  1. Love this one and it was a crowd pleaser with both husband and kids! Very easy to make. Will definitely make again.

It was delicious!! Quick, too! We cheated and bought the chicken breasts already thin sliced (a lot more expensive so not practical for a family) and fresh deli pesto. We didn’t have mozzarella or parm so used thin sliced pepperjack. Mmmm. Absolutely going to make this again and again! This recipe doesn’t really need a video, but I enjoyed watching yours. Thank you!

  3. This was perfect for a week night. Easy, delicious and very little clean up. I used jarred pesto but will definitely make the homemade next time. I served this with Skinny Taste pasta asparagus and loved that too! As always, thanks Gina!

Love how quickly this meal comes together – perfect for a busy week like this one- with the Christmas holiday upon us..   It even has Christmas colors!   Thanks Gina!

  5. This was fantastic!  The fresh tomatoes from the garden melted into a fabulous rich flavour. It reminded me of chicken parm but not nearly as heavy.  A splash of lemon juice in your pesto lightens up the flavour beautifully.  This one’s a keeper.

I made this last night and it was so delicious and easy to make! I was looking for pesto recipes because I have so much basil in my garden, and I’m glad I came across this recipe. I will definitely make this again.

  7. This chicken comes out SO JUICY! After the first 15 minutes, I took a paper towel and blotted off some of the oil that came from the pesto sauce. Then added the tomato and cheese per instructions. But I want to reiterate, I could literally cut this chicken with a butter knife! I will cook this over and over again. Have yet to find a recipe I don’t like from here!

  8. This recipe was such a hit with my hubby, he’ll try anything, but his enthusiasm was extraordinarily appreciated. I baked the breast 10 minutes, but will aim for 8 minutes the next time. It wasn’t overdone, but less would have been better.  Thank you, Gina!

  9. Can you freeze this meal if so what part of the process do you freeze it before chicken is cooked or after

  10. This was delicious! Excellent for meal prep lunches for the week.  It tastes so fresh and is very filling.  Make the homemade pesto – it’s super easy and yummy.  Smells amazing while baking too.

Easy and quick but big on taste! Homemade pesto with fresh basil from the garden is a must try. Thanks, Gina!

  12. I baked the chicken on a parchment-lined broiler pan. The chicken was swimming in juice and very tough. 😧  Next time I will bake on a roaster to keep the chicken out of the juice or grill the chicken.  I will also add 3 tsp of basil for each piece of chicken. The chicken breast I used were huge!!!

  13. Today will be my 4th time making this. It’s a new favorite for a picky family of 7. I hate basil so I substitute fresh spinach and follow the recipe. It’s awesome. I will make this for years to come. Thank you for the recipe.

Bad advice to wash chicken. Numerous studies show that you should NOT do this. Washing doesn’t remove harmful bacteria and actually spreads it in the kitchen. As a cooking website, basic food safety should be used.

  15. I have to say, the pics AND video both show using way more than one teaspoon of pesto. I’m going to try the recipe (everything Gina makes is amazing), but I’ll be adjusting the calorie count to reflect the more realistic amount of pesto.

  16. This chicken recipe was the easiest and the best chicken Ive ever  made! No joke! My entire family loved it and it will definitely make its appearance again.

  17. What else can I use for the top of the chicken. Several people 8j our home cannot have the tomato.. .?

  18. You should NEVER wash chicken. There’s no need and it’s a good way to spread food-borne pathogens.

Thanks, I was thinking the same thing about not washing raw chicken since reading the current recommendation being not to do so adding as it increases the risk of spreading the “germs/bacteria “ further than is necessary.

  19. This chicken was delicious but I had a question as to how you calculated the Freestyle points. It says it is 2 points, but when I plug it into my app, it shows as 4 points. I have noticed a discrepancy in points on several of your other recipes as well. Just trying to make sure I calculate as accurately as I can. Thanks!

    1. Hi KL. The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.

The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, now you know why.

