Skinnytaste Dinner Plan (Week 37). The middle of summer always seems like such a crazy time! I have had friends and family visiting for the last month so I skipped my meal plan last week but I’m back to planning and shopping for the week. I’m taking advantage of all those summer zucchinis and added a few recipes this week to use them up.

Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here

Thursday: Slow-Cooker Bahn Mi Rice Bowls
Friday: Cheeseburger Salad
Saturday: Dinner Out
Sunday: Zucchini Lasagna

  1. I fixed the cheeseburger salad yesterday and everyone loved it. I also fixed the baked zucchini sticks with marinara sauce. Those were gone as soon as I got them out of the over.

  2. Definitely going to try the garlic shrimp! Looks like the perfect summer meal! I love the idea of meal planning everyone you’re going to have all week ahead of time! Makes it so much easier to eat healthy and stay on track!! Thanks for your post!

  3. Gina,  Thanks for providing my dinner plans for the week!  I’m going to sub Greek Yogurt for all of the ricotta.  I hope it turns out.  My husband and daughter are not fans of ricotta!

Thank you for modeling how a busy week doesn’t mean good eating is sacrificed, how a little planning goes a long way, and for basically doing the planning for me in the most hectic of weeks.   5. I see a few things here I’m going to gave to try! Your grilled lemon dijon chicken skewers have become a staple in our home. They are so simple and better yet, delicious. I made them tonight and put them on top of a Greek salad…EXCELLENT!!! Thank you for never steering me wrong

  6. Looks like a tasty week. I’m having a salmon caesar salad Monday and Tuesday. Wednesday and Thursday is your Crockpot Italian Turkey Meatballs (minus the parm) over zoodles. Friday we’re usually at my in-laws, but we might be hosting them this week. The weekend is perpetually up in the air. We usually go out or order in Saturday night, Sunday is a great unknown.
