
I love fruit in my salad and I love the texture of the almonds and how the gorgonzola cheese compliments the sweetness of the strawberries. I like to use mixed baby greens, baby spinach and arugula. Walnuts or pecans can be used instead of almonds. This is a quick low point salad to complement a meal or eat as a light lunch. Top with balsamic vinaigrette.

Ingredients:
- 1/2 pint strawberries, sliced
- 2 bunches mixed baby greens, arugula and baby spinach
- 1 oz slivered almonds
- 1 oz crumbled gorgonzola cheese
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1/4 tsp coarse kosher salt
- fresh ground pepper
Directions:
Toss to combine mixed greens, strawberries, almonds and vinaigrette and serve.


















Gina, I love, love, love your blog!!! I started weight watchers in March 2007. I lost 24 punds and then we moved and I had some other things going on. Needless to say I gained 15 of that back but only due to my lack of effort.
