Pork Chops with Dijon Herb Sauce




This is the best way to prepare pork chops. They come out juicy and full of flavor. I have been making this recipe for years from one of my Food and Wine cookbooks. My husband is not a fan of pork chops, but he loves them when I prepare them like this. You can use any fresh herbs, but I always use chives and parsley since I have them in my garden. Here's the recipe modified slightly to keep it light.



Pork Chops with Dijon Herb Sauce

Servings: 4 • Serving Size: 1 chop Old Points: 4 pts • Points+: 4 pts
Calories: 166.5 • Fat: 9.2 g Carb: 2.6 g Fiber: 0.2 g Protein: 16.4 g


  • 1 tsp butter
  • 4 pork chops (22 oz with bone, fat removed), 1 inch thick, trim all visible fat
  • 1/2 tsp salt
  • fresh ground pepper
  • 3 tbsp chopped onion
  • 3/4 cup fat free chicken stock
  • 1 tbsp dijon mustard
  • 2 tbsp chopped, fresh herbs like parsley, chives, tarragon
In a large frying pan heat the butter over moderately low heat. Season pork with salt and pepper. Raise heat to medium and add the chops to the pan and sauté for 7 minutes. Turn and cook until chops are browned and done to medium, about 7-8 minutes longer. Remove the chops and put in a warm spot.
Add the onion to the pan and cook, stirring, until soft, about 3 minutes. Add the stock and boil until it reduces to 1/2 cup, about 3 minutes. Stir in the mustard, herbs, and 1/8 tsp pepper. Put the chops on a platter and pour the sauce over the meat.

Food and Wines says it is ok if the pork chops are pink in the center. Trichinosis is killed at the relatively low temperature of 150°. I use a thermometer to check the center and usually leave it until it hits 160°. Don't overcook or they will become dry.

  13. I made this last night for dinner and.... OMG is all I can say. I did add garlic to is as my husband and I love garlic in everything. Even my husband said this was a keeper and he is so picky. When we were eating I was thinking that you could add a dash of fat free half and half to make it a cream sauce and I bet it would be awesome and another twist to this wonderful recipe!

  16. I'm excited to make them tonight. I couldn't find 1" thick porkchops though. I went to 3 different places, they only had thin. I hope it still works out.   18. Update: I made it last night and IT WAS A HIT!!! I just shortened the time and it worked. My friends came over for Lost night and that's what I served them. I was a little bit nervous because porkchops usually are tricky to cook... they are either undercooked or overcooked. This time, it was perfect! It was moisty and the sauce was delicious. My friend, who is pretty "high maintenance" and will tell you straight up if he doesn't like something, had 2 porkchops!!! I shared this website to my coworker and i told her about the porkchops and she's excited to try it too. THANKS AGAIN FOR SHARING! Yeay!!!

  29. Gina!!! YUUUUUUMMMM! I used thick boneless chops instead so the cooking time took longer but the end result was so good. That sauce is amazing for so few ingredients. I had a leftover one today for lunch with plenty of sauce...OMG so yummy. Thanks for getting me back into using fresh herbs - it makes all the difference.

    The pork chops still weren't quite cooked to my family's well done taste, so I added them back into the pan, added a little more stock, and let it simmer. So yummy - love the flavors!

I am not a porkchop person and neither is my husband, but I thought we would try it. the only variation I made was i added Quartered mini portabella mushrooms and a bit more chicken broth since the mushrooms suck up some of the juice. it was great! thanks for the wonderful recipes

  56. So delicious I practically licked my plate. I used only 2 boneless chops, but made the same amount of the sauce - glad I did as I wanted that extra sauce on my chop. I used red onion instead of white. Another winner for sure, Gina.

  58. Mmmmm! We had these for supper tonight and they are SO GOOD and SO EASY!!! I used boneless chops and they tasted wonderfully. My husband was a bit paranoid about eating them because my meat thermometer was only reading 120 (its a dial kind, not digital), but the meat was white and fully cooked. Either way, it was super tasty and we will definitely make this again!

    I run a small catering business & found your website 2 weeks ago, your recipes are awesome!!
    I cook dinners for a family that wants ww meals so the Mom can loose weight but the ww cookbook recipes can be short on flavor, I also need ww meals now that the holidays are over & needed meals that my husband would eat also, you have solved that problem, my husband has loved every recipe I have gotten from you! The comments help also as I cook 3 dinners a week for my customer so they need to taste good reheated so I always look for those comments. This Pork Chop recipe is yummy, using fresh herbs is key, I try and use the same herbs in a few dishes per week so I don't throw too much away, not being summer I have to buy them. I made the oven fried Sweet potatoes with the pork, they were good too, I added some cinnamon instead of paprika, tried cayenne pepper on some butit was a little too spicy so I will stick with the cinn or paprika next time. Also have to tell you the Chicken Francese was amazing will be making that again this week, my picky husband loved it! was confused with flouring before egging the cutlets, (so ingrained the other way)but I followed directions and what a fab dish will definatley serve to my friends. Just had to write you and thank you for sharing your recipes, Keep them coming!Val Bell sag harbor ny

  60. I think it's such a great idea having catering with WW points! What a great service you are offering people! So happy you are enjoying the recipes you've tried so far, here's a tip with fresh herbs, wash them, roll them in plastic wrap in small portions and freeze them. When you need the herb, remove a portion from the freezer, it thaws quick, and use it as you normally would.

