Greek Turkey Burgers

I adapted my original turkey burger recipe and added fresh oregano and Feta cheese to the burgers. Then I made a simple Greek salad with cucumbers, tomatoes, red onion, roasted peppers, olives and the results were outstanding! I’ll be making these all summer.

A tip if you want to make these outside on the grill, make the patties ahead and keep them well chilled in the refrigerator (or put them in the freezer for 15 minutes) so they stay firm.

Naked Greek Feta-Zucchini Turkey Burgers are so juicy, thanks to my secret ingredient, grated zucchini!

Ingredients

  • 5 oz grated zucchini, when squeezed 4 oz
  • 1 lb 93% lean ground turkey
  • 1/4 cup seasoned whole wheat breadcrumbs
  • 1 clove garlic, crushed
  • 2 tbsp grated red onion
  • 1 tbsp fresh oregano
  • 3/4 tsp kosher salt and fresh pepper
  • 1/4 cup crumbled feta cheese, from Salad Savors
  • oil spray

For the salad:

  • 1 cucumber, diced
  • 3/4 cup quartered grape tomatoes
  • 2 tbsp chopped red onion
  • 1/3 cup kalamata olives, from Salad Savors
  • 1/4 cup roasted peppers, from Salad Savors
  • 2 tsp red wine vinegar
  • 1 tsp fresh oregano
  • 1 tsp olive oil
  • kosher salt
  • 1 tbsp crumbled feta, from Salad Savors

Instructions

  • Squeeze ALL the moisture from the zucchini with paper towels.
  • In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, oregano, salt and pepper. Mix well, add 1/4 cup of feta from the Salad Savors, mix and make 5 equal patties, not too thick so they cook in the center.
  • Refrigerate until ready to cook.
  • In a medium bowl combine the cucumber, tomato, red onion, SaladSavors, vinegar, salt and remaining Feta. Mix well.
  • To cook indoors: Heat a large nonstick skillet on high heat. When hot, lightly spray oil. Add burgers to the pan and reduce the heat to low. Cook on one side until browned, then flip. Flip over a few times to prevent burning and to make sure the burgers are cooked all the way through.
  • If grilling: Clean grill well before cooking and oil the grates generously to prevent sticking. Cook the burgers on medium heat about 5 minutes on each side, or until no longer pink in the center.
  • To serve, place the burger on a dish and top with 2/3 cup of salad.

This burger is seriously delicious!  I took the liberty of placing our burgers on low carb lightly grilled WW burger buns, in order to satisfy my hungry family.  I greatly increased the salad ingredients, & served this terrific salad on the side.  One issue:  pre-shredded cheese (of any kind) contains a product which keeps the cheese from clumping together in the pkg., so WHY buy that, since it takes only a few seconds to crumble your own PURE cheese?   Just sayin’…..

  8. This has become a much requested family favorite! I use dried oregano and chop up fresh red pepper since I never have roasted. I like to serve it with a little tzatziki on top, delicious!

  9. The best turkey burger I’ve ever had! I like to add some balsamic vinegar to the salad too to give it a stronger punch of flavor. These are frequently on my weekly meal plan and have been for years

  10. What is Salad Savors?  I looked for a reference to it in your instructions but don’t see it.   Why not use regular generic ingredients?  

    • I looked for them too and no luck. I just used pitted kalmata olives and chopped up my own red pepper in a jar.  Used the quanities as recipe said.  Burgers and salad were outstanding.

  11. I want to make this weekend, but am alone. Can they be made ahead like the other turkey burgers with zucchini and frozen?

    • I usually double the batch and freeze them after shaping into patties. I freeze between pieces of parchment paper in a ziplock bag so they are easy to defrost a couple whenever I want them. They’re great frozen, too!

  14. We love these and I would like to make them again very soon. One thing I did this time was skip the bread crumbs all together. I had no problem with them holding together. I do form them and and refrigerate till ready to cook them. I use fat free feta crumbles and in addition to oregano, add a 1/4 teaspoon dried rosemary, and some dill fresh if I have it or a teaspoon or so dried, and a teaspoon or more of Penzy greek seasoning. i was out of red onion so used finely chopped yellow that I add water to and steam in microwave to soften, no oil that way, I cook burgers started on stove to sear each side then cover and put in oven to finish. They are juicy and wonderful. Thank you.

