Guiltless cheesy seasoned fries topped with bacon, jalapeƱos and scallions served with a cool homemade low-fat buttermilk ranch on the side.
Folks... this is sooooo good!! Pure comfort food!!
So when it's cheese fries you are craving, make them yourself and you'll save hundreds of calories and have better portion control preparing it yourself. A half order at Chili's is a whopping 1260 calories and 89 grams of fat, yikes!!
This recipe is a serving for two, if you want to make this into a meal, why not serve a large fresh garden salad on the side, with more ranch dressing! You'll have those carbs you crave and feel completely satisfied.
I left the skin on for added fiber, and I opted to use a full fat cheddar so that the cheese melts beautifully, I just used less of it and I think it was perfect. if you prefer using reduced fat cheese, Cabot and Sargento are two brands I like to use.

Ingredients:
- 2 medium potatoes (2/3 lb total), yukon gold or russet, washed and dried (skin on)
- 2 tsp olive oil
- 1 tsp smoked paprika
- 1/4 tsp chili powder
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/8 tsp cumin
- coarse salt and fresh cracked pepper
- 1 slice center cut bacon, cooked & finely chopped
- 1/3 cup sharp shredded cheddar cheese
- 2 tbsp diced scallions
- 1 tbsp sliced pickled Jalapeno (jarred on canned)
Directions:
Preheat the oven to 400°. Line baking sheet with foil for easy clean-up. Lightly coat with cooking spray.
Cut each potato lengthwise into 1/4 inch thin slices; then cut each slice into 1/4 inch fries.
In a large bowl, combine cut potatoes and oil; toss well. Add seasoning (paprika to salt and pepper). Toss to coat.
Place potatoes in a single layer on a lightly greased large baking sheet. Bake uncovered for about 25 minutes or until tender crisp, turning once half way through (depending on thickness this may require more or less time).
Remove from oven, place fries into two small oven safe dishes (or one large dish for sharing), top with cheddar cheese, sliced jalapenos, scallions and bacon bits and return to oven for about 2 minutes, or until the cheese melts. Serve with low fat buttermilk ranch dressing and serve.

O.M.G.!!! My family would LOVE these potatoes!!! I have one potatoe and I think I'm going to surprise hubby with these tonight!!!
ReplyDeleteI seriously can't wait to make these! I love cheese fries so much and love you for making a healthier version of them!
ReplyDeleteSome low fat ranch/blue cheese dressings DO actually taste good, you just have to find them. Bolthouse Farms is my favorite.
DeleteYes, especially if you make my homemade one (check the link)
DeleteMe too!!! Yay for these fries!!
DeleteWhat's the point value for the baked fries alone?
ReplyDelete5 points plus
DeleteThanks! Your recipes NEVER disappoint.
Deletei love you Gina!!!!! looks so GOOD!!!!! Thank you!
ReplyDeleteOh My Gosh. I was having a bad day and seeing this recipe perked me right up!! CAN'T WAIT TO MAKE THESE!!!
ReplyDeleteAH! These look amazing! I love cheesy fries, but I never ever get them because of the calorie nuclear bomb they are. MMM!
ReplyDeleteThank you so much for this recipe!
:) Ewa

I cannot wait to try these! You are a genius!!!
ReplyDeleteYum! I noticed that you didn't use low fat cheese. I'd like to cut a few more calories but wanted to see if there was a particular reason you are using regular cheese here. Don't want to mess with a good thing! :)
ReplyDeleteShe mentioned in the narrative - she wanted it to melt better. She also mentioned you could use low fat if you wish and recommended 2 brands she likes.
DeleteYes, I mentioned it above the recipe. Your choice!
DeleteThese would make the hubs a happy, happy man. ;)
ReplyDeleteThanks for all of your amazing recipes. I've made several or your recipes and have loved them all!
They look amazing!
ReplyDeleteMmmm!! Looks SO yummy!!
ReplyDeleteBtw, I couldn't resist how amazing this recipe is and how delicious it looks! I wrote a post about it immediately, linking it back to you and giving you all of the credit. I hope you don't mind!

Thanks!
DeleteI might cry...
