don't know if anyone mentioned this yet, but if you can't find tomatillos, you can use a bottled green salsa - just make sure that one of the main ingredients is tomatillos. I got mine at Target, the Archer Farms brand "Salsa Verde." It's just a tomatillo salsa. It works perfect, you can probably freeze it (that's what I'm planning to do with the rest of mine, in 1/4 cup increments), and you don't have to have fresh tomatillos on hand. Try it!
