Sliced hard boiled eggs, juicy ripe tomatoes, chopped scallions with a touch of mayonnaise, salt and pepper – enjoy this for breakfast or lunch.
With back to school quickly approaching, I thought I'd share a sandwich I often make for my older daughter, Karina. It's inexpensive, easy to make and she loves it!
Before I left my previous job in Manhattan, there was a small cafe that served this simple egg sandwich that I was hooked on. It's so simple but the flavors just work with the tomatoes and scallions. Now that I work at home, I make it quite often for myself and my daughter as she often requests it.
Easy Tip: Keep hard boiled eggs in your refrigerator for a quick breakfast on the go, to add to sandwiches or even salads. It only takes a few minutes to boil a few eggs, here's a foolproof way to make perfect hard boiled eggs every time.

ReplyDeleteTrish I thought of you when I posted this! I miss our mornings getting breakfast together :)
DeleteI love these too!! Sebastian and I used to always go down and get these in the morning! miss you guys! looks like you both are doing well :)
DeleteThis looks great. I've recently begun to enjoy hard boiled eggs more and this is quick and easy :)

i used to make this all the time for lunch on wheat bread! love how the scallions give it that extra bit of flavour! Yum!
ReplyDeleteLooks delicious!
ReplyDeleteI could see doing this with a Laughing Cow cheese wedge instead of mayo. (Not a fan of mayo). What do you think? Looks light and refreshing!
ReplyDeleteSure, or a drizzle of olive oil would be nice too.
DeleteLoved it. What a fresh, tasty, and easy lunch. Thanks!

Great!
DeleteI've been craving the protein of eggs, but almost never make them hard boiled. Would love to have them ready and waiting in the fridge to put in sandwiches/salads though, thanks for this recipe!!
ReplyDeleteWow, so simple but looks so delicious!
ReplyDeleteLooks fantastic - thanks for all the wonderful ideas!
ReplyDeleteYum Gina!! I am obsessed with hard boiled eggs, and now my daughter loves them too so I make them more regularly. I love eating them on a slice of toast with tomato and salt and pepper. Next time I'm taking it to this level, looks so delicious!
ReplyDeleteMMMM looks so good! I am definitely going to use your way to boil eggs, I still have not mastered that yet :) love your blog!
ReplyDeleteSO easy!
DeleteI haven't mastered hard boiled eggs, either. I started buying the bags of hard boiled eggs, already peeled. I'm going to take one more chance with Gina's and if that doesn't work, forget it forever!
DeleteI recently started baking my eggs! They turn out so much better, in my opinion. The egg is less rubbery and the yolk is very fluffy, for lack of a better word. :) Plus, they are way easier to peel! Put the eggs in a muffin tin, bake on 325 for 30 minutes, then immediately put into a bowl of ice water to stop them from cooking. They will have brown spots on the shell and maybe one or two on the egg, but they are fine. Easy and good!
DeleteLove this it looks simply delicious. I have to stop myself from pinning every single food I find on here haha
ReplyDeletepin away!! : )
DeleteYum! Gina, what type/brand of bread did you use?
ReplyDeletethose were the smaller Martin's potato rolls, I usually use the whole wheat potato rolls when I find them. Bagel thins are also great.
DeleteI used Thomas English muffins - light multi-grain and only 100 calories. YUM!!

Have a fantastic day. Can't wait to use a few of my ripe tomatoes to try this sammie :-)
cheers,
Erin
Gina, this will be my lunch tomorrow. We made the grilled pesto shrip Saturday and its a winner. I'm having leftovers today with saffron jasmine rice.
ReplyDeleteloved this, I have celiac so the gluten free bread needs all the help it can get, but this was very tasty!!
ReplyDeleteI'm glad to hear :)
DeleteI had never heard of this sandwich until I saw it on FB today. The two garden tomatoes I had were calling to me. Delicious! I use a well-cooked "fried" egg and it achieved a similar effect. My husband and I thank you!
ReplyDeleteLooks good. How long will the eggs keep in the fridge? Also if I made this for a school lunch, would it keep without an ice pack?
ReplyDeleteGood question, anyone?
DeleteHard-boiled eggs tend to stay refrigerated for up to a week. Not sure about the sandwich question, but I wouldn't take the chance for more than a few hours. Maybe if there was a cold drink in there with it?
DeleteI'm not a huge fan of tomatoes is there another veggie you would suggest?
ReplyDeleteCucumbers, green peppers or lettuce would work. My son hates tomatoes but loves cucumbers so I'll try it that way for him.
DeleteEven avocados!
DeleteThank You!
DeleteGina,
ReplyDeleteThese sandwiches are simply delicious. I've done adding lettuce leaves or also with olive tapenade. is very good. have a good week
These look delicious! But what would be a delicious substitute to the mayo? Maybe hummus?
ReplyDeleteI think hummus would go great with this! it goes with almost anything =)
DeleteI made a version of this, inspired by you! I don't care for scallions, so substituted with basil.
ReplyDeleteTake a look!