ReplyDeleteThese looks amazing! I love that you can use REAL cheese and it's still only 7 points! I don't like to use artificially lowered fat foods so I try to choose very flavorful cheeses so I can get away with using less and still get lots of flavor, like how you used sharp cheddar here.
ReplyDeleteThat was what I was going for, a better quality cheese, just less of it.
Deletelooks so delicious
ReplyDeleteThis just speaks to me in ways you can never know.
ReplyDeleteOk, so hubby and I just bought sweet potatoes yesterday and green onions! I'm soooo trying this tonight...sweet potato fries version!
ReplyDeleteOh my gosh. That sounds even MORE amazing! Good idea!
DeleteAddding it to our menu! Love it!
ReplyDeleteI am totally trying these with sweet potatos since I bought a box from Costco this weekend! Yay:)
ReplyDeleteI bet they will be great with sweet potatoes!
DeleteThese look so good, Gina! I am making your Carne Guisada tonight. It's on the stove.
ReplyDeleteWade
Aaaaand now I know what I'm making for dinner tonight. YUM!!!
ReplyDeleteLove these.
ReplyDeleteAHHH I love this recipe. Thank you!
ReplyDeleteThese look amazing.. I can't wait..yum...
ReplyDeleteI'm going to try using turkey bacon..cook it a little longer and it gets nice and crispy!! You hit it out of the ball park again Gina!!!
i love your site....my husband says this lady is going to go places...she has an amazing talent...and i agree with him. you are god sent!!! seriously!!
ReplyDeletewow, these look so amazing!! it's so great when you can have the things you crave without all the crazy calories and fat, thanks gina!
ReplyDeleteI would try this but I'm too busy eating your peanut butter pie. LOVE YOU'!!
ReplyDeleteI order the Texas cheese fries from Chili's often enough that I feel like they are judging me for it---now I don't have face their scorn!
ReplyDeleteThis makes me sooooo soooo happy!
ReplyDeleteThese look fantastic!!!
ReplyDeleteYou completely rock my socks off. I'm going to have to make these tomorrow, just for fun. :-)
ReplyDeleteyummmmm this is amazing. can't wait to try it out :)
ReplyDeleteThese look amazing! Any chance fries with mozzarella and brown gravy are next?? :) I would die of happiness!
ReplyDeleteMy childhood favorite. I'll see what I can do soon.
DeleteIn Quebec (canada) we call that Poutine! And that is so delicious! But originally it's with cheese curds!!
DeleteIn quebec every restaurant serves poutine! :)
Is there anything you can't make healthy? You are amazing! Can't wait to try these!
ReplyDeleteHi there -
ReplyDeleteThis sounds great, but I'm confused how you get it to be only 7 points? Weightwatchers Points+ says that the potato is 5 points each, the olive oil is 2 pts, the cheese is 4 pts, and the bacon is a pt. So that's already 8.5 pts per serving, and with a tinnnny amount of cheese (1/3 cup is like... nothing). Would love for this to really be just 7 points, maybe I'm doing something wrong?
You made a mistake. Serving size is 2.
DeleteEmail me and I will show you what my Screen looks like on recipe builder.
Wow! these look too good to be that low in calories. I want some now!
ReplyDeleteFirst time on the site and I saw this and immediately went to the store and got all the ingredients!! They came out DELICIOUS! THANKS! I definitely will be using this site more often!
ReplyDeleteGina, you're a genius! I work at Chilis and serving these on a daily basis while trying to stick to Weight Watchers is a challenge to say the least! I can not wait to try these! Thank you so much! I don't know what I would do without your website!
ReplyDelete-Joyce
Oh I bet! I would have no self control if I worked there!
DeleteThose fries are looking really good!
ReplyDeleteThese look amazing! I absolutely love bacon cheese fries and it truly is horrifying how high in calories and fat this dish is if you order it out at a restaurant!
ReplyDeleteThese were great! I used a bag of cascade farms crinkle cut fries to help save time! Only three ingredients in the bag (potato, canola oil,and apple juice) so figured I wasnt doing too much damage by subbing in prepared fries. Skipped the olive oil but seasoned them the same way. The baked up really crispy. I used real cheese for my fiance and 2% for me and went with a whole slice of bacon per serving.
ReplyDeleteThey were really really good! I put diced jalapenos in my ranch dressing too like they do at Texas Roadhouse.