  20. Do not wash chicken-or any meat for that matter! You lose some flavor and you are contaminating the whole area around your sink! Cooking meat properly is the only way you’re going to make sure your food is safe.

    1. Did you give this recipe 2 stars bc iof the directions to wash chicken? Or did you ACTUALLY make it-and if so what about this constituted 2 stars?

    2. I don’t think so Jenn, we Asians washes all the meat and the flavor is still there, contamination happens when you don’t clean your sink! If you put 2 stars because you don’t like how she prepares her chicken then you are so messed up! Make your own blog! Such bitter jealous woman you are! To Ms.Gina kudos to tour recipe! It was lovely and delicious. Keep it up!

  21. This is soooooo good! Made it twice before, hubby loved it, and making it again tonight with your Basil Pesto. Thanks for the recipes!

  22. Made this tonight, YUM! And so easy! Added a few drops of balsamic vinegar on time after cooking to get that full caprese taste. Also used fresh sliced mozzarella instead of shredded, which tastes so much better IMO. Can’t wait to make again!

  23. Just joined WW, and also bought an air fryer, do you think this would work in the air fryer? is so would it be the same time and temperature.

  24. Thank you so much for all the recipes you shared with us. My family is so happy everytime I made one of your yummy recipes. Today i made this chicken pesto oh my …….so delicious.

  25. This is amazingly delicious, quick and my go-to weeknight dinner! The combination of ingredients is perfect!

  26. This was delicious! Perfect summertime dish to use farm fresh tomatoes and fresh basil. We made extra and I can’t wait to eat leftovers for lunch. Thank you for sharing.

  27. Oh my gosh. I made this for dinner tonight (and your cauliflower soup as a side) and it was DELICIOUS! I’m new to cooking and this is the best tasting meal I have ever made.

  28. I absolutely LOVE all your recipes. I have not made one recipe over the last 5 yrs that I didn’t like! Found you when i started WW a few yrs back and was so happy to hear you would be updating your recipes with the freestyle points. With that said freestyle has not worked for me despite trying really hard and have decided to go back to smart points. Will you be adding the SP values back? Many people have switched back to sp!

This recipe was absolutely delicious. Trying out a new low carb diet and this fit perfect. Also did not take very long to prep or cook. Thanks.

  31. I loved it! Made my own pesto, chimichurri is good on it too. My new favourite way to cook chicken and great on my low carb diet.

  32. This is one of the first recipes I tried from your blog a year ago and it’s still one of my favorites! It’s quick, easy, and delicious. I put this on the grill when I have company and get so many compliments!!

I made this last night – quick, easy, delish and what I love is that we had double the chicken because we sliced the chicken in half! Made a nice lunch the next day!! Two meals out of one…win win!! My kids devoured this – even asked me to make it again tonight! LOL. A real winner!!!

  35. I just made this for the second time and I love it! The first time I made it with the homemade pesto & to cut down on prep the second time, I used store bought. Still delicious but I’ll tell anyone questioning it: MAKE IT WITH THE HOMEMADE PESTO! It’s worth it!!

    1. To make this recipe dairy-free, you can use store bought Vegan Pesto (Trader Joe’s has a yummy one) Or make Gina’s recipe and sub in plant based (Vegan) parmesan. On the Chicken you can use plant based (Vegan) mozzarella and the parmesan again. I am planning to do this tonight and I am allergic to milk, so I use plant based (Vegan) cheeses. I am sure it will be delish!

Suzann DeAngelis your recipes. Is this a total of 5 freestyle points because of the 3 points for the pesto? Or 2 freestyle? Thanks for all your help.

    1. I have made this with zoodles and made extra pesto sauce to toss it in. Also pairs well with a nice arugula salad.

Gina, I’m newly diagnosed  with celiac (the last year or so) and I seriously don’t know where I’d be without your gluten-free recipes ! Thank you so so much!

  41. I made this with jarred pesto and big, fat slices of fresh mozzarella. Even with those adjustments/splurges, it was only 9 points and SO delicious!