ReplyDeleteMy pleasure!
DeleteYum! This would make for a wonderful breakfast sandwich!!! Mmmm!!
ReplyDeleteI've been making hard boiled eggs lately - this would be great way to get my kids to try them. I might substitute smashed avocado with a little lime juice (like guacamole) for the mayo.
ReplyDeleteNice!
DeleteAny chance you could add a "share" button to individual recipes? I wanted to email this to my mom and have to use the firefox method.
ReplyDeleteThere is an email button below each recipe
DeleteI've never seen this combo before on a sandwich. I think that I will toast the bread and use mustard instead of mayo (I'm a fan of mustardy things in general). I appreciate the inspiration.
ReplyDeleteI have all of these items in my pantry right now. Can't wait to give this a try! Simple and delicious sounding.
ReplyDeleteGood thing the Husband hates tomatoes, I don't want to share! :0) Looks great!
ReplyDeleteSaw this recipe when I woke up this morning and gave it a try. Amazing how something so simple can be so yummy! Thanks!

ReplyDeleteI MARK THE BOILED EGGS WITH A B SO I CAN EASILY DISTINGUISH THE HARD BOILED FROM THE RAW. OR MARK AN EGG CARTON WITHE BOILED EGGS IN IT.
smart!
DeleteI just had this for lunch. I used the Laughing Cow Swiss Cheese (light) instead of mayo. Also instead of the scallions, which I did not have, I just sprinkled on some cilantro. Yuuuuummmm! So good.
ReplyDeleteThanks for the reminder about how tasty and convenient a boiled egg can be!
ReplyDeleteI had this for lunch today. I used a select whole wheat bun and it was delicious! :)
ReplyDeleteYUM!! That looks like it is right up my alley!
ReplyDeleteLooks good for a quick lunch sandwich. But wondering how long it will stay good in a lunch box. Cut tomatoe slices drips of the juices and soak the other ingredients of the s/w. any advice to avoid that?
ReplyDeleteThanks
When I used to buy them, she cut them in half and wrapped in saran wrap. That how they were sold and they were always good.
DeleteOooo! My gluten free biscuits will make this sandwich good, too! I think I'll use mashed avocado instead of mayo...with some cilantro.....maybe I'll make the CHEESE biscuits this time! Oh dear.....

ReplyDeleteThis is the best run down the arm, juicy, delicious sandwich. Just had it and cannot wait until tomorrow to have it again. Tomatoes just coming in from the garden. I just love you and your recipes. Keep up the great job
ReplyDeleteThis doesn't sound like it would be anything special, but it was delicious. Now, I just need to figure out how to keep it from falling apart as I eat it. I ended up with a slice of egg on my space bar this morning.
ReplyDeleteI tried this sandwich last night for supper after an exhausting day. It just hit the spot perfectly. I really liked it and loved how easy it was to make. Thanks for sharing!
ReplyDeleteI'm going to make this right now!

ReplyDeleteI'm just starting to work from home & need creative lunch options! Completely over Smart Ones... Thank you SO much for your amazing site! I've made so much for my boyfriend & I and I don't even think he's noticed our meals have been "skinny"!
ReplyDeleteBrandi
This has become my favorite sandwich!
ReplyDeleteThank you for teaching me, FINALLY, how to boil decent eggs!!! :)
I can't believe how good this is. I always put tomato in my breakfast sandwiches in the summer, but this was amazing! The scallion and mayo add so much flavor. Wow.
ReplyDeleteI'm no tomato lover, but something about the sandwich intrigued me to make it just the way the recipe called for. And it's now my FAVORITE sandwich! Gina, your site and recipes are fabulous - it has helped me maintain my 40 pound weight loss.
ReplyDeleteOH man, I just found the Pepperedge Farm Very Thin sliced whole wheat bread... 2pts for 2 slices! I'm using Dijon instead of mayo... got this down to 4pts... yay! Eggs are cooking right now... can't wait to try it :) Thanks Gina!
ReplyDeleteDelicious!!!
DeleteI don't know why I never thought to put these things together! This was great for dinner last night with a garden salad. Quick, easy and delicious.

ReplyDeleteMade these with a little bit of mustard (I'm not a huge fan of plain mayo) and they were great. Simple and delicious. Thanks for sharing!
ReplyDeleteI like more vegetables in the sandwich to make them healthier
DeleteThis is my new FAVORITE breakfast sandwich! I have had it every day for a week. I substituted light cream cheese for the mayo, I can't stand mayo. It's amazing! Thanks for making my mornings a little brighter :)
ReplyDeleteI made this on an 100 cal. WW english muffin and used laughing cow cheese instead of mayo. Absolutely delicious! It might be my new favorite breakfast :)
