Serving Size: 1 piece chicken

Ingredients

  • 2 16 oz total boneless, skinless chicken breasts
  • kosher salt and fresh pepper to taste
  • 4 teaspoons Skinny Basil Pesto
  • 1 medium tomatoes, sliced thin
  • 6 tbsp 1.5 oz shredded mozzarella cheese
  • 2 teaspoons grated parmesan cheese

Instructions

  • Wash chicken and dry with a paper towel. Slice chicken breast horizontally to create 4 thinner cutlets. Season lightly with salt and fresh pepper.
  • Preheat the oven to 400° F. Line baking sheet with foil or parchment if desired for easy clean-up.
  • Place the chicken on prepared baking sheet. Spread about 1 teaspoon of pesto over each piece of chicken.
  • Bake for 15 minutes or until chicken is no longer pink in center. Remove from oven; top with tomatoes, mozzarella and parmesan cheese. Bake for an additional 3 to 5 minutes or until cheese is melted.
  • To Grill: Grill chicken over medium flame on both sides until cooked through in the center.  Lower flame, top chicken with pesto, tomatoes and cheese, and close grill until cheese melts.

    It was delicious!! Quick, too! We cheated and bought the chicken breasts already thin sliced (a lot more expensive so not practical for a family) and fresh deli pesto. We didn’t have mozzarella or parm so used thin sliced pepperjack. Mmmm. Absolutely going to make this again and again! This recipe doesn’t really need a video, but I enjoyed watching yours. Thank you!

  5. This was fantastic!  The fresh tomatoes from the garden melted into a fabulous rich flavour. It reminded me of chicken parm but not nearly as heavy.  A splash of lemon juice in your pesto lightens up the flavour beautifully.  This one’s a keeper.

    I made this last night and it was so delicious and easy to make! I was looking for pesto recipes because I have so much basil in my garden, and I’m glad I came across this recipe. I will definitely make this again.

  7. This chicken comes out SO JUICY! After the first 15 minutes, I took a paper towel and blotted off some of the oil that came from the pesto sauce. Then added the tomato and cheese per instructions. But I want to reiterate, I could literally cut this chicken with a butter knife! I will cook this over and over again. Have yet to find a recipe I don’t like from here!

  10. This was delicious! Excellent for meal prep lunches for the week.  It tastes so fresh and is very filling.  Make the homemade pesto – it’s super easy and yummy.  Smells amazing while baking too.

  12. I baked the chicken on a parchment-lined broiler pan. The chicken was swimming in juice and very tough. 😧  Next time I will bake on a roaster to keep the chicken out of the juice or grill the chicken.  I will also add 3 tsp of basil for each piece of chicken. The chicken breast I used were huge!!!  

  13. Today will be my 4th time making this. It’s a new favorite for a picky family of 7. I hate basil so I substitute fresh spinach and follow the recipe. It’s awesome. I will make this for years to come. Thank you for the recipe.

    Bad advice to wash chicken. Numerous studies show that you should NOT do this. Washing doesn’t remove harmful bacteria and actually spreads it in the kitchen. As a cooking website, basic food safety should be used.

  15. I have to say, the pics AND video both show using way more than one teaspoon of pesto. I’m going to try the recipe (everything Gina makes is amazing), but I’ll be adjusting the calorie count to reflect the more realistic amount of pesto.

  18. You should NEVER wash chicken. There’s no need and it’s a good way to spread food-borne pathogens.

      Thanks, I was thinking the same thing about not washing raw chicken since reading the current recommendation being not to do so adding as it increases the risk of spreading the “germs/bacteria “ further than is necessary. 

  19. This chicken was delicious but I had a question as to how you calculated the Freestyle points. It says it is 2 points, but when I plug it into my app, it shows as 4 points. I have noticed a discrepancy in points on several of your other recipes as well. Just trying to make sure I calculate as accurately as I can. Thanks!

The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.

      The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, now you know why.

  20. Do not wash chicken-or any meat for that matter! You lose some flavor and you are contaminating the whole area around your sink! Cooking meat properly is the only way you’re going to make sure your food is safe. 

    1. Did you give this recipe 2 stars bc iof the directions to wash chicken? Or did you ACTUALLY make it-and if so what about this constituted 2 stars? 

    2. I don’t think so Jenn, we Asians washes all the meat and the flavor is still there, contamination happens when you don’t clean your sink!   22. Made this tonight, YUM! And so easy! Added a few drops of balsamic vinegar on time after cooking to get that full caprese taste. Also used fresh sliced mozzarella instead of shredded, which tastes so much better IMO. Can’t wait to make again!

    I made this last night – quick, easy, delish and what I love is that we had double the chicken because we sliced the chicken in half! Made a nice lunch the next day!! Two meals out of one…win win!! My kids devoured this – even asked me to make it again tonight! LOL. A real winner!!!

  35. I just made this for the second time and I love it! The first time I made it with the homemade pesto & to cut down on prep the second time, I used store bought. Still delicious but I’ll tell anyone questioning it: MAKE IT WITH THE HOMEMADE PESTO! It’s worth it!! 

    1. To make this recipe dairy-free, you can use store bought Vegan Pesto (Trader Joe’s has a yummy one) Or make Gina’s recipe and sub in plant based (Vegan) parmesan. On the Chicken you can use plant based (Vegan) mozzarella and the parmesan again. I am planning to do this tonight and I am allergic to milk, so I use plant based (Vegan) cheeses. I am sure it will be delish!