  42. This dish was delicious.   But I think the smart points should be 4 according to my w w calculator

  43. Yum, made this for dinner tonight. I had with salad and added some sweet potato wedges for hubby. So easy and so yummy!

  44. I love this recipe! I’ve made this a bunch of times now and I’ve found that it is sooooo good if you use slow roasted tomatoes. It’s a great replacement for the yucky winter tomatoes.

  45. I’m surprised no one has mentioned how dangerous WASHING chicken is! Fro. The U.K. NHS:
Splashing water from washing chicken under a tap can spread the bacteria on to hands, work surfaces, clothing, and cooking equipment.
Water droplets can travel more than 50cm in every direction. Only a few campylobacter cells are needed to cause food poisoning.

    1. I’m blown away that step is still included. It’s so dangerous and unexpected on her site.

      Please edit the instructions!

  46. This recipe and your Chicken Milanese are weekday staples at our home!  Easy,  delicious, and dietf friendly! ❤️ Thank you!,

  50. This was delish! Made it with your quick marinara over some zoodles! Everyone in my family cleaned their plates. Thanks!

  51. Made this for dinner last night, it was AMAZING. Paired with corn on the corn and asparagus all done all the grill.

  58. Just to clarify. The nutrition info is based on 1 cutlet or 1 chicken breast? I’m a strict diet and want to make sure I’m logging the correct info.

  59. Made this for family dinner tonight and it was a HUGE hit! My mom said it was restaurant quality! Thanks for another delicious and also beautiful  recipe!

  60. I love your blog and books! My husband is on a strict sodium diet, and I wanted to know if the skinny basil pesto (delicious!) was included in the total nutrition information?

This looks wonderful, and I’ve printed it out. Gina, could I substitute turkey cutlets for the chicken breasts? I’m thinking they’re already sliced thinly, and might be easier to handle.

      1. Thanks a bunch. I love using turkey cutlets. I make your other recipe with them, the skillet one.

  62. Amazing recipe! Getting added to the rotation.  I had to use store bought delallo pesto, but next time I’m going to try your homemade pesto with it. don’t know what I would do without this blog!

  64. Tried it and loved it. So simple! I didn’t cut the chicken breasts in half and did ‘cover’ the chicken with an extra piece of baking paper because the pesto was getting all over my oven.

  65. What do u serve the meat meals with like the pesto chicken. U must have some carbs with meals right. Thanks just love your meal plans..Trying some out this week an will leave a comment or two.
Thanks so much for your Web site.

  66. I’m assuming if you are grilling this, you would put the pesto on when you flipped the chicken (when done) and then add with tomatoes and cheese?

  67. Thank you for this recipe. I am trying to stick to a low carb diet and need more recipes to add to my rotation. This sounds wonderful and can’t wait to try IT..Please post more LC recipes.

  74. I recently found your site. I got a kick coming across this recipe. I’ve been making this recipe for years, but with prepared pesto. I assemble all of it in a shallow casserole dish cover and bake 30-40 minutes depending on the size of breast. I sometimes slice larger breasts for sandwiches. I uncover it at the end to roast the top till the cheese bubbles. It’s a quick prep that way. A storm destroyed our garden this season, nut I’m looking forward to making my own pesto again. Freezing in ice trays works really well. I also freeze extra tomatoes in the skin. They are a wonderful taste- of- summer treat in Mid- winter, just peel, thaw, ,and prepare a bloody mary, a gaspacho, quick salsa, or add to soups, etc..

I have to admit I was skeptical because the pictures didn't seem that appealing to me, but every recipe I've tried has been stellar here so I went ahead. I made the pesto first because I harvested my basil yesterday and it was wonderful (Didn't even miss the pine nuts- I've been making pesto for 32 years) made this chicken dish tonight and it was spectacular…my husband loved it, too..I may have used a tad bit more pesto because I had just made it and it's so wonderful! I also made zucchini noodles and used some left over rigatoni and tossed together with some more pesto for a side dish:)

  76. I made this for my mom's birthday last night and it was wonderful… everyone really enjoyed it 🙂 thank you for another great recipe!!

