How to Make Butternut Squash Soup

Instructions
- Preheat oven to 400F.
- In a large heavy oven safe pot or dutch oven, combine squash, apple, onion, chopped sage, 1/4 teaspoon salt, cinnamon and paprika, toss with 1 tablespoon olive oil. Roast until the squash is tender, about 30 minutes. Transfer to the stove.
- Add the broth, coconut milk, ginger, 1/4 teaspoon salt and nutmeg and bring to a boil. Use an immersion blender and blend until smooth (or transfer to the blender, in batches).
- To serve, drizzle more coconut milk on top, if desired and sprinkle with a pinch of nutmeg.





Excellent soup, great flavor and easy to make. The ginger adds subtle heat. It’s another keeper from Gina. I used ground thyme instead of sage because that’s what I had on hand. I will definitely make it again.

Love the apple and butternut roast flavor. Perfect recipe for a cold night. I grew a lot of squash last summer. I had to roast longer than 30 minutes – I did for another 30 minutes.

This is very good. I changed the yield to 2 servings so I didn’t want to open a whole can of coconut milk for .17 cup so I used unsweetened vanilla almond milk instead. I also used pumpkin pie spice for the cinnamon and nutmeg. I also had to use chicken bouillon because that’s what I had.

I was not expecting to love this soup this much. Like maybe, but I love it! It is like a warm hug. I used dried herbs because that is what I had. And I’ve only ever used my dutch oven to bake bread, so now it has another use! I will definitely be making this one again.

Delicious! I had to use chicken stock as I had used up my vegetable stock making the cauliflower and leek soup the day before. The aromatics in this soup are amazing and the whole house smells great. Nice combination of flavors.
