- Line a small 13 x 9-inch baking sheet with parchment paper.
- In a food processor or blender pitcher, add yogurt, honey, 1/2 cup of the strawberries, vanilla and pinch of salt. Blend on high until smooth throughout, roughly 10-15 seconds.
- Pour mixture onto baking sheet, and use an offset spatula to spread out evenly.
- Top off with the remaining strawberries and nuts.
- Set in the freezer for roughly 2 hours to set. Cut into 12 pieces and eat frozen.





Hubby loved it. I was expecting a more creamy feel rather than the icy consistency. Perhaps if I had made it with full fat greek yogurt it would have been creamier.

Yummy treat! I need a sweet treat after dinner every night and this is a great option for me. I’m not wild about the addition of pistachios; I’ll probably skip those in the future! It is a bit sticky to hold and eat but that doesn’t really bother me; I just wash my hands off after. Overall definitely making these more!

Fresh and bright, and so yummy for a summer treat. I made this in muffin cups (with papers) and it’s perfect. Mine needed to sit at room temp for about 5 minutes to come loose from the muffin tin, but then it was easy and I popped them into a ziplock. So good! Thanks!
Delicious! Had to make it almost as soon as I read it 😊. I swirled 2 tbsp of peanut butter on 1/2 and then sprinkled graham cracker crumbs on the other side. Was super yummy!