  77. Made this for dinner tonight and it was a real hit! First time making homemade pesto and it was so easy! The chicken was juicy and delicious! Wonderful recipe!

  78. Made this for dinner last night over zoodles. I used more pesto than called for to make it a little juicier and it was so delicious! Definitely one for the recipe book!

I roasted the tomatoes on top of the Chicken the entire time and skipped the cheese. It resulted in really moist chicken.

  80. 2 thumbs up!!! My goodness, this is seriously one of mine and my husband's favorite dishes!!!!! Absolutely wonderful!!!!!!

  81. we made this tonight and loved it! I had some store-bought pesto in the pantry that needed to get used, but next time I'm going to try your homemade pesto recipe! thanks for sharing!!

We are making this for dinner tonight! Very excited to try it! Just recently came across your website here. We are in love with it! Thank you so much for having this available to us

  83. Made this tonight and it was great, served it with salad and bread. Truly a quick recipe to make, usually I spend way more time in the kitchen even when a recipe is supposed to be "easy." Light and delicious!

  84. Yummy! I love that these still fill you up even though you are cutting them in half. They cook A LOT quicker this way too.

  85. Made this for dinner tonight and served with oven roasted butternut squash and rose wine, it was a dinner fit for royalty and really easy to make. Thanks for this great recipe.

  86. Oh, my gosh. Why have I not been slicing chicken breasts into cutlets EVERY SINGLE TIME I COOK CHICKEN BREASTS??? This is delicious, and it makes beautifully-sized portions. It's so difficult to find chicken breasts of a reasonable size these days–they are making them rather, uh, *busty* for a single serving. This was delightful, and while I did use a jarred pesto (my poor basil plants aren't up to the task) I loved, loved, loved this recipe! Delicious, easy, a hit with the husband.

  87. Made these tonight with low carb linguine with the leftover pesto. Amazing! I actually cheated and did not make the pesto, I used the store bought one cuz I love it and I figure it cuts the time in half. I will make my own one of these days! Overall, amazing and my hubby basically licked the dish clean lol. Def will be making this again in a few weeks.

This recipe is easy and affordable, two of my very favorite things in a recipe. I have some family members who aren’t too crazy about tomato, so I just leave it off of theirs and they still love these little pesto bakes!

  89. I've made this several times now…the whole family loves it! Even my picky 2-year old, so that's really saying somehting! 🙂

  93. I have made this twice now and it is nothing short of amazing – and it's so easy! My son loves it!!!!

Thank you thank you thank you for sharing this recipes.

  94. My girlfriends & I made this last night along with some oven roasted veggies (baby carrots, sweet potato, mini red & gold potatoes, red onion, garlic, grape tomatoes & zucchini). It was delicious!!!

  95. Do you think it would taste fine to put red sauce on the pasta or would it be better to use the pesto? Also, would this work with eggplant? I know that there is eggplant parm but i am not sure if it would work with this receipe. I have a friend that is a vegeterian.

  96. I made this for dinner tonight and it was wonderful. The only thing I did different was add 1 Tbsp spaghetti sauce to each piece under the tomatoes/cheese. Served with a side salad it made for a delicious dinner. Thanks so much for your wonderful recipes!

  97. I made this a couple nights ago for dinner and both myself and my boyfriend LOVED it! Of course, I used pesto from a jar since I didn't have the time to make my own, but it was still delicious.

  98. I just made this and finished eating it! It was so delish!! I took a picture of my food and in the background my dog was staring at it like "but where's mine?!" I wish I could post it here! Haha! Love your blog! Thank you!

  99. Made this for the rents tonight and they loved it! We cooked the chicken for about 30 minutes as they were a little thicker, yet they stayed moist. Definitely a crowd pleaser that is easy and quick to make. Thanks for a great recipe!

  100. I use a meat thermometer and tested mine after 15 min and they were cooked to 170. I pounded my chicken breasts very thin, and the time was totally fine for me.