  62. I made these Tuesday night for my daughter's family and it was a big hit! Everyone loved it, even the grand kids! Didn't plan very well though, as our plates weren't very colorful. We had brown rice, your roasted cauliflower (yum) and the pork chops. At least the salad added some green :-)

I absolutely LOVED these! I said it was kind of fancy, and my husband even said it was like "grown up food"... No hint of Mrs. Dash OR applesauce anywhere to be found.   66. Yummy! I used shallots instead of onions and it was so tasty. I discovered how much I love shallots after I made your chicken thighs with shallot vinegar sauce. Also, I didn't have any fresh herbs so used dry and it was still flavorful!

  84. So I had some pork chops in the fridge and wanted to find a new way to cook them. After making your yummy pineapple cupcakes this weekend I found this recipe. OMG! DELICOUS!!!! I absolutely loved it. My husban went nuts over it. Usually he says something tastes fine or if he hates it he says nothing. Tonight he went on for an hour about how that was fancy reataurant quality dinner!!! I made some baked seasoned red potato wedges and peas to go with it. The wedges went perfectly. Not only was this so tasty but very easy to make. There is a little prep but overall very simple.

  94. I made a ton of these pork chops the other day because I had picked up a bunch of the pork on clearance at a local grocery store. I figured we could eat them for lunch or whatever. Well, they weren't getting eaten fast enough. I came up with a recipe/dish to help use the leftover meat and sauce (of which I also made a ton).

    Here's what I did:

    Diced up (in medium chunks) the meat and put the pieces in the bottom of a 9 X 13 baking dish. I took a very large onion and a bunch of mushrooms and sauteed them in a pan. I took the mushroom mix and the meat and combined them all together and then took the leftover sauce and poured it over the meat mixture. I made homemade mashed potatoes and neatly put it on top and smoothed it out. I baked this at 375 degrees F. for about 30 minutes.

    It's just like shephard's pie, but oh so much better!!

  96. A keeper! I used shallots and olive oil instead of onions and butter. Could not have been easier to prepare. Served with a side dish of orzo and veges....cooked thin asparagus pieces and halved grape tomatoes right in the pasta water; finished with some toasted garlic and a teaspoon of olive oil prepared in the same pork chop/sauce pan so it picked up some of the flavor. The entire meal was done in less than an hour with only two pots.

  97. Just made these and they are so delicious! I always have trouble with pork chops b/c sometimes they come out tough. This recipe is easy and delicious. I have a small herb garden and used lemon thyme, oregano and chives. Also used boneless 1" chops (that's what I had in freezer) and they came out great. Thanks Gina!

  107. Loved these when I made them last night, but needed to add a lot more broth (I doubled it, but could have added more, then reduced more) to get the amount of sauce I wanted. Still delicious, though! Substituted green onion for onion, and used cilantro as my herb.

  111. I made these tonight with tarragon, and they were fantastic! All your recipes look so yummy!

    I'm confused about the calorie count, portion size, etc. I'm new to calorie counting, weighing food, etc. so I might be doing something wrong. Your recipe states 4 pork chops (22oz with bone), 1" thick, fat trimmed. I translate this to mean that each raw pork chop would be approx. 5.5oz including the bone weight, after the fat is trimmed. I could only find 1/2" thick chops, and after trimming the fat, the weight was approx 6.5oz. Using the nutritiondata.self.com calculator for pork, fresh, loin, center loin (chops), bone-in, separable lean only, raw, I calculated my chops to be approx 234 calories each. That is big difference from your serving size portion of 166 calories. I calculated my recipe per serving as 263 calories. I didn't expect that much difference, especially since my chops were 1/2" thinner that the recipe called for. What am I doing wrong? Thanks! Scarlett

  112. This was wonderful. I used boneless 1/2 inch chops because that is what I had on hand. I was out of fresh herbs so I used a tablespoon of tastefully simple dill mix and it was still great. The entire family enjoyed this meal.

  113. These pork chops were wonderful. I really appreciate the specific cooking instructions - the result was tender, moist chops that had a great flavor. I didn't have fresh herbs so I used dried tarragon and parsley - very good. Also, I added mushrooms. We like sauce, so next time I will not cook the sauce down quite as much. First time I have made something in a while that my husband said "amazing"!

  117. This looks good but I wondered if you think it would work without the onions? My husband can't eat them, which can be a challenge since so many recipes use them. Will this lose all it's flavor without them? Any suggestions for substitutes?

  118. Wow! These were the best pork chops ever! I made them over the weekend and the family asked for them again, so I made them tonite. Just a few minor tweeks, 4 chops would never be enough for us, I have an eating machine teenager, so I used a family sized pkg instead. To make up for the difference, I just added a bit more chicken broth, dijon, and a little more chopped onion, and 1 Tbs of flour, to give the sauce just a little more body. Gina, you are a godsend! I feel like with you, I can get to goal weight (this time). Thank you sooo much!!!
