This easy Watermelon Feta Salad, made with only four ingredients, is a summer staple at your next summer BBQ!

I make this refreshing watermelon feta salad all summer long! I had a few friends over for a BBQ for my friend’s birthday and I served my Grilled Lobster Tails, grilled steaks, and this simple Watermelon Feta Salad with arugula and mint, which was such a hit! Watermelon is the best addition to any summer salad since it’s so light and refreshing. - Watermelon, cut in balls with a melon baller or cut into cubes, this sweet and juicy fruit is the base of the salad.
- Baby Arugula: It has a peppery taste that goes well with watermelon.
- Fresh mint leaves: Add some freshness and flavor
- Feta cheese: Crumbled in large chunks, adds creaminess to the salad.
How To Make Watermelon Feta Salad
- Start by using a melon baller, and prepare the watermelon into large balls. If you don’t have one simply cut into into 1/2 inch chunks. Set aside in a bowl until ready to serve.
- About 30 minutes before you’re ready to serve, drain the liquid from the bowl (I poured it into a cup and drank it!).
- Scatter half of the watermelon into a large, shallow serving bowl and scatter half of the arugula and feta on top, repeat with the remaining watermelon, arugula and feta then top everything with fresh mint.

- 8 to 10 fresh spearmint leaves, chopped
- 8 ounce package feta cheese, crumbled in large chunks

How long does this keep?
It would be best eaten same day, and no more than 3 days in fridge.

Adding lime salt to the watermelon enhances the flavor and makes this a fantastic dish!
Can you use regular mint in this? I could not find spearmint near me.

Delicious. This is one of my favorite salads. I usually add cucumber and a little bit of red onion.
Another simple, yet delicious, salad! My very picky husband (our palates are TOTALLY different) loved the combination of sweet melon and briny feta (but he wouldn’t put mint on it – fresh herbs are “too green-tasting” for him. SMH). He also doesn’t like arugula (I love it), but he loves it in this. I do sprinkle just a few drizzles of white balsamic vinegar on it before serving, and that really enhances the sweetness of the melon. It’s so hard to find foods we both like, so thank you, Gina!

This was a hit today! I added blueberries to be festive and cucumber for some crunch. Absolutely love all the flavors…totally works!
I make a version of this without the arugula, and add a drizzle of fig balsamic vinegar. I also use reduced-fat feta
OMG THIS!!! A friend brought something similar to a party and I wasn’t sure about mint + arugula, but it totally works. Her version included cherry tomatoes (not my jam so I leave them out) and a spritz of olive oil and drizzle of balsamic (amazing), and it’s the only thing thing I want to eat all summer. Add grilled shrimp and it’s a meal. If you like crunch, garnish with chopped pistachios.
