I took my easy, go-to turkey taco recipe and turned it into this easy meal prep lunch. The whole thing comes together in under 30 minutes, start to finish. If you’ve been following my free meal plans, you probably know I’ve been incorporating more meal prep recipes in them, recipes you can make once that can be served for the week.

Last week I took a poll on my Instagram stories to see what type of healthy meal prep lunches you would like to see for 2019, and it varied greatly from cold and hot lunches, and everything from balanced meals that include grains to keto, low-carb, whole30 and more. So, I will incorporate all of the above in the coming month. Feel free to leave your suggestions in the comments!

How To Make Turkey Taco Salad:

The easiest way to pack this lunch, is to keep the greens separate so you can heat up the turkey without heating up the rest. Then refrigerate everything so you can grab one in the morning before heading out the door! If you want to keep this whole30, omit the cheese and swap it for avocado. Of course, this can also be served for dinner if you wish!

Variations:

  • Add black or pinto beans for more protein.
  • Add crushed tortilla chips on top for texture.
  • Swap the cheese for avocado to keep it dairy free.

Meal Prep Taco Salad

Ingredients

Dressing:

  • 1/2 cup jarred mild salsa
  • 4 teaspoons extra virgin olive oil
  • juice of 1/2 lime

Meat:

  • 1 lb 93% ground turkey
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 small onion, minced
  • 2 tablespoons bell pepper, minced
  • 1/2 cup water
  • 4 ounces canned tomato sauce, 1/2 can

For the Salad:

  • 6 cups chopped romaine lettuce
  • 1 cup pico de gallo
  • 1/2 cup shredded cheddar
  • 4 lime wedges, for serving
  • optional greek yogurt or sour cream

Instructions

  • Brown the turkey in a large skillet breaking it into smaller pieces as it cooks.
  • When no longer pink add dry seasoning and mix well.
  • Add the onion, pepper, water and tomato sauce and cover.
  • Simmer on low for about 20 minutes.
  • Divide the meat equally between the 4 meal prep containers.
  • Meanwhile, while the meat is cooking, make the dressing: combine the salsa, olive oil and lime juice; transfer to 4 small containers.
  • Divide the lettuce in 4 ziplock bags.
  • Divide pico de gallo, sour cream or yogurt, if using and cheese in small containers. Cover and refrigerate.
  • To serve, remove the lettuce and containers, heat the meat then make a salad by placing the lettuce in a bowl or plate.
  • Top with the meat, pico de gallo, cheese and finish with dressing.

  1. Quite a filling salad, and worked perfectly for meal prep!

  2. This recipe is awesome. The turkey taco meat was very tasty, much better then the pre packaged taco seasoning mix. The only thing missing was the crunchy taco shell that usually goes with it. Problem solved, I had to get a package of small corn taco shells for the codfish tacos. I only used 8 for dinner so there were a lot left that I didn’t know what I was going to use them for. I found a recipe for home made baked tortilla chips. They were perfect. Two tortillas (12 chips) are 100 calories, just enough to add that crunch that was missing. It was well worth using some extra calories for.

  3. I tried this today for my lunch at work. This was amazing. Loved it. Easy to make and tastes great! I was worried this would not taste that great without chips but it was perfect just the way the recipe was.

  4. Love this one, Gina! I really think the key with turkey is aggressive seasoning to overcome its tendency to be bland, and you nail it here. My husband loves this in taco form, and I eat it as a salad. I take basically all of your suggestions and add a can of black beans, some crumbled tortilla chips, and a bit of sour cream. A few more calories but worthwhile for how much I enjoy it.

  9. Awesome recipe! Super Yummy!! Everyone I’ve made it for has loved it and always got seconds/thirds.

  10. Delicious! I doubled the recipe and added two cans of black beans along with some frozen corn, then served it over shredded lettuce. Will definitely make this again–and again!

  11. When I put this recipe in the WW app, it came up with the Smartpoints as 2  – I didn’t use the olive oil but I added black beans and corn with the pick de gallo. It would have been 0 if I left out the cheese. I’m not sure how this recipe came up with 7 Smartpoints. It’s one of my favorites!

  20. This salad is delicious and the dressing is so clever! It gives me a great “compromise meal” to bridge the dieters and non-dieters. Sometimes I run the dressing and pico through the food processor to length it’s freshness longevity and simplify the transport/assembly. My favorite part is to eat the last couple bites with a couple blue corn tortilla chips, if I’m in need of a light carb fix.
