- 1 mango, peeled and diced
- 1 avocado, peeled and diced
- 1 plum tomato, diced
- 1 clove garlic, minced
- 1 jalepeño, seeded and diced
- 1/4 cup chopped fresh cilantro
- 2 tbsp fresh lime juice
- 1/4 cup chopped red onion
- 1 tbsp olive oil
- salt and fresh pepper to taste

Some things in life are just worth it.
If you buy baked chips it's not too bad. Guiltless Gourmet makes great tasting low point chips in all flavors if you are lucky enough to find them by you. I think 18 chips are 2 points.

ReplyDeleteomg i made this tonight, i doubled the mango 2 mango and 2 plum tomatoes, yummmmmm, my husband loved it, he wanted me to make extra so he had it for tomorrow. Thanks and they went with the quessedillas, instead of the chicken breast i did an already cooked rotisserie chicken (5 oz of chicken=3 points) so smart and healthy tortillas 1 point ww cheese 1 point, yummmmmmmmmmmmmmmmmmmmmm
ReplyDeleteI made this for Father's Day and it was fantastic! I added more jalapenos than what was asked to give it a little extra heat and I let it sit for a few hours before serving it. It was a hit!!!!

ReplyDeleteI made this for the first time last night, I didn't have a tomato or jalapeño but I still think it turned out amazing. Even my picky husband loved it! I served it over grilled fish, YUM!!!
ReplyDeleteThis is a terrific recipe! I have made it three times: once as an appetizer with baked Tostito scoops, once to go with grilled chicken, and once to go with grilled tilapia. It compliments anything! And quite frankly it is yummy to just sit and eat out of the bowl for a satisfying, healthy snack! This is quickly becoming a staple for me!
