Baby Red Potato Salad




This potato salad is absolutely delicious, especially if you're not a fan of traditional potato salad loaded with mayonnaise. Red potatoes provide vitamin C, vitamin B6, potassium, iron, and dietary fiber. Eaten with their skins on, they are even higher in fiber.

I found this recipe from Paula Deen and was surprised to see a lighter recipe from her, but the ratings were 5 stars so I figured it had to be good! I modified it a bit further reduce the points, but you would never know. This potato salad is a keeper and got lots of kudos at my Father's Day luncheon.

Baby Red Potato Salad
Gina's Weight Watcher Recipes
Servings: 6 Size: 3/4 cups Old Points: 2 pts • Points+: 3 pts 
Calories: 107.2 • Fat: 3.2 g • Carbs: 17.8 g • Fiber: 2.1 g • Protein: 2.2 g


  • 4 cups baby red potatoes, cut in small pieces
  • 1/2 cup green bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 3 scallions, diced
  • 1 tsp dijon mustard
  • 1 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp reduced fat mayonnaise
  • salt and fresh pepper

Boil potatoes in salted water until soft, approx 10 minutes. Drain and let cool.

While the potatoes are boiling, combine red onion, green pepper, mustard, olive oil, vinegar and mayonnaise and season with salt and pepper. Mix well and let the flavors marinade while the potatoes cook. Once the potatoes are done and cool, mix into the bowl and add scallions and additional salt and pepper to taste. Serve room temperature or refrigerate until ready to serve.

  7. This potato salad seems very classy to me! I dislike the mayo-glued potato cobblers that you usually find in BBQ parties because they lack flavour and have too much bad stuff, but this looks great, light and healthy!

  10. I made this salad yesterday and my husband who is very finicky about his potato salad couldn't say enough positive things about it! It was really a nice change from the usual potato salad with mayo. Definitely a keeper for my files.

  12. I am a little concerned that some of the points on your weight watchers A-Z points food list don't match up with the points calculator on the actual WW website. How did you arrive at your totals? I appreciate all the work that must have gone into its creation and mean no disrespect. Just concerned about sticking with the plan.

  13. The A-Z points food list was a helpful link I found to use when you are in a pinch. It's not my site. I use my weight watchers book and my calculator to figure out the points. I actually haven't used that site in a while, I'm surprised the points don't match. They always used to when I used to check. Thanks for the info.

    I just made this today and it is delicious!!!! I couldn't stop eating it. I am picky about my potato salad because most are too heavy, but this one is very light and has just enough mayonnaise. I also liked the dijon mustard in it. I will be making this again, everyone should try it.

  16. this was a really good potato salad. I might sub all scallions for the red onion next time just cause i'm not a big raw onion fan - but everyone else didn't mind them! This was a perfect mix of flavor & moisture!

  20. Made this one as a side for Easter this year and it was pretty good! I doubled the recipe and I think I might have accidentally left out the mayo update, but it was still pretty good! Letting everything marinate a little while really helps all the flavors to blend together!

  23. I just finished making this - it turned out awesome! I used stone ground mustard instead of dijon and it worked out well. I also topped it with hormel's pre-cooked bacon pieces-yum! Thanks for the great recipe.

  29. this potato salad is EXCELLENT....took it to a bbq and it was a huge hit! Subbed the green peppers for red, and the green onions for chives, and the red onion for white and it was still wonderful! I used subs because this is what I had on hand. Also, I microwave my potatoes. Cut them up, salt them, put a bit of water on them, and hit the "fresh vegetable" button on my microwave. Perfect every time! Thanks for the recipe....

  35. I was wondering if you could substitute apple cider vinegar instead of using red wine vinegar. Would it drastically change the taste? I just don't feel like running to the store again! haha

  40. Wonderful! I make the best creamy fattening potato salad, but I only make it when those who expect it of me will be around to help eat it! I just made this and it might be a good substitute! No one has mentioned if it holds well overnight. Does it?

  59. YUM! This potato salad was the perfect addition to my dinner tonight! I forgot to add the mayo and ate it without and it still tasted great. I added it in after and the mayo leaves a smoother taste. Definitely one I'll put in my recipe book!! :)

  60. i overcooked the potatoes a tid bit, but didn't love the taste of this potato salad. Perhaps I'd try it again and leave out the Dijon. the taste was too 'pickled' for me, could have been the red wine vinegar

  68. I made this today and like it very much. The bell pepper flavors the dressing, so if you don't care for that flavor I would cut back on the amount of bell pepper used. The dressing is nice and tangy, definitely a new twist of mayonnaise dressings.

    This potato salad is really really good! In fact, I really wasn't expecting it to be so good! lol (I'm not usually a big fan of low-fat cooking, but apparently YOU know how to flavor things up!) We don't like bell pepper, so I left it out. I really cannot wait to sit down and eat! ( & to try all your other recipes! Thanks for all your hard work on this site.)

  72. I made this Saturday night with your pollo sabroso. It was so good! Love the vinegar and the lightness of the sauce. The next day I cut up some of the cold chicken and mixed in, still tasty! I want to try adding some fresh veggies after the potatoes soak up some of the sauce.

    This is delicious! I made it tonight and the smell was amazing so I ate it as soon as it was cool enough. I realized while making it I didn't have any mayo so I used light sour cream and it gave it just a tiny bit of sweet/tangyness. The sauce is so light! I think I may make a dressing from it. Thanks again!!!

    My mom is a totally great cook- but hyper critical of other's cooking. she has also successfully lost 80 lbs on WW.
    Even this recipe WOW'd her at a cookout over the summer at our house. I make skinny taste a "shortcut" on her home computer!

    I made this the Paula Deen way last night, with kielbasa. I had not yet seen your recipe It was delicious, but I'll definitely use your recipe next time,but omit the mayo. Makes it more picnic friendly. Needs no refrigeration.

  85. This was AWESOME!! I usually don't eat potato salad because I am not a big fan of mayo, but this was delicious!! The dijon mustard gave it such a great flavor, and the mayo was just the right amount!! LOVE, LOVE, LOVED IT!!

  86. Made this tonight with the slow cooker pulled pork and it was good but I wasn't blown away, until I added some dill. Then it was like a flavor explosion in my mouth!! I make a killer potato salad but it's just that, a "diet" killer! So this was a nice change. Great recipe! It's nice to have a recipe I don't feel guilty about. I was very skeptical about the sauce being enough to cover the potatoes and boy was I wrong. Never would have thought it would be enough. Just goes to show you learn something new every day!
    Oh on a side note: I also boil a couple of cloves of garlic (coarsely chopped) with the potatoes, They help take out the "blah" flavor of the plain boiled potato =)

  87. I finally got around to making a batch this weekend, and it is SO good! I love potato salad, and am always sad that I have to avoid it a delis, barbeques, etc. This really hits the spot. I like the above poster's idea of putting in a little dill. I'll do that next time. I'm not a fan of raw bell pepper so I used celery in its place, and it turned out very well. Thanks, Gina!

    1. =) Thanks Kris, I grew up with dill in everything so it just didn't taste right without it. I also used celery as my boyfriend doesn't care for bell peppers. I also should mention, one of my very close friends highly recommended this recipe (more like NAGGED) and she suggested omitting the vinegar. (she tried it with and didn't like it) so I left it out as well because I'm not a fan of vinegar. I only mention this because I don't know how the dill would marry with the vinegar and that the vinegar would overpower the dill.
