At my husband’s request, we make turkey meatloaf at home at least once a month. I love getting creative with it because there are many ways to switch it up. This moist ground turkey meatloaf is studded with corn, black beans, and green chiles and topped with enchilada sauce, jalapeño, and cheese. I’m always looking for new and exciting ways to use up a package of ground turkey, which is much leaner than beef. When it comes to meatloaf we have learned to prefer ground turkey to beef. For other ideas you can see all my ground turkey recipes from the archives.

Binder to hold ground turkey meatloaf together

To keep ground turkey meatloaf from falling apart, you must use enough binders to keep it together. I use a half-cup of quick oats and an egg for this recipe. You can also use breadcrumbs in there place.

What temperature should meatloaf be cooked at?

I cook turkey meatloaf at 350F degrees for 55 to 60 minutes. The best way to check that it is cooked through is with a meat thermometer, which should read 165 degrees.

How to freeze:

Meatloaf lasts in the refrigerator for 3 to 4 days and is great for freezing. For meal prep, you can make two – one to eat for dinner and one to freeze for later. It takes about the same amount of time to double the recipe, and the meatloaves can bake together.

To freeze, let the meatloaf cool and slice it. Then place the slices in a freezer- safe container with pieces of parchment paper in between so they don’t freeze together. When you’re ready to eat, pull out as many slices as needed, thaw in the refrigerator overnight, and reheat in the microwave.

Enchilada Turkey Meatloaf Variations:

  • Meat: Swap ground turkey for lean ground beef.
  • Enchilada Sauce: Make your enchilada sauce from scratch or buy it premade to save time. Leftover sauce is delicious on chicken-rice bowls, spaghetti squash, and of course, enchiladas.
  • Oats: Use an equal amount of breadcrumbs instead of oats. For a low- carb, grain-free option, go with almond meal.
  • Beans: Sub pinto beans for black beans or omit if you’re not a fan.
  • Corn: Omit if desired.
  • Herbs: If you don’t like cilantro, skip it.
  • Spiciness: If your family does not like spicy food, omit the jalapeños on top.

Ingredients

  • 1 1/2 pounds 93% ground turkey
  • 1/2 cup quick oats, *check lables for gluten free
  • 2 tablespoons mild enchilada sauce
  • 1/2 cup chopped scallions
  • 1/3 cup corn kernels, fresh or frozen
  • 1/4 cup canned reduced-sodium black beans, rinsed and drained
  • 1/4 cup chopped cilantro, plus more for garnish
  • 4 ounce can mild chopped green chili, drained well
  • 1 clove crushed garlic
  • 1 large egg, beaten
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon onion powder

For topping:

  • 2/3 cup mild enchilada sauce
  • 1/3 cup Mexican cheese blend
  • 1 jalapeño sliced thin, optional

Instructions

  • Preheat the oven 350F. Line a sheet pan with parchment paper.
  • In a large bowl combine ground turkey, oats, 2 tablespoons enchilada sauce, scallions, corn, beans, green chiles, garlic, egg, salt, cumin and onion powder.

  • Combine everything well using clean hands, then shape onto the sheet pan into an oval loaf flattened on top so you can add the sauce and cheese later.

  • Bake 55 to 60 minutes, until cooked through.
  • Remove from oven and top with the remaining enchilada sauce, cheese, and, jalapeño.
  • Bake until the sauce is heated through and the cheese is melted, about 5 to 10 minutes. Garnish with cilantro if desired. To serve, transfer to a cutting board and slice into 12 slices.
  • Serve with extra sauce if desired.

Notes

  1. Slow Cooker Method: Cut parchment paper to about 15-inch x 9 1/2-inches to easily insert and remove the meatloaf from your slow cooker.
  2. Place the loaf onto the parchment paper vertically then holding the edges of the paper, carefully insert into an oval 5-6 quart slow cooker. Cover and cook on low 6 hours or high 3 hours.
  3. Pull the loaf out of the slow cooker with the parchment and set aside on a dish. Drain any liquid from the bottom of the slow cooker and wipe the insert clean with a paper towel. Transfer the loaf back into the slow cooker with the parchment, cover with enchilada sauce, cheese and jalapeño.
  4. Cover and cook low heat until the cheese is melted, about 10 to 15 minutes.