    1. I have made this with zoodles and made extra pesto sauce to toss it in. Also pairs well with a nice arugula salad.

  44. I love this recipe! I’ve made this a bunch of times now and I’ve found that it is sooooo good if you use slow roasted tomatoes. It’s a great replacement for the yucky winter tomatoes.

    Splashing water from washing chicken under a tap can spread the bacteria on to hands, work surfaces, clothing, and cooking equipment.
    Water droplets can travel more than 50cm in every direction. Only a few campylobacter cells are needed to cause food poisoning.

    Wow is this good!! How have I missed this recipe all these years? It was so easy I made with the roasted asparagus and threw all of it in the oven all at once and dinner was ready in 20 min!!! This is a keeper !!!!

  64. Tried it and loved it. So simple! I didn’t cut the chicken breasts in half and did ‘cover’ the chicken with an extra piece of baking paper because the pesto was getting all over my oven.

  74. I recently found your site. I got a kick coming across this recipe. I’ve been making this recipe for years, but with prepared pesto. I assemble all of it in a shallow casserole dish cover and bake 30-40 minutes depending on the size of breast. I sometimes slice larger breasts for sandwiches. I uncover it at the end to roast the top till the cheese bubbles. It’s a quick prep that way. A storm destroyed our garden this season, nut I’m looking forward to making my own pesto again. Freezing in ice trays works really well. I also freeze extra tomatoes in the skin. They are a wonderful taste- of- summer treat in Mid- winter, just peel, thaw, ,and prepare a bloody mary, a gaspacho, quick salsa, or add to soups, etc..

    I have to admit I was skeptical because the pictures didn't seem that appealing to me, but every recipe I've tried has been stellar here so I went ahead. I made the pesto first because I harvested my basil yesterday and it was wonderful (Didn't even miss the pine nuts- I've been making pesto for 32 years) made this chicken dish tonight and it was spectacular…my husband loved it, too..I may have used a tad bit more pesto because I had just made it and it's so wonderful! I also made zucchini noodles and used some left over rigatoni and tossed together with some more pesto for a side dish:)

    I roasted the tomatoes on top of the Chicken the entire time and skipped the cheese. It resulted in really moist chicken.

  86. Oh, my gosh. Why have I not been slicing chicken breasts into cutlets EVERY SINGLE TIME I COOK CHICKEN BREASTS??? This is delicious, and it makes beautifully-sized portions. It's so difficult to find chicken breasts of a reasonable size these days–they are making them rather, uh, *busty* for a single serving. This was delightful, and while I did use a jarred pesto (my poor basil plants aren't up to the task) I loved, loved, loved this recipe! Delicious, easy, a hit with the husband.

I actually cheated and did not make the pesto, I used the store bought one cuz I love it and I figure it cuts the time in half. I will make my own one of these days!     This recipe is easy and affordable, two of my very favorite things in a recipe. I have some family members who aren’t too crazy about tomato, so I just leave it off of theirs and they still love these little pesto bakes!

  95. Do you think it would taste fine to put red sauce on the pasta or would it be better to use the pesto? Also, would this work with eggplant? I know that there is eggplant parm but i am not sure if it would work with this receipe. I have a friend that is a vegeterian.

  100. I use a meat thermometer and tested mine after 15 min and they were cooked to 170. I pounded my chicken breasts very thin, and the time was totally fine for me.

  101. Even with it cut, 15 minutes was not enough to cook the chicken. Me and my boyfriend both got sick, doc said food poisoning. Please rewrite a correct time, maybe 30-35 minutes.

    1. Please always CHECK YOUR CHICKEN with a meat thermometer before you eat it! Oven temperatures vary, and it's also very easy to see if chicken is raw or not when you cut into it. Never rely on a recipe to determine whether your food is safe to eat – that's up to you.

My boys are super picky so I just salt and peppered their chicken, they said it was very good (they don't say that often). So we all had a wonderful dinner without any extra effort on my part. 🙂

    Ok, so I'm a bonehead! I glanced at the recipe and after I built all the goodies on top and after it's been in the oven for 10 mins, did I realize NOT to add the tomato and cheese yet!! OH well, I'm sure it will still be good!

    Quick question: 2 Chicken breasts sliced into 4 pieces is 8 pieces, but the serving size is 4 servings of 1 piece. Is it actually 4 servings of 2 pieces each? I'm ever hopeful 🙂

  122. Like fully cooked tomatoes, but not fresh. Could you just put canned tomatoes on top and cook a bit more before you add the cheese and then cook until the cheese melts or would you be overcooking the chicken?

  124. We had this for dinner last night and my whole family loved it. We used chicken tenderloins and pounded them out to flatten them. Used our tomatoes and pesto from the garden and served with our homegrown green beans too! Yummy!

  125. Does the nutrition value in the recipe include the pesto sauce or is that separate on the nutritional value? I am on a very strict low carb diet and want to make sure I don't need to add carbs for the pesto. Can't wait to try this…will be going on the menu for next week! I don't like tomatoes though so do you think it would be just as good with zuchinni?

      It includes it. If I list it in the ingredients, I calculate it. You can leave tomatoes out or use a little tomato sauce.

      No because you cook the chicken first. The tomatoes and cheese only cook until the cheese melts.

    Just wanted to say too I am LOVING the overnight oats with pumpkin butter. I was in such a breakfast rut this summer and fell in love with the overnight oats. A pumpkin variation for fall has been great!

    My friend introduced me to skinnytaste about two years ago when she brought your pumpkin butter and pumpkin cupcakes into work one day. I've been hooked since! 🙂