Thanks for these!
Theese look AMAZING!!! Thanks for sharing the recipe :)
ReplyDeleteI am hosting a super fun $25 giveaway on my blog and I would love to have you stop by and enter http://the-still-waters.blogspot.com/2012/03/25-sneakpeeq-giveaway.html
Thank you so much for doing these for me! I know my hubby will be so glad we can have these again! I really appreciate your time and these amazing results!
ReplyDelete:)
DeleteGirl, this looks so good, grocery store visit!!!
ReplyDeleteThey look ridiculously yummy! Can't wait to try them out!
ReplyDeleteAwesome fries!
ReplyDeletei am on weight watchers...&& LOVE cheese fries with some ranch ....BUT how many points plus is this?
ReplyDeleteOkay Gina. You can move in now. We liked you before but now we are officially in love! I mean, cheese fries? Cheese fries! (as my two year-old would say, "Hoo-waaay!"
ReplyDeleteWhere do you live? I can use a break ; )
ReplyDeleteI'm trying this on the weekend. It's supposed to rain and this looks like the perfect snuggle on the couch treat. Thanks Gina!
ReplyDeleteThis is for sure comfort food. It looks SOOO good!
ReplyDeleteAhhhmazing! I love your site. You have so many fans that if you ever did a published cookbook, you'd knock it out of the park!
ReplyDeleteGina, you are my hero! I am an incredibly busy working mom who owes you a HUGE thanks! Your recipes have allowed me to cook amazing (not to mention healthy) meals for my family night after night. My family LOVES every single dish I've made. Thank you!
ReplyDeleteP.S. Hurry up and publish a cookbook! :) I would buy it in a heartbeat!
I second that! We'd love to see a cookbook!!
DeleteI third this! You so need a cookbook!! It would never leave my counter!
DeleteA cookbook by you is a NECESSITY! Your recipes are phenomenal and your pictures are magnificent!
DeleteI'm writing up the proposal! I think it will happen soon! LOL
DeleteYeah Gina - that made my day !!! Woo hooo!
DeleteValerie
Oh. my. GOSH! You are writing up a proposal for a cookbook?! *How* did I miss this comment? I need to schedule an optometrist appt, ASAP. I am going to spread the news to my fellow Skinny-Tasters on my FB page.
DeleteTHANK YOU! I hope it all comes to fruition.
Yah to the cookbook! And these fries are makin my mouth water as I type!
DeleteOh boy does this look delicious! What a lovely recipe and relatively guilt-free, too! Thanks for sharing, Gina.
ReplyDeleteMy god, I love you.
ReplyDeleteDamn, those look incredible! I cannot wait to make these!
ReplyDeleteYou are amazing! And your pictures are so yummy that I can smell the deliciousness, too!
ReplyDeleteWhat a recipe! I made this for dinner tonight, along with the Buttermilk Ranch, and they were all gone in less than 15 minutes. The seasoning on the fries is perfect. Cannot wait to try it on sweet potato fries.
ReplyDeleteI've never done the cheesy fries thing, we don't really get them here in Australia so I have one question. Wouldn't your fries be all soggy and kinda yuck?
ReplyDeleteIt is an American thing, just like we don't understand beets on hamburgers or vegemite. IF you cook the potatoes long enough, and your oven is at the correct temp., they won't be soggy and yuck. Sometimes they need to be cooked a little longer. They do have a different taste and texture from fried ones, but properly prepared are yummy.
DeleteHaha ok I get your point there. Seriously though beets on burgers is the best! I'll give these a go and see what my family think. Hopefully I'll get the cooking right.
DeleteHope u like them. They are SO good!
DeleteI couldn't wait. They were fabulous. I used banana peppers instead of jalepenos, and they went really well. Thanks so much for this. I can't wait to make it again!
ReplyDeleteThese look great; I love your site but I wish there were more comments from people who have actually tried the recipes.
ReplyDeleteMade these tonight! Absolutley fabulous! I left off the bacon and they were still fantastic. Hard to believe they are guilt free. Completly easy and yummy. Definetly will be making again!!