  2. Great recipe! Sometimes I don’t like meatloaf made with turkey but this one is excellent! Flavorful and I especially loved the addition of corn and beans. I will be making it again.

  3. I have been making various meatloafs for my husband’s lunches, in an effort to avoid processed meats. I’ve made so many different types and this one is the very best of all. We are both so impressed! The only thing I changed was black eyed peas for the black beans. It was just a matter of what was in the pantry, but we both thought they tasted great! If you had 10 stars we would give it a 10! It slices beautifully and doesn’t crumble.

  6. Loved it! I substituted whole wheat breadcrumbs for the oats, and black lentils for the beans, and this was one of the best meatloafs I’ve every made. I cut back the green chiles to 1/2 a can and was sorry I didn’t add in the whole can. I’d cut back on the sauce topping next time, it ended up just creating a puddle around the loaf.

  15. This is one of my favorite of Gina’s recipes. I’ve made it many times with just one pound of turkey and a whole can of black beans. I add grated zucchini w liquid thoroughly squeezed out and increase the enchilada sauce to 4T ish and it comes out great. I check w meat thermometer, take out at 145 degrees, add cheese and sauce, broil to melt cheese and serve with additional enchilada sauce. I only use Gina’s homemade enchilada sauce – I make a big batch, it’s so easy and way better than store bought. I freeze and use it for this recipe, enchiladas, tacos and whatever i can.

    1. Love this recipe! I can share from experience that it worked very well for me to freeze this meatloaf mix (I made two small loaves from the recipe since I’m cooking for just two) and bake it after an overnight thaw in the refrigerator.

  42. Made this as stated first time. Love it. Second time making this I made into burger patties, adding a little more corn and beans. Had no eggs so used a dollop of nonfat greek yogurt. Make 4 into 4 6.5 ounce patties with one pound of 93% ground turkey. We don’t have the size packages called for in the recipe here in California, so adjusted recipe accordingly. A real keeper, especially when using Gina’s enchilada sauce recipe that is so much better than the canned stuff!

    1. you can scroll back through above the recipe. You can use breadcrumbs instead, that’s what I did as we have regular oats, too. It’s a great recipe. I’m going to make it as burgers today and serve bunless with her latin yellow rice and a slaw.

    2. Quick oats are just chopped old fashioned oats? I only buy regular old fashioned oats. You can turn them into “quick oats” with a quick spin in the food processor or blender. Works great. Hope this helps!

  52. I am leaving it a 5 because the flavor was really there, and I enjoyed it. My husband, on the other hand, thought it was okay. He is a meatloaf/mashed potato/gravy snob. Although he liked it, it wasn’t meatloaf to him. I plan on using the leftovers for empenadas or actual enchiladas and he was totally okay with that🤷‍♀️.

  54. This dish is delicious! It tastes like a perfect combination of an enchilada and a meatloaf combined. Quite flavorful! The directions need to be fixed on where to add in the cilantro, though.

Someday, I may read the recipe before I make it and I will have all the ingredients, but even without the black beans, we loved this turkey meatloaf.  For me, a turkey meatloaf needs lots of seasonings.  This has more than enough.  The only thing I would change is the amount of salt and yes, I used Kosher salt.  It is too much, even for a salt lover as me.  I made a mistake and poured the enchilada sauce and the jalapeños on while baking it.  It turned out fine, but will make without until the end next time.  I have to say that we only got 4 servings out of it.

    Omgsh! My bf and I were so shocked at how tasty this was! A I’ve never had meatloaf in my life, and this was the first one I ever tried/made. I’m in love! This will definitely be in my weeknight dinner reptorire from now on. I love skinnytaste recipes in general but especially ones like this that are both healthy and filling.     You never disappoint. This was super tasty and easy to make. I had to use Salsa Verde, but not enough spice. I am thinking of using your enchilada sauce from your chicken enchilada recipe. I love that sauce.

