Crustless Broccoli Cheddar Quiche

Spinach and Ricotta Quiche and Chicken Quiche are so popular on my site, but I often get asked how to make it crustless. For this low-carb version, I made this with no crust, and added lots of broccoli plus I used some light cream to give the eggs more of a creamier custard texture, as most quiches have rather than a spongier baked egg texture. This quiche is low-carb, keto, gluten-free and easy! Add a salad on the side and it’s the perfect vegetarian lunch.

Broccoli Quiche Variations:

  • You can add some diced ham or bacon and use slightly less broccoli.
  • Try this with mozzarella cheese or Colby Jack cheese in place of cheddar.
  • You can swap more milk in place of the half & half cream, but the texture won’t be as creamy, it will have a spongier texture.
  • Make them in individual ramekins in place of one large pie dish.
  • If you wish to use a crust, follow the directions for this recipe using a deeper pie dish, and use less broccoli.
  • Refriegerate 3 to 4 days. Reheat in the microwave or oven.

Ingredients

  • cooking spray
  • 3 cups chopped broccoli florets
  • 1 cup grated cheddar cheese
  • 2/3 cup 2% milk
  • 1/4 cup half & half cream
  • 5 large eggs
  • 3/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • pinch freshly grated nutmeg

Instructions

  • Preheat your oven to 350 degrees. Spray a pie dish with oil.
  • Steam the chopped broccoli florets in the microwave with 1 tablespoon water until tender crisp and green but not mushy, about 2 1/2 to 3 minutes.
  • Evenly spread the broccoli in the dish and top it evenly with the grated cheddar cheese.
  • Make the custard mixture by whisking together the milk, half and half, eggs, salt, black pepper, and the nutmeg. Pour the custard into the dish and bake 35 to 40 minutes, until the center is set.
  • Cut the quiche into 6 pieces and serve.

  1. Wow!  Just made this for easy simple recipe for lunch.  Just delicious.  Light and balanced flavour with perfect crispness of broccoli.   Looking forward to the leftovers.

    I began a low carb lifestyle change under medical direction after a recent diagnosis change of Diabetes from Pre-diabetes. I found your Broccolil Quiche recipe in a Costco Connection magazine and LOVE IT!!! It is fast becoming a weekly staple in my search for low carb/high protein alternatives for meals! I use 1 individual bag of Kirkland frozen broccoli (microwaved in the bag), add another egg (total 6 eggs), substituted milk with unsweetened Almond Milk, doubled the shredded cheese, and add butter instead of the half-and-half (because I didn’t have any and because I am lactose sensitive). This Quiche makes me so happy!!! 😉 Thank you for what you do!

  3. Loved this recipe! Easy to assemble and tasted delicious. Substituted oat milk for 2% milk and half and half. After 40 minutes in the oven at 350 degrees C, it still wasn’t done so I popped it in the microwave for 7 minutes and it came out perfect!

  5. I make this at least.3/times a.month ! Easy.and Delicious! I add asparagus, onion, mushrooms and red pepper! Use any veggies you have on hand .Always fresh ! Spinach ,yellow and green squashes also !

  7. Made this for breakfast today, but I subbed greek yogurt for the half and half, it was very good and creamy. Me, Mom, and my sister all loved it. Thanks for a great receipe

  8. I want to add, great recipe and very flexible. I appreciate all the great ideas people have suggested.
    My only negative on the recipe as written is that it suggests an awful lot of salt, especially if you are using cheese or other salty ingredient like bacon. I am happy with 1/4 tsp salt, kosher or otherwise, even with reduced cheese.

    1. I actually thought it could’ve used another touch of salt and I tend to like my food a little less salty than most.

    1. I make it in an 8 1/2 inch round dish that is about 2 inches deep.
      Also works well in my round enamel cast iron 10 inch pan, which is not as deep.

  9. Excellent recipe. Easy and delicious. I added chopped onion and fresh thyme the first time I made it. This morning I swapped in spinach and feta for the broccoli and cheddar. I love recipes that teach you a method or proportions that you can use in flexible ways.

  10. I have been on the Keto diet for almost 6 months now and went vegetarian a couple of weeks back. It has been the greatest challenge for me to find inspiration and recipes that are satisfying and delicious. This one will go on regular rotation in my house! My husband said it was the best quiche he ever had a my kids both wanted seconds (much to my chagrin as I was hoping for leftovers). Served it with a hemp heart tabouleh and a half an avocado. Was really delicious!