     If I want to make a couple burgers for my husband and I, and then meatballs for my kids, do you recommend any different baking instructions? Or recipe adaptations? 

  17. Made these tonight on our indoor griddle! Amazing! So full of flavor and coated the griddle with non stick olive oil spay. Worked great!  May try this for a party as meatballs with a low cal tatziki sauce for dipping.

      • i’ve made this before and loved it! to make a gluten free version do you think I could substitute almond flour for the bread crumbs, or just leave it out? thanks!

      • Thanks for the recommendation Gina! i’m sure the gluten free bread crumbs would be an ideal substitute…we are trying to limit going to the grocery store during the lockdown so I was looking through pantry staples as other substitutes.  If I try it with almond flour I will
        report back if it comes out well!

  18. These are great! We just make them without the salad and they get eaten on buns, in pitas, plain with a little cheese melted on top, or in lieu of breakfast sausage. Even my husband, who normally turns up his nose at turkey burgers or feta, likes them! I make an extra large batch and freeze them.

  22. My extended family are serious meat eaters for the most part so I stuck my neck out last 4th of July and served these. Guess what was requested this year for the 4th? Yep, these Greek Turkey Burgers. I happen to have to have ground sumac seed on hand so I add a little of that, but otherwise we make them exactly to the recipe. They are really, really good.

  24. I usually LOVE any of Gina’s turkey burgers, but realized that I typically make them with ground turkey breast. My husband did the grocery shopping and bought 93% lean ground turkey, as called for in the recipe. The strong taste I presume is from dark turkey meat which overpowered the wonderful flavors we should have been experiencing. I will only buy ground turkey breast from now on! The salad was pretty blah…I think I’ll try balsamic next time.

  26. This recipe is incredible! My husband wasn’t convinced about putting feta into the burger, so instead I made a creamy greek feta spread (made with light mayo, Trader Joe’s Greek Style Feta dressing, plus some dried dill, a Greek blend, some dried basil and oregano). I lightly brushed the burger on both sides with canola oil and grilled them on my electric griddle until they reached 165 degrees. We had them on whole wheat buns with lettuce and tomato, the feta spread and I also put some hummus on my bun. Ohhhh my…they were so moist and flavourful. I was skeptical of a burger recipe that did not have an egg in it for binding, but they held together perfectly. I will be making these for a friend who is about to have a baby as one of her freezer meal gifts! Thank you Gina…keep these yummy recipes coming!!!

  27. This was just fantastic…great flavors, moist. It is another keeper! I grated the garlic vs. smashing it. I may try ground breast next time as an experiment since this was so moist. The fresh salad is the perfect accompaniment. My oregano was so fresh it almost overpowered the salad, so be careful of adding more. Thank you, Gina!   28. I substituted 99% fat free turkey only because I bought the wrong one. I also only had Fat Free Feta. Everything is “free” on WW Freestyle. Too good to be true! These are so yummy!!

  31. These were incredibly moistened and delicious (the zucchini  is really the key here). This will be my “go to” turkey burger recipe from now on. Tzatziki is a nice addition as well.

  35. Made this for dinner tonight using ground turkey from Trader Joe’s. I was pleasantly surprised at how good this tasted. Had all the ingredients for the salad so I didn’t use the Salad Savors. Loved how all the flavors enhanced each bite. Definitely a keeper. Didn’t miss the bun!

  41. I couldn’t find savors, so I made my own cucumber salad. My youngest son is allergic to Turkey so I substituted it with lamb. I really wasn’t sure how my family would like it. I have a 6 & 10 year old who are picky eaters, so I didn’t cook all the burgers and froze the rest.

    This dinner was a hit!! They wanted seconds and even ate all the veggies. Thank you for a great recipe.

  52. My stores do not carry the Salad Savors. Can you tell me if we would use full fat Feta, reduced fat or fat free? Also, the peppers and olives look like they are in an oil. Would we use red peppers in oil or water? Thank you Gina. I love your recipes!

  58. I made these tonight and followed everything except I added an egg to the burger. They held together well in a pan and cooked pretty fast!