  62. Just curious if anyone thinks you could make two and freeze one? I bought a three pound pack of turkey and thought it would be easy to double everything but not sure how it would be frozen?

  63. OMG this was delicious. It really tasted like an enchilada but much easier to make. I took the rest of the corn, black beans and green chilies , heated it up and ate on side with brown rice.  Husband said put this on rotation when we both went for seconds!  Thanks Gina!

  64. Made this last night and it was delicious! I didn’t realize I didn’t have a can of green chilies so I substituted jarred salsa. I served it with cilantro lime rice (yummy too).   Leftovers heated nicely in the microwave.  Oh yeah, I used regular oats and you didn’t notice them at all in the finished meatloaf. 

  65. This was a great way to spice up my weeknight dinners!  Both my husband and I enjoyed it and would make it again. We had zucchini with it; I used the Trader Joe’s ‘Everything but the Elote’ seasoning for the zucchini.

    I used what I had in the house to make this. I had some leftover 99% ground turkey so I mixed that in with 93% ground turkey (bonus – less WW points too!). I didn’t have scallions so I used onions. I also didn’t have a can of green chiles so I drained some green hatch chile salsa and used that. A few subs, but I really wanted to try this.  It was all good!  The meatloaf was a fun twist on a traditional meatloaf and I imagine it only gets better with the actual SKTaste ingredients listed. 😆  Also, I made the SKTaste enchilada sauce – delicious and easy!

  67. I made this tonight. It does require some time to put everything together but it is so worth it. Turkey can be somewhat bland, but this recipe is not at all. Healthy and delicious!!

  68. Anybody reduce the turkey to one pound or round it up to 2lbs since they come in 1lb packages? Should I just increase the bread crumbs? Thanks!

    2. I scaled the recipe down to use a 1 lb package of turkey with no problem.  Just multiply the amount of each ingredient by .67 and don’t worry about being too precise.  I used an entire egg.

    This was really good!  I cooked mine on a Traeger grill set at 350 and followed the instructions for time from the recipe.  I used the Traeger because I had it going for something else and decided to take advantage of it being ready to go. Thanks Gina for another great recipe.

    Absolutely loved this recipe.  My only gripe is opening a can of corn and a can of black beans and only using a small amount. But that’s a minor thing.  I can use them soon.  My husband loved it!

  75. I’m making this for a meal train drop off. I would like to make individual portions so they could freeze if they have too much food at once. Should I just bake for a shorter time?

  77. This is VERY VERY good!! It’s got a ton of flavor and is not dry at all. I served it with a sautéed combination of fresh corn cut from the cob and zucchini with garlic salt.  Big hit and very easy weeknight dinner! Thanks Gina! 

  78. Has anyone tried it with green enchilada sauce? Tomatoes bother my stomach so I thought about tying with green sauce?? Gina, any thoughts?   Thx so much! 

  79. Made this last night with your cilantro lime rice and loved it. With the remains of the bought ingredients I plan to make the quinoa enchilada bake later this week.

  81. I wasn’t quite sure how my husband and I were going to like this recipe. We loved it and I will make it again. I omitted the black beans and added a little shredded cheese to the mix.

    Most of what I cook are your recipes Gina. Your basic turkey meatloaf is one of my favorites so I’m looking forward to trying this one. I have always substituted oats for the breadcrumbs so I’m happy to see it in this recipe. Thanks again for all your fabulous recipes!

      1. Would it work with regular oats vs quick oats? If so, would you need to cook longer or adjust the other ingredients??

  84. Just wondering, is there a reason you don’t bake this in a loaf pan? Seems like it would be easier/less messy. Sounds delicious in any case. Thanks

    1. I almost never bake mine in a loaf pan especially if it’s beef because I like the fat to drain out. I keep it moist with add ins. My turkey or chicken I’d do in a loaf pan. Besides, I like making fun shapes! I make JET footballs, MET baseballs, chickens, school bus, shamrocks, hearts, pumpkins, Christmas trees and I decorate with tomatoes, peppers, olives, whatever. 😊
