Thai Chicken Peanut Lettuce Tacos

These Thai Chicken Lettuce Wrap Tacos are flavorful and light! Replacing tortillas for lettuce is a great way to make tacos even lighter or even gluten. A few months ago while visiting Asheville, NC with my friend Sandy (such a great food scene there!) we stopped for lunch at the White Duck Taco Shop, a creative taco joint where we had Bulgogi Tacos, Bangkok Shrimp Tacos and Duck with Mole Tacos.

To balance out the spice, I chose to serve these in crisp cool lettuce wraps but tortillas would work great too!

What do food bloggers talk about while eating lunch together? Well we talked about food, recipes ideas, and decided we were going to come up with our own creative taco recipes and share them together. How To Make Lettuce Wraps

Lettuce wraps are low-carb, keto, gluten-free and low calorie, and don’t interfere with the flavors of the filling. A few tips when making lettuce wraps:

  • Look for lettuce leaves that are large enough to hold the filling. I like to use iceberg lettuce for larger cups. Romaine lettuce and baby romaine are also great.
  • The leaves of butter or boston lettuce are smaller, but also wonderful.
  • If you prefer, you can turn this into a big chopped salad by simply serving this over a bowl over chopped lettuce.

Ingredients

For the Peanut Sauce:

  • 1/2 cup reduced-sodium chicken broth
  • 3 tbsp PB2, or 2 tbsp peanut butter
  • 1/2 tablespoon Sriracha chili sauce
  • 1 tbsp honey
  • 1 tbsp soy sauce, use Tamari for gluten free
  • 1/2 tbsp freshly grated ginger
  • 1 clove garlic, crushed

For the Chicken:

  • cooking spray
  • 16 oz ground chicken
  • 1 tbsp Sriracha chili sauce, more or less to taste
  • 4 cloves garlic, crushed
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce, use Tamari for gluten free
  • 3/4 cups shredded carrots
  • 2/3 cup scallions, chopped
  • 3/4 cup shredded red cabbage
  • 2 tbsp chopped peanuts
  • cilantro leaves, for garnish
  • 4 lime wedges
  • 8 iceberg lettuces outer leaves

Instructions

  • Make the peanut sauce; in a small saucepan combine chicken broth, PB2, 1/2 tablespoon sriracha, honey, 1 tablespoon soy sauce, 1/2 tablespoon fresh ginger, and 1 clove crushed garlic and simmer over medium-low heat stirring occasionally until sauce becomes smooth and thickens, about 6 to 8 minutes.
  • Meanwhile, heat a large non-stick skillet or wok over high medium until hot.
  • When hot, spray with oil and sauté the chicken until cooked through and browned, breaking it up as it cooks; add the sriracha, remaining garlic and ginger and saute 1 minute. Add the tablespoon of soy sauce, cook 1 minute.
  • Add the shredded carrots, and 1/2 cup of the scallions and sauté until tender crisp, about 1-2 minutes. Set aside.
  • Divide the chicken equally between 8 lettuce leaves, top each with shredded cabbage, remaining scallions, drizzle with peanut sauce, chopped peanuts and cilantro, for garnish and serve with lime wedges.

  1. These were amazing and pretty easy to make. I didn’t have scallions, so I swapped in chopped red onion instead. My kids LOVED them and asked for seconds. And my oldest is not a fan of vegetables, but he enjoyed them tonight! They were a hit and I’ll definitely be making them again! Thank you!

  4. Good recipe… I used romaine lettuce, it was perfect for a “taco” feel. Hubs had it on tortillas. I drizzled a little sweet chili sauce on one and it was like a spicy pb&j flavor!

    This is so delicious! One if the best dishes I’ve ever made! I mixed the sriracha and added two tablespoons of soy and some honey. Then put that in the pan with the chicken, carrots, garlic and ginger. Besides that, I followed the recipe exactly! Amazing! That peanut sauce is to die for! I’ll be making this often!

  10. Absolutely delicious! Made with lean, ground turkey because that’s what I had in the fridge but otherwise exactly as written. I have made Asian lettuce wraps before, but this was far better than every other recipe out there. Thank you, Gina. You have done it again!

  11. This is a wonderful recipe. I doubled the peanut sauce so I could use it when I make it again. The only thing I did differently (after the peanut sauce was made and tasted) was add some sweet chili sauce for an added layer of flavor. It was great!

    I NEVER post reviews. But I felt the need to for this recipe because I read the reviews and thought I’d give it a try. I followed this recipe exactly as written and I’m sorry but it just didn’t meet my nor my picky husbands’ expectations…IT EXCEEDED IT!! I’m a “hit or miss” cook mostly miss, seriously. This is maybe the 4th or 5th time in 3 years of marriage that he’s said, “you’ve got to add this to the “make again list””….the list consist of now 4 recipes in 3 years! ♥ snoopy happpy dance..

  15. Holy moly. I literally NEVER do a review on recipes but I had to with this one. It was to die for! And super filling!

    I followed the recipe as-is with the exception of the peanuts – I replaced them with wonton strips. I loved that it had a little kick, it really helped take it up a notch. Also, I remember someone mentioning the sauce was too runny so to combat that I did a couple extra minutes on medium heat to burn off some of the liquid and I got a perfectly creamy peanut sauce that yielded 6 tablespoons.

  16. This was very good. It was time consuming, but I felt good eating this, as it was very healthy. Good flavor, everyone liked them! I am also not sure how to get the lettuce to not break as I’m holding them with the meat in it. The lettuce cups break apart instead of bend.

    I can only comment on the peanut sauce. I made it to compare with another recipe. This has great flavor but the texture was a lot more liquid then I had wanted. So I added maybe another 2 T of the PB2 peanut butter. But then had to add more of the other stuff. But it has a nice flavor. I’d never hesitate using this again.