ReplyDeleteOh these look so fantastic! My mouth is watering at the sight.. I thing ill ea the whole plate myself :D
ReplyDelete(After eliminating the bacon though)
Love this, Gina. I made 'em last night with turkey bacon and reduced fat cheese. We didn't even need any dip! So delicious. Just the fry recipe itself is delicious, too (without the toppings), so I plan to use it for regular baked fries as well.
ReplyDeleteGina, I wish there was a way to create a log in to your page so us fans could save favorite recipes to "our recipe box" for easy retrieval. I am in llluuurrrvvveee with your page and use your recipes all the time...i have tried to save them as pdf's, print them for keeping but I always seem to just log into the site, track down the recipe, and cook with the laptop in the kitchen...it would just be easier if I could have them in a "recipe box" :) Continue what you are doing, we are so appreciative!
ReplyDeleteJule, there is a way u can save it to your recipe box. Below the recipe, click the blue save recipe box. You can access it any time.
DeleteMade these last night and they were AMAZING.
ReplyDeleteI thought they were a little on the spicy side, but my husband said he would have like his portion to have had more jalapenos, lol.
I made these yesterday and they were awesome. Thank you
ReplyDeleteGoing to make tonight but subsitute plan greek FF yogurt for the ranch dressing.......my mouth is watering !!
ReplyDeleteMy family (both kids and adults) love ranch seasoning in FF or 2% Greek yogurt. Leaving out the mayo and the sour cream = even healthier! : )
ReplyDeleteYou have some great pictures, they make you want to eat. Thanks for sharing.
ReplyDeletethese were so good & that buttermilk ranch was so delicious I couldn't stop dipping at every bite!
ReplyDeleteThis recipe looks so good. I cannot wait to make it or I should say eat them :)
ReplyDeleteMade these tonight. Fries too WAY longer to cook, even though I thought I sliced them thin enough- but not a big deal. I also didn't use all the seasonings because I didn't have them and I don't think it took away from the taste (so for other readers, don't shy away just because you're missing a few things). Served with a dollop of sour cream and bacon bits and it was delish!
ReplyDeleteMy hubby said these are the best fries he's ever had! That's sayin' something!
ReplyDeleteThese fries are amazing! The homemade low-fat buttermilk ranch is perfect with them as well. Thanks, Gina! It feels like forever since I ate cheese fries. What a yummy skinny treat!
ReplyDeleteMade these tonight and also did the same thing to some chicken too and it was fantastic you would pay good money for this in a resturant brilliant
ReplyDeleteI'm still unsure what makes a serving that totals 7 points plus. Someone said "2".....but 2 what?
ReplyDelete2 servings, just split it in half so it's one potato per person.
DeleteI made these last night for dinner and they were so good! I had to cook my potatoes for a bit longer to get them crispy but we had them while we watched basketball and it felt like we had brought the sports bar to our home but with way less calories!
ReplyDeleteThank you!!!
My hubby is super excited about these! Can't wait to pair these with a Hebrews National hotdog 1pt wrapped in a crescent 3pts, i think. :) Yay!
ReplyDeleteI made this into a meal by adding shredded chicken. I seasoned the potatoes with paprika, salt and pepper. While they were baking, I fried shredded leftover chicken breast with the bacon, then seasoned it with the rest of the spices and cooked for a couple of minutes. I put the fries on a pizza plate, covered them with the chicken mixture, then covered it all with the cheese, scallions, and peppers. I broiled it until the cheese was bubbling then served it with a fresh garden salad. Delicious!
ReplyDeleteLOVE your idea!
DeleteI just tried these fries only I used low fat sour cream as a topping. They were d-e-l-i-c-i-o-u-s!!! Thank you so much!
ReplyDeleteI am so making this dish with buffalo turkey burgers I am tricking my family and do a faux junk food night!!!
ReplyDeleteWhen I try to get the print friendly recipe, it won't let me get there. Is it my computer or are others having a problem, too?
ReplyDeleteThey are working on it.
DeleteRemember the restaurant scene from When Harry Met Sally? Yeah. I seriously wanted to reenact that at the dinner table, these were that good!
ReplyDeletelol, yes I do!
DeleteI posted this on WW because I was entering it and couldn't find the recipe. I added a huge thank you to you in the recipe and used your image with your SkinnyGirl logo. If this isn't ok, please let me know. My neurotic self just wanted it on my recipe list for future use.
