Pancake cereal is the latest food trend on TikTok and Instagram. For anyone who hasn’t seen it, pancake cereal is tiny pancakes eaten like cereal in a bowl with a spoon. You can use any pancake batter you like, try them with my Whole Wheat Pancake Recipe or make them full size like these Heart-Shaped Chocolate Chip Banana Pancakes.

Why choose between cereal and pancakes when you can have both? If you’re on TikTok you’ve probably seen this trend with the #pancakecereal hashtag receiving millions of views. I’ve been having fun making videos and wasting time on Tiktok during quarantine, if you’re on it make sure you follow me!

Pancake cereal is very versatile. Pretty much however you like your regular-sized pancakes will work with these bite-sized pancakes. You could make tiny whole wheat pancakes or pancakes with mini chocolate chips or sprinkles. Top them with not only the classic syrup and butter combo but also fruit, whipped cream, honey, powdered sugar, chocolate chips, or sprinkles. The options are endless, and anything goes! Some people are really taking the cereal part to heart and even pouring milk over the pancakes.

When I decided to test out this new trend, I wanted to create a lighter version with my pancakes. Adding bananas to the pancake mix is an easy way to add nutrients and fiber, to make them even healthier and topped them with a lot of fruit. Would you hop on the trend? How to Make Pancake Cereal

  1. Making pancake cereal starts like any other pancake recipe – the first step is to make the batter. I put all the ingredients in a blender and pulse until the batter is smooth and thoroughly combined.
  2. Then, you need to put the batter into an empty condiment bottle so you can squeeze out the little pancakes. If you don’t have a bottle, you can just use a zip-locked bag – pour the batter in and then snip the corner of the bag. It will work perfectly for squeezing out the mini pancakes.
  3. Once little bubbles form on the tops of the pancakes, flip them over with a spatula. Flip a couple times until they are a nice light brown color.
  4. When the pancakes are done, put them in a bowl and top with banana and berries and any of your other favorite toppings.

Ingredients

  • 1 cup 1% milk, buttermilk or almond milk
  • 1 cup unbleached all purpose or whole wheat flour
  • 1 ripe banana
  • 2 large eggs
  • 1 teaspoon oil
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • cooking spray
  • 1 cup fresh mixed berries, for topping
  • 1 large banana, sliced
  • optional whipped cream and colored sprinkles, for topping

Instructions

  • Add milk, flour, 1 of the bananas, eggs, oil, vanilla, baking powder and salt to a blender and pulse until smooth and throughly mixed.
  • Pour pancake batter into a condiment squeeze bottle. (Or use a ziplock bag and cut a tiny whole in the corner as well.)
  • Heat pan to medium high heat and spray with oil.
  • Squeeze little small pancake dots the size of a nickel and cook until top is dry and forms bubbles.
  • Toss the pancakes with a spatula and cook for a few more minutes.
  • Occasionally toss the pancakes around to help cook more evenly until slightly browned.
  • Transfer to 4 bowls and add sliced bananas, fresh berries and your favorite toppings (I like to drizzle honey).

  1. Just made this for breakfast. So good! My son (6), we call him the food critic, gave it a 10 out of 10.

  2. A bit of a learning curve. I would highly suggest actually using a squeeze bottle rather than a ziploc bag. I tried the bag and it was a mess and impossible to control. I switched to my little squeeze bottle and then it became fun and successful. Like others have said, just toss them after one side is golden brown, don’t bother doing a perfect flip for every pancake. You’d spend too much time and the pancakes would start burning.

  3. Can you make the night before and leave in the refrigerator until the next morning? 

  4. Gina, I love your recipes, and usually I never comment on them. But, this one is FABULOUS! One of your best. So easy to make following the directions, and tastes amazing too. I half the recipe and it works great.

  5. If I leave the banana out of the recipe, does it need to be replaced with something?

  6. Can I substitute the buttermilk and almond milk for oatmilk? If so, what are the new WW points.

  7. What can I use to substitute eggs? We have an egg allergy in the house. 

  8. These are so fun! My family loved the change up from regular pancakes. Fortunately, I had a squeeze bottle so it was incredibly quick and easy. I tried at first to flip every individual tiny pancake… don’t even bother lol just toss them around with the spatula. They will all come out great, I promise!

  9. Soo I’ve made this recipe 3 times. It is so easy, delicious 😋 not to mention healthy so NO guilt. 
    So I found that it was easier just to use a spoon to create the little pancakes. Perfect portion & creates less of a mess. Now the last last time I made them, I just made regular sized pancakes.  You def save time.

    • These are really cute but not worth the effort to flip a bunch of tiny pancakes. Maybe if you have a little one at home who would find mini pancakes cool – make them. Otherwise, I’ll probably stick with full size versions in the future.

  12. Are these crunchy like cereal or soft like pancakes? Do you add milk, like you would with cereal?

  16. These look great but that’s a lot of little pancakes to flip. Is there a tip or trick to make this fast?

    • I used 2 small offset spatulas and the flipping went fairly quickly!

      • The finished product is worth the time and effort! I ran into several issues with these, little chunks of batter that clogged up my squeeze bottle, I had to do like 6 batches for 2 people, flipping them was tedious, and my little pancakes were kind of flat, not much depth, or fluffly interiors. However, when u put it altogether, it was actually really good and worth it. I topped my husband’s with maple syrup, banana, blueberries, and the dot sprinkles. Mine was the same, just no maple syrup. It was a nice treat/surprise/something different that was a “special” breakfast. I don’t make pancakes/waffles frequently, so I would definitely make these instead. Might try Kodiak cakes next time. For the clogged bottle, I used a toothpick and for the tediousness of flipping the pancakes, I started just picking them up with the spatula and carefully used my fingers to flip them. This is the main reason for 4, not 5 stars. Overall, worth it! I’d recommend trying a bowl at least once.

    • I personally just kind of did a sautee motion with my spatula after one side was golden brown. It was way easier than trying to flip them all. They are so tiny that the dough is cooked enough just by doing one side.

  17. The recipe specifies to divide the 2 medium bananas add 1 to the batter but doesn’t say what do with the other?
