What a great alternative to those super mayonnaise-y potato salads that show up at BBQs, I'm excited to try it out with the apples!
ReplyDeleteAgreed! I'm excited to try out the apples, it will be a nice added sweetness.
DeleteI love apples in my potato salad, it's that sweet savory thing that works so well.
DeleteI grew up eating potato & macaroni salads slathered in mayo. As of today your recipe is now our family favorite! So much great flavor in this potato salad. Thank you from my family & me.
DeleteThis looks fantastic. I bet the apples are really delicious. Thanks for the recipe.

It's so funny... I have yet to make potato salad this summer. But that's going to change this week. This recipe looks fabulous!
ReplyDeleteI've never added apples to my potato salad, but think it's a great idea. Can't wait to try your recipe. Looks delicious!
ReplyDeleteI agree. I never would have thought to do this either!
DeleteI don't know if I am brave enough to add apples for the crowd I have coming. Might do this with cucumbers and try it with apples later. Perfect though - looking for good cool recipes now that it will be too hot to have everyone be outdoors...
ReplyDeleteI have been looking to skinny up a potato salad. I have always included apples (red and green) in my potato salads. Can't wait to try this one out :)
ReplyDeleteMy mom always adds apples to her potato salad too, it's my favorite way to eat it.
DeletePotato Salad, the taste of summer. My mom brought over some potato salad this weekend. Sadly, it's gone. I love the idea of a "skinny" salad. Thanks.
ReplyDeleteLove the addition of apples here! it looks incredibly refreshing.
ReplyDeleteYummy!!!!!
ReplyDeleteThis looks SO delicious! {Super glad I'm whitening my teeth right now or I would be eating some - or all - of this...}
ReplyDeleteThis is a great alternative to the normal potato salad! I love the addition of apple. I bet this has a ton of amazing flavor! Adding to my 4th of July menu!
ReplyDeleteis this the same recipe as your other potato salad, except with an apple in it?
ReplyDeleteSimilar base but different flavors and ingredients, the other has bell peppers, this doesn't. This has apples, celery and chives.
DeleteYum....this look really good. The combination is so delicious!!!! Gina
ReplyDeleteThank you so much for adding the sodium content to your recipes! My brother has Congestive Heart Failure and it can be hard finding recipes with the sodium content listed. Thanks again:)
ReplyDeleteThis potato salad looks so good. I am wondering, being a not so big fan of mayo, do you think yogurt (or Greek yogurt) would be an okay alternative? Thank you :)
ReplyDeleteI used Greek yogurt in this over the weekend and it worked great!!
DeleteI love the addition of apples to this potato salad! It sounds so refreshing!
ReplyDeleteWhat a great twist to potato salad!!
ReplyDeleteWhat is the measurement for the apples?? Is it one apple, or more? I'm excited to try this!
ReplyDelete1 apple. Of course you could add 2 if you want.
Deletelove love this potato salad! I've been hunting around all morning too for a potato salad recipe for tomorrow's bbq, and don't want a heavy mayonnaise-y one, this looks so perfect! The apples sound so good in it!
ReplyDeleteJust made this for tonight's party and it is delicious! Thank you for another awesome recipe, Gina. EVERYTHING I make of yours always comes out great and is loved by all. Happy 4th of July!
ReplyDeleteHooray!! I found my potato salad recipe for tomorrow! Thank you for posting this before the 4th :-) Have a great holiday Gina!

Hi, did you cut the potatoes into quarters before or after you boiled them? Seems they would fall apart if cut before, but thought I'd better ask! Thank you!
ReplyDeleteNo they are hard, they don't fall apart.
DeleteI'm making a potato salad today. I've never had it with apples in it. It sounds good and healthy.
ReplyDeleteMaking this today for the 4th of July BBQ at home! I depend on you so much, Gina & you always come through! Thanks for making my life healthier & easier
ReplyDeleteWhat a delicious recipe! I made this today for my family and they all loved it! I didn't have red wine vinegar so I used champagne wine vinegar!! Definitely a keeper in my recipe stash!! :-) Thanks Gina!!!
ReplyDeleteI made this today...delish! However, I thought it needed a little more vinegar than the recipe called for. I added in some cider vinegar to stay in the apple theme. I also added a little extra grainy dijon mustard for flavor and texture, and some garlic salt. I would definitely make this again with those few tweaks. Thanks!!!
ReplyDeleteAlso forgot to add that next time I would cut the potatoes into smaller pieces. Not sure if i bought the wrong ones, but the red potatoes i bought were pretty big for just quarter cuts. I doubled that and even still would cut them smaller next time, just so the salad lasts takes longer to eat and there's more surface area to soak up the seasonings.
ReplyDeleteThis is a very good potato salad. I added more celery than called for to just extend it and used a granny smith apple. It is savory and juicy. A keeper
ReplyDeleteTwo days later it was even better when it had ample time to marinate.
DeleteI made this tonight and it was incredible!
ReplyDeleteI made this for our 4th of July cookout today and everyone loved it! I loved seeing my Grampa (who I thought wouldn't like the apples) go back for seconds. Thank you!
ReplyDeleteI have made this for dinner tonight and just licking the spoon was great. I can't wait to have it.
ReplyDeleteI didn't have a gala, so I subsituted it with an Organic Granny Smith and it is just as great.
I made this yesterday for a party we went to and it was a big hit! Don't be afraid of the apple, it adds a nice sweet/sour crunch. I used a Granny Smith (finely diced) and since I didn't have a red onion, I diced 1/2 a sweet onion and a shallot. It came out great! Thanks, Gina!
ReplyDeleteAnother Skinnytaste success! Delicious the next day, too!
ReplyDeleteI Just made this for the beach tomorrow and it's delicious! Mine came out a tiny bit dry so I'm going to add a small amount more of dijon mustard, mayo, vinegar and olive oil to prevent a vinegar overdose (I love it but my man doesn't!). Love the apples and used fresh chives from the garden that were dying to be harvested. Thanks!
ReplyDeleteWOW! Made this for a weekend barbeque with some friends yesterday and it was a major hit! Sadly, no leftovers for me to enjoy today. Thanks, Gina, for my new go-to Potato Salad recipe.
ReplyDeleteI made this for a BBQ this weekend! It was wonderful! I'm not a fan of mayo...but there was so little in this dish I didn't mind it at all! I will definetly be making this again through out the summer months!
ReplyDeleteOfficially one of my fav. Skinnytaste recipes!
ReplyDeleteMade this yesterday to accompany some chicken I barbecued on grill. Really liked it! Proud of myself that I kept to the serving size & looking forward to leftovers.
ReplyDeleteJust wanted to add that this has become a staple at my family cookouts now! Everyone from my 5 year old niece to my 75 year old grandfather comes looking for it. Thank you!
ReplyDeleteThis was absolutely delicious! My fiance went for thirds! :D
ReplyDeleteThis was so good!! It is a new favorite around here. Perfect for grill out days!
