Best Roast Beef Sandwich

Ingredients
- 2 1/2 oz baguette, or French bread
- 3 oz cooked roast beef
- 1/2 cup baby arugula, aka rocket
- 1/4 oz shaved Parmesan
- fresh cracked pepper
Instructions
- Slice bread in half and layer with roast beef, arugula, shaved Parmesan and fresh cracked pepper.

Loved this open face sandwich! I cheffed it up just a little for what I like. I don’t do weight watchers, but I do watch gluten levels, so I used sourdough sliced bread that has less gluten. I enjoy pickled red onion for a little tang and bite, spicy mustard, and I painstakingly cut 4 flavor bomb cherry tomatoes for some sweetness. And i “pretreated” my arugula with a tiny amount of olive oil, lemon juice and salt and pepper. Super delicious! Great to have roast beef back on the lunch menu instead of only ham and turkey, and to give it it’s due with perfect accompaniments!
So yummy! I had some homemade sourdough in place of baguette and added a little stone ground mustard and drizzle of balsamic glaze.
Made for my sister and me, no changes in the recipe, no Mayo, just dry, and we both LOVED it!!! Flavor combinations excellent, and we were surprised that a dry sandwich could be so tasty and satisfying! Going to make it again for lunch today.
I ended up making this for dinner and it was easy, filling and fast. I served it with roasted veggies and a Thai Iced Tea (homemade).
I make a similar sandwich on home made onion bread – add tomato slices and this dressing: equal parts Dijon & Hellmanns mayo, then add horseradish to taste. I just found your site and I love it!
I added up the macros for all of these ingredients and a couple of things struck me:
My count for sodium is 403 mg, not 148.
My count for protein is 9 g, not 22.
It was also fewer calories that what's listed here, but you won't hear me complaining about that.

I made this for lunch today. I just added a teaspoon of white balsamic vinegar to it (didn't add any points but gave it that awesome balsamic kick I love oh so much)! It was delicious and so satisfying. I actually toasted my baguette in the oven for three min, and it added a great crunch for more textures. Awesome recipe! Thanks again. 🙂

I love this sandwich!! I add a little greek yogurt (0% fat plain)for a little moisture and tang (not a fan of Mayo, and love the perks of greek yogurt).

Made this tonight… it was AWESOME! Very quick and easy, but still yummy and filling. I added some light mayo mixed with chopped basil. We'll be making this one again and again!
I made this last night for when I went to work today. I couldn't wait to get to work just so I could go on break and eat this scrumptious look sandwich. All of my co-workers kept asking me what was on and said "I want one!" It was soooo good and hit the spot. Definitely filled me up and can't wait to eat the other half tomorrow! This is definitely one of the best sandwiches ever!

I USED TO EAT THIS SAME SANDWICH ALMOST EVERYDAY FROM A PLACE CALLED PRET I LOVE IT BUT BEING MIDTOWN MANHATTAN IT GOT REALLY EXPENSIVE I NEVER THOUGHT TO MAKE MY OWN AT HOME AND BRING IT IN.

Gina – one of our favorites is a BLTAB (bacon, lettuce, tomato, avocado, basil) on a baguette. I frequently cook a ton of bacon (in the oven) on Sunday mornings and use leftovers during the week for offspring breakfasts and sandwiches. The avocado is mashed with garlic, chili powder and cayenne and mixed with pico de gallo and spread on a toasted (or not) baguette, then basil leaves, bacon warmed in microwave, tomato, and lettuce. I'm not sure what the point count would be, but I examine each and every package of bacon until I find one that actually has meat in it, cook it until it is almost crisp, draining the drippings off when I bring it out to turn it. Six slices (usually) covers the baguette pretty well. One avocado will make two baguettes so it is really spread thin. Lots of tomatoes, lettuce and basil. Deborah

anon, french baguettes contain flour, water, salt, and yeast. Nothing else.
I should say it's usually fat free but check your labels. Once in a while I see some made with fat but 9 times out of 10 it's fat free.

Yum! Our favorite warm (but not in the heat your house kid of way) sandwich is to take a high quality bun or kaiser roll and stack it with some deli sliced roast beef and sliced swiss cheese. then take a half a brick or reduced fat or fat free cream cheese and stir it together with a small can of mild roasted green chilies. Spread some of the sauce mixture on one side of the bun and microwave (yes…I promise it is delicious!) each sandwich for a minute. The cheeses get gooey and the whole sandwich is delicious. We call it Philly and Swiss at our house.

I usually use leftover when I make a roast.
I like a sammy with turkey, smoked gouda, sliced apples, and honey mustard. Another favorite is grilled chicken, taboulleh, and hummus on a wrap, I like Josephs lavash bread its really high in fiber.