ReplyDeleteIt's skinnytaste. As long as you add the website and link where you got it, I'll allow it.
DeleteI made these and they were very good, but it's hard to believe that's only 1/3 cup cheese in your photo. Mine didn't look nearly as cheesy.
ReplyDeleteYup! It was. I always measure what I photograph!
Deletehad these 2 nights ago and I'm craving them again! must get jalapeno rings for next time though.
ReplyDeleteI made these with celeriac, they were fantastic! And you lose the potato points too! Yumm thx again Gina
ReplyDeleteJust made them... they're great, thanks
ReplyDeleteJust fixed these tonight. Wonderful!!!
ReplyDeleteMade these great recipe, however I did not use cumin, instead of smoked paprika i used regular, but taste excellent the whole family loved them!!
ReplyDeleteHoly SMOKES these were good! Loveeeed them.
ReplyDeletemade these and ate them for lunch just now with the side of your buttermilk ranch...SO good and seasoned perfectly...couldn't even tell they were "skinny"!
ReplyDeleteSo I made another half batch of this today, except not only did I forget to half the amount of spices, I put 1/2 a teaspoon of every single spice in. As Ralphie Wiggum once said, they taste like burning. Still good even then though.
ReplyDeleteThese are delicious!! The whole family loved them!
ReplyDeleteI used fat free cheddar(all I had) and 2 slices of precooked bacon(35 cals)and no jalapeno.YUM
ReplyDeleteSo delicious! The prep work takes a little bit of time, but very worth it. We're making another batch today and playing with the seasonings (adding in curry powder) - hopefully they'll be just as good.
ReplyDeleteholy crap....YUMMMM
ReplyDeleteHoly Moly! Thank. You. :)
ReplyDeleteThese are very good! They are HOT.. but I like hot... the ranch cools em down.. If you don't like hot, I recommend keeping out the chili powder... Also, I think next time I will omit the oil and coat with cooking spray and season and bake .. and also the cheese makes it look good but it would be great with out.. basically then you are getting just the calories from the potatoes. The ranch I make only has 13 calories per serving... This was the best thing I've had in a long time..
ReplyDeleteI left out the bacon. Still good!
DeleteMight I be the only one wondering if each potato will weigh 2/3 pound each- or- 2/3 pounds total weight- which does not seem like a lot when I weighed it out for two people if total weight for both is 2/3 pound. I have all the ingredients :)
ReplyDeleteI made these tonight....they are amazing!!!!
ReplyDeleteGina,
ReplyDeleteI love your recipes. I've made 14 of your recipes so far and each one has been incredible and crucial to my weight loss journey.
I really want to make these: I love cheese fries. Alas, I'm kosher, so I don't eat bacon (but clearly they will still be delicious without the bacon)
Any way you can tell me the WW points plus value if I omit the bacon? I'd love to know!
SOOOOOOOO GOOD!!!!!!!
ReplyDeleteFinally got around to making these tonight...they are awesome! The smoked paprika was a nice touch, the fries themselves had tons of flavor and the toppings made it that much better! We followed your suggestion of having a big salad with it for dinner.
ReplyDeleteWell, I finally made these tonight. I was a bit apprehensive , but they turned out fantastic ! I used a jalapeno ranch for dipping, they were so yummy! We will be making them again. Thanks for sharing this recipe!
ReplyDeleteI made this yesterday and I just want to say thank you thank you thank you!! Hubby LOVED it and was full afterwards! We had a salad with the ranch on the side and it was the perfect meal. I made double the recipe so we packed some for lunch today and they were great. I am so excited to try a bunch more recipes!
ReplyDeleteDinner last night = Buffalo Chicken Lettuce Wraps, these Cheese Fries and Lowfat Buttermilk Ranch! WHAT A HUGE HIT!! Tonight I'm making the Creamy Grape Dessert for some company and we're using the leftover ranch dressing for lunch!
ReplyDeleteDelicious ..everyone loved them plan on doing this more & more thank you
ReplyDeleteGina you are amazing and these fries rock my socks off!
ReplyDeleteI made these last week and they were delicious. My husband and kids loved them and didn't even notice that they weren't fried. Making them again this coming week. Thanks!