  101. Even with it cut, 15 minutes was not enough to cook the chicken. Me and my boyfriend both got sick, doc said food poisoning. Please rewrite a correct time, maybe 30-35 minutes.

    1. Please always CHECK YOUR CHICKEN with a meat thermometer before you eat it! Oven temperatures vary, and it's also very easy to see if chicken is raw or not when you cut into it. Never rely on a recipe to determine whether your food is safe to eat – that's up to you.

  102. I made this last night and my hubby and I both LOVED it!!! So delicious. Only thing I added was a couple slices of deli ham, warmed in the microwave, under the tomatoes. I served it with green salad and peas. Kevin told me to put it on the "keepers list"! 🙂 THANK YOU Gina!!!!

  103. Made it tonight and it was terrific. Hubby liked. Served with side green salad with fresh pear, since it's in season. Thank you!

  104. I made this tonight for my mom & stepdad.
They both loved it and I thought it was great.
Super easy, super fast to make. I paired it with a bit of brown rice & peas.
I don't even LIKE tomatoes – and I ate this.

My boys are super picky so I just salt and peppered their chicken, they said it was very good (they don't say that often). So we all had a wonderful dinner without any extra effort on my part. 🙂

Quick question: 2 Chicken breasts sliced into 4 pieces is 8 pieces, but the serving size is 4 servings of 1 piece. Is it actually 4 servings of 2 pieces each? I'm ever hopeful 🙂

Couldn't wait to try this one out!! I had a ton of fresh market tomatoes and this was the perfect meal for them. Everyone was VERY happy at my dinner table last night, thanks!!

  122. Like fully cooked tomatoes, but not fresh. Could you just put canned tomatoes on top and cook a bit more before you add the cheese and then cook until the cheese melts or would you be overcooking the chicken?

This morning I pulled some chicken breasts out of the freezer hoping I could come up with a different way to cook them by dinner time. Then I see the email for this recipe in my inbox…perfect timing! Thanks 🙂

  124. We had this for dinner last night and my whole family loved it. We used chicken tenderloins and pounded them out to flatten them. Used our tomatoes and pesto from the garden and served with our homegrown green beans too! Yummy!

  125. Does the nutrition value in the recipe include the pesto sauce or is that separate on the nutritional value? I am on a very strict low carb diet and want to make sure I don't need to add carbs for the pesto. Can't wait to try this…will be going on the menu for next week! I don't like tomatoes though so do you think it would be just as good with zuchinni?

It includes it. If I list it in the ingredients, I calculate it. You can leave tomatoes out or use a little tomato sauce.

It looks absolutely yummy! I also stock pesto in my freezer, it can be so useful!

  127. Yum, this looks really good. Do you ever have a problem with the chicken not cooking all of the way through because of the tomatoes on top?

No because you cook the chicken first. The tomatoes and cheese only cook until the cheese melts.

Yum! This is one thing I'll miss about summer- fresh pesto and fresh tomatoes! And grilling! Sigh.

  129. This looks fantastic!! It's a bit chilly and very wet here in Toronto today and this might just make me feel like summer again, not to mention that tomorrow I can put it in a cabrese bread for a great sandwich!!

I love your tip about freezing pesto! I never make it because I don't want to have so much leftover… can't believe I haven't thought about freezing it! I am definitely making this dish… looks wonderful. Thanks!

  131. Freezing pesto in ice cube trays? Brillant!!

Just wanted to say too I am LOVING the overnight oats with pumpkin butter. I was in such a breakfast rut this summer and fell in love with the overnight oats. A pumpkin variation for fall has been great!

My friend introduced me to skinnytaste about two years ago when she brought your pumpkin butter and pumpkin cupcakes into work one day. I've been hooked since! 🙂

  132. this looks like an amazing and easy dish to get together! and that's always my problem because by the time i get out of work i'm starving for dinner and tempted by fast food.

I have had pesto/mozzarella/tomato on chicken so many different ways, yet I never tire of it. Definitely need to freeze some pesto soon!
