
This potato salad is absolutely delicious, especially if you're not a fan of traditional potato salad loaded with mayonnaise. Red potatoes provide vitamin C, vitamin B6, potassium, iron, and dietary fiber. Eaten with their skins on, they are even higher in fiber.
I found this recipe from Paula Deen and was surprised to see a lighter recipe from her, but the ratings were 5 stars so I figured it had to be good! I modified it a bit further reduce the points, but you would never know. This potato salad is a keeper and got lots of kudos at my Father's Day luncheon.
Baby Red Potato Salad
Gina's Weight Watcher Recipes
Servings: 6 • Size: 3/4 cups • Old Points: 2 pts • Points+: 3 pts
Calories: 107.2 • Fat: 3.2 g • Carbs: 17.8 g • Fiber: 2.1 g • Protein: 2.2 g
- 4 cups baby red potatoes, cut in small pieces
- 1/2 cup green bell pepper, finely diced
- 1/4 cup red onion, finely diced
- 3 scallions, diced
- 1 tsp dijon mustard
- 1 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tbsp reduced fat mayonnaise
- salt and fresh pepper
Boil potatoes in salted water until soft, approx 10 minutes. Drain and let cool.
While the potatoes are boiling, combine red onion, green pepper, mustard, olive oil, vinegar and mayonnaise and season with salt and pepper. Mix well and let the flavors marinade while the potatoes cook. Once the potatoes are done and cool, mix into the bowl and add scallions and additional salt and pepper to taste. Serve room temperature or refrigerate until ready to serve.

ReplyDeleteThe A-Z points food list was a helpful link I found to use when you are in a pinch. It's not my site. I use my weight watchers book and my calculator to figure out the points. I actually haven't used that site in a while, I'm surprised the points don't match. They always used to when I used to check. Thanks for the info.

ReplyDeleteI just made this today and it is delicious!!!! I couldn't stop eating it. I am picky about my potato salad because most are too heavy, but this one is very light and has just enough mayonnaise. I also liked the dijon mustard in it. I will be making this again, everyone should try it.

ReplyDeleteMade this one as a side for Easter this year and it was pretty good! I doubled the recipe and I think I might have accidentally left out the mayo update, but it was still pretty good! Letting everything marinate a little while really helps all the flavors to blend together!

Subbed the green peppers for red, and the green onions for chives, and the red onion for white and it was still wonderful! I used subs because this is what I had on hand. Also, I microwave my potatoes. Cut them up, salt them, put a bit of water on them, and hit the "fresh vegetable" button on my microwave. Perfect every time! Thanks for the recipe....

ReplyDeleteI made this today and like it very much. The bell pepper flavors the dressing, so if you don't care for that flavor I would cut back on the amount of bell pepper used. The dressing is nice and tangy, definitely a new twist of mayonnaise dressings.

ReplyDeleteI made this Saturday night with your pollo sabroso. It was so good! Love the vinegar and the lightness of the sauce. The next day I cut up some of the cold chicken and mixed in, still tasty! I want to try adding some fresh veggies after the potatoes soak up some of the sauce.

ReplyDeleteThis is delicious! I made it tonight and the smell was amazing so I ate it as soon as it was cool enough. I realized while making it I didn't have any mayo so I used light sour cream and it gave it just a tiny bit of sweet/tangyness. The sauce is so light! I think I may make a dressing from it. ReplyDeleteMade this tonight with the slow cooker pulled pork and it was good but I wasn't blown away, until I added some dill. Then it was like a flavor explosion in my mouth!! I make a killer potato salad but it's just that, a "diet" killer! So this was a nice change. Great recipe! It's nice to have a recipe I don't feel guilty about. I was very skeptical about the sauce being enough to cover the potatoes and boy was I wrong. Never would have thought it would be enough. Just goes to show you learn something new every day!
ReplyDeleteOh on a side note: I also boil a couple of cloves of garlic (coarsely chopped) with the potatoes, They help take out the "blah" flavor of the plain boiled potato =)
I finally got around to making a batch this weekend, and it is SO good! I love potato salad, and am always sad that I have to avoid it a delis, barbeques, etc. This really hits the spot. I like the above poster's idea of putting in a little dill. I'll do that next time. I'm not a fan of raw bell pepper so I used celery in its place, and it turned out very well. Thanks, Gina!
ReplyDelete=) Thanks Kris, I grew up with dill in everything so it just didn't taste right without it. I also used celery as my boyfriend doesn't care for bell peppers. I also should mention, one of my very close friends highly recommended this recipe (more like NAGGED) and she suggested omitting the vinegar. (she tried it with and didn't like it) so I left it out as well because I'm not a fan of vinegar. I only mention this because I don't know how the dill would marry with the vinegar and that the vinegar would overpower the dill.

ReplyDeleteMade this for Memorial Day and it was a big hit. How great to be able to eat potato salad while following Weight Watchers! I didn't change a thing but might try adding some dill just to change it up a bit next time (although it certainly doesn't need to be changed...I just like to vary things from time to time). Be careful not to overcook potatoes. Gina's directions to cook for 10 minutes is perfect.

ReplyDeleteMade this for 4th of July picnic. It made enough for 6-7 people to have 1 scoop. If you have a big event, you might want to double the recipe. I'm from the south and we're used to a creamy potato salad, but everyone said it tasted good. I added a tbsp of honey mustard b/c I don't like the taste of dijon. I did make the "dressing" and then leave it in the cooler for about 6 hours and it smelled wonderful when I took it out (much better than when I made it). I'll make this again for my family.

ReplyDeleteThis potato salad was delicious!!! I used a bag of baby red, purple and gold potatoes which added even more color to the salad. Next time I think I will do the greek yogurt which was suggested in previous posts because my husband and I are greek yogurt fanatics.
ReplyDeleteI made this and it was wonderful! Very easy, and still very tasty for being so much lighter than the traditional deli potato salad. I liked the ratio of potatoes to sauce; they were well-covered without totally swimming in it, so I would definitely suggest sticking to the measurements. It was a great side for a grilling out night.

I went on the WW Site and using the points calculator on track your food page, this potato salad checked out right on point. It is 3 points per serving. I used the following numbers. 3 fat, 18 carbs, 2 fiber and 2 protein and it computed out to 3 points plus per serving. I checked other recipes also, I think it was the Bangin Good Grilled Shrimp and the Eggplant Parm and those computed out to the same amount of points Plus also. I think your recipes are WW points plus accurate at least from my calculations on the WW website.

ReplyDeleteI loved it, hubby prefers the mayo style. Add lots of salt, for the best flavor. I salted the water, and salted the wet ingredients, but had to add salt 2 more times. I thought it was perfect though! May add some hard-boiled egg next time.

I told him not bad for low fat as I was gobbling it down and he said I think it only counts as low fat if you don't eat it all in one sitting haha but it was so good!