  23. This was my first foray into using PB2 and I was very pleasantly surprised! Made just as written, except husband is allergic to chilis so sriracha came after on top, and we only had pre-chopped lettuce. I can’t believe how healthy and flavorful this was for so few calories!

    I love these this recipe!! My partner and I are trying to eat less meat so I made it with cooked green lentils and it tasted just as good as ground meat.

  25. Decided to make these after having something similar at Lazy Dog and was still craving that taste. These are now my favorite meal prep for lunch- I could probably eat them everyday!!  Plus it was so quick to whip up. I knew it would be good since I was practically licking the sauce out of the pan. I used Better’n Peanut Butter since I didn’t want to buy PB2. It does add a point per serving when put into the WW Recipe Builder.  This has great flavor and the perfect amount of spice. I like my food very spicy though.  So if you aren’t into heat you may want to tone down the sriracha.

  29. I added red pepper flakes to the sauce to make it hotter, and served on chopped lettuce (instead of taco style), was great. I would make this as a salad again and add fried wontons on top to add more crunch.

My daughter could eat this every day! and with the low calorie count, that wouldn’t be a problem 😉 The only thing I did a little different, was adding some soy sauce or some of the peanut sauce to the chicken while cooking because it seemed to be too dry. This is very good and so easy!

  34. Amazing! I used ground turkey because I had it on hand, but otherwise followed the recipe exactly. I loved it. My 9 yr old enjoyed the flavor, even helped me cook, but it was a bit too spicy for her. Good thing we served it with sliced cucumbers as suggested in the recent meal plan!

  46. I made this tonight and I was so pleased! So tasty and satisfying. I didn’t add the peanuts because I forgot , but I did add a little fish sauce and fresh basil along with the cilantro. I served it with seasoned black beans cooked with a tea spoon of coconut oil – delish!!

    So delicious. But I’m not clear on how your calculating the free style points. I’m getting 13 for the entire dish. The only ingredients that I see that have points are the peanut butter, the honey and the chopped peanuts. Please tell me where I’m figuring wrong.  

    1. Most ground chicken at the store has dark meat included which has points. Search ground chicken in the tracker. But if you know it’s ground chicken breast then that may change the calculation. 

  49. Wonderful! My husband thought these were the best chicken lettuce wraps he’s had. Used real peanut butter and didn’t have sriracha so substituted harissa in the sauce and lemongrass paste in the chicken mixture. Otherwise stuck to the recipe. So delicious and another thing I loved was that I’m usually obsessed with having things piping hot but I just put the meat mix in a serving bowl then used the same skillet to do a veggie stir fry. Bottom line lots of prep but relatively little clean up and a great healthy meal.

  62. These rocked! My mom showed me your website, and everything so far has been delicious, but these taco’s were fantastic! I already had chicken breasts on hand, so I just minced them as best as I could and it turned out great. The lime as the topper really freshened everything up, and tamed the siracha! (I used more than the recipe) A+ from me!

  68. I tried this tonight with shredded instead of ground chicken since that’s what I had. I was afraid it wouldn’t work (I looked in vain for comments, hoping someone else had tried it first!) but surprisingly it did – I just needed to add 1/2 cup of chicken broth to get all the other flavors to mix in.     I have made this probably 10 times 🙂 I love it and so does my fiancé (and he's kinda picky when it comes to meals that aren't steak or seafood). The sauce is killer, so I double the recipe so I have plenty for leftovers or to dip veggies in or whatever!

  74. Does anyone know the amounts of the meat filling or the peanut sauce to get to 6 WW smart points? The recipe only says two tacos – but not how much of each (i.e. 1/2 cup, 1 tsp, etc.)

  75. Can I just leave out the sriracha sauce w/o it affecting the dish too much? Also, the recipe says "chicken and noodles" but I don't see noodles on the ingredient list or anywhere else?

  76. I've been obsessed with this recipe for months and finally went to make a double batch for lunches this week when I realized that tacos are not exactly the most lunch bag friendly food…
    I ended up using the peanut sauce and the cabbage to make a coleslaw and topping it with the cooked chicken. It came out delicious and easy to pack in my lunch!

  80. Ground poultry typically gives me the heebie jeebies, but I went out on a limb and was pleasantly surprised. Once the meat was loaded up with all the toppings and the peanut sauce and siracha I couldn't even tell I was eating ground chicken. My kids ate everything without complaint and even my husband admitted it was really good. *He shares my ground poultry aversion and cursed when he originally saw the package of ground chicken come in the door.       Agree about the ground chicken…but the peanut sauce, the seasonings and all the veggies transformed a bland food into a grand dish. Since I used half the honey called for in the sauce, I added some shredded fresh apple to boost the sweet flavor and fiber of the chicken. Stir fried it with the veggies. Eating a bowl right now and savoring every bite! That peanut sauce rules. Doubled it to have enough to toss on otherwise simple salads or zip up roast chicken. Thanks Gina!

Other than it's tasty, it's healthy too. They may have added more sugar or honey to their recipes, I know it can't do good to my healthy (read it from this article from iwbodywraps.com by the way), but so far, i even lost one size in a couple of months.   87. I was planning on making baked Thai egg rolls on Monday night with a curried cauliflower soup, so finding a skinny taste filling for the wonton wrappers is awesome! I know the wrapper will add a few more calories than just lettuce, but I live overseas and lettuce is not always available and/or trustworthy!

  92. My boyfriend can't have Siracha because all the brands. Can find contain sulfites. Do you think gochujang sauce would work instead? It's a sweet spicy Korean red pepper sauce.
