These are the BEST turkey burgers! They come out so juicy, and the flavor is delicious. I started experimenting with adding zucchini to my turkey burgers back in 2010 and never looked back. They are healthy, easy and and perfect for quick dinners any night of the week. You can also try these Greek Feta Turkey Burgers.

Adding zucchini also lowers the calories per serving because you get five patties out of 1 pound of ground turkey them instead of four. Serve them with your favorite burger toppings, on a whole wheat bun or skip the bun and serve them on lettuce to keep the carbs low. These can be grilled or cooked indoors. If you want to make them on the grill, it’s best to make the patties ahead (overnight is best) and keep them refrigerated so they hold their shape. You can also freeze them and thaw them right on the grill.

How To Make the Best Turkey Burgers

  • Use a box grater to grate the zucchini, onion and garlic super fine. A mini chopper would also work.
  • Get the pan hot before you put the burgers on to get a nice sear, then lowered the flame to the lowest setting to let the burgers cook all the way through, turning a few times so the burgers don’t burn.
  • Squeeze ALL the moisture from the zucchini with paper towels. In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, salt and pepper. Make 5 equal patties, 4 1/2 ounces each, not too thick so they cook in the center.

To Cook Turkey Burgers on a Skillet:

Heat a large nonstick skillet on high heat. When hot, lightly spray oil. Add burgers to the pan and reduce the heat to low. Cook on one side until browned, then flip. Flip over a few times to prevent burning and to make sure the burgers are cooked all the way through.

Air Fryer Turkey Burgers:

Cook in a single layer in two batches 370F for 10 minutes, turning half way until browned and cooked through in the center.

For Grilled Turkey Burgers:

Clean grill well before cooking and spray with oil spray to prevent sticking. Cook the burgers on medium heat about 5 minutes on each side, or until no longer pink in the center.

Ingredients

  • 6 oz grated zucchini, when squeezed 4.25 oz
  • 1 lb 93% lean ground turkey
  • 1/4 cup seasoned whole wheat or gluten-free breadcrumbs
  • 1 clove garlic, grated
  • 1 tbsp grated red onion
  • 1 tsp kosher salt and fresh pepper
  • oil spray

Instructions

  • Preheat the air fryer to 370F.
  • Cook in a single layer in two batches 10 minutes, turning half way until browned and cooked through in the center.

  3. Love this recipe. I made a few in skillet and a few in air fryer. Both are great! My air fryer doesn’t have 370 temp setting so I cooked 8 minutes @ 375.

  4. Really great recipe. I added some Worcestershire sauce and a tiny amount of grated parm to the burgers. Flavorful and moist. Had a little over a pound of meat so was able to get 6 patties.

  6. This is a star recipe, representative of how good healthy cooking can be. Every time I make them, I think I could live on these. This time just did in skillet. Only addition was some spices ( Penzey Bavarian seasoning) sprinkled on the outside before browning in skillet. A favorite every time.

  7. Just made these, they were amazing!  A few days ago I grated my ABUNDANCE of zucchini using my food processor and spent hours draining the liquid.  Perfect amount for these turkey burgers (yum!) and some zucchini bread.

      1. There’s 8oz of liquid in a cup, it’s different for solids. You’d need to use a kitchen scale

    These were the bomb! Better than beef burgers and way healthier!! We all loved them. Good the next day cold also. Grating and squeezing the water out of the zucchini was messy and time consuming BUT SO WORTH IT! Thanks for the outstanding recipe,

  10. Gina, you create some awesome recipes and this one does not disappoint. I’ve made these several times and everyone loves them.  They are so juicy. I just made a double batch for company and typically serve them with grilled veggies and a salad.  In the beginning I made the burgers following the recipe exactly. Lately I’ve been adding a chopped jalapeño, extra crushed garlic and some crushed red pepper. We like things spicy!  I love that these are very healthy. This has become a regular meal rotation for us. 

  11. This was a hit in my house. I had bought the Costco ground turkey, so I doubled the recipe and made one batch as burger patties, and the other as meatballs to freeze for another day. I used the air fryer and made some home made sweet potato fries to go with it. The burgers were so juicy. Everything was enjoyed by my picky kids. This will be on regular rising

    These burgers were outstanding in the air fryer, NOT dry, great flavor and my family had no idea that zucchini was inside. These turkey burgers will be my go to from now on. Loved them

These are incredible!  I was leery about the cumin but I made them as written and, honestly, wouldn’t change a thing.  I grilled them on my ninja foodi and it took about 12 minutes on medium. They were juicy and delicious and the texture is just like a hamburger.  I will be eating these instead of beef on hamburger night from now on. BTW, I also get 4 points on WW green when I put this in the recipe calculator.  I used regular bread crumbs so that may be the difference.  Thank you for another keeper!!