ReplyDeleteGina-- made these for DS & myself for lunch w/ a large salad. It was a very nice treat. I LOVE the Chili's cheese fries but never get them because they're SOOOOOOO horribly fattening!!
ReplyDeleteThese were amazing! Just the right amount for me to kill the craving. YUM YUM YUM!! I'm going to have to make them again soon!
made them last week and we about died with yumminess. making them again tonight for company. LOVE LOVE LOVE THEM!
ReplyDeleteSo glad you all loved them, I am craving them as I type!
ReplyDeleteI made these for supper tonight OMG they were sooooo good!! Even the kids loved them!
ReplyDeleteThis is probably a little forward, but I love you. Really. I am in the depths of PMS, and this is going to get me through. Now I'm going to look for your chocolate recipes:)
ReplyDeleteHolly
These were absolutely DELICIOUS!! I've now made them quite a few times for different occasions and everyone has complimented them and are shocked with how simple the ingredients are and how good they are for you! Thank you for this wonderful recipe that has now become a staple in my household!
ReplyDeleteWow, this is a GREAT recipe! And your beautiful pictures do 'em lots of justice :D I think I'll try it out since everyone's raving about them! ;)
ReplyDeleteI made these tonight, everybody loved them! I used Chipotle Chili powder for more spice and added tomato into the mix.
ReplyDeleteThanks for all the great recipes!
Made these tonight and they were amazing! Thank you for the great recipes, you're making WW fun!
ReplyDeletemaking these right now, cannot WAIT to eat them :)
ReplyDeleteAll my nephews love this. When we have them for the weekends this is one of the things we always have.
ReplyDeleteMy son loved this recipe! It's a Friday night favorite!
ReplyDeleteMy husband loved these. All he wanted to for his birthday was to watch football and eat junk food. I found this recipe and he told me that he would never guess they were from skinnytaste. In fact, he said they looked and tasted like something you would get in a restaurant!
ReplyDeleteI couldn't care less about low-fat or low-calorie, but I LOVE these at Chili's and I'm pretty sure the ones at the restaurant aren't gluten-free, so I can't eat them anymore. :(
ReplyDeleteWill definitely have to try this!
I made these for dinner tonight and they were amazing. I used a little less cheese to lighten it up a bit and I also bought low fat buttermilk ranch from Walmart (their Marketside brand in their produce section) and they seriously tasted like I was at Chili's or Outback...except I saved a ton of fat and calories!
ReplyDeleteThese were fantastic! I made them this afternoon as Football snacks for the Texans game. My family loved them! Thank you, thank you, thank you! :D
ReplyDeleteThis was absolutely delicious. I love how the flavor comes from the sharp cheddar cheese and the jalapenos! I have made this recipe several times!
ReplyDeleteHey, stupid question. It says "Servings: 2" and "Serving Size: 1/2." Does that mean that the recipe yields 2 servings and if you eat one half of that total (1 serving), it will be 259 calories? Or is the serving size one half of one serving, meaning the recipe yields 4 servings of 259 calories. Thanks :)
ReplyDeleteThese were great! I don't buy bacon often, so I cooked the whole package, crumbled it, and froze the remainder so I have more for next time. Love the recipe Gina!
ReplyDeleteOMG, these are FABULOUS!!!
ReplyDeleteI'm eating these as I type this. So perfect
ReplyDeleteI've made these several times and they are delish! I used Kraft Mexican 4 cheese and it made them even better!
ReplyDeleteI finally made these and they are outstanding!! I didn't have jalepenos or scallions, so I diced up red pepper. I also only had low fat cheese...they were fantastic! Thanks Gina!! Made your strawberry cheesecake for dessert tonight (with raspberry jam) and can't wait, that's another favorite :)
ReplyDeleteMouth watering! Love being on a diet as long as I have Skinny Taste!
ReplyDeleteI made these 2 nights in a row, this is a new family favorite
ReplyDeleteMade these as a side to sloppy joes tonight - pure comfort food! Fantastic recipe. Although, I used your ranch dressing recipe and mine came out SUPER runny! Maybe because I made my own buttermilk with lemon juice and milk? The fries were FANTASTIC though!
ReplyDelete
