Chicken Fajitas



Fajitas are great to make in the summer, when you want to use your grill, but in the colder months, you can use an indoor grill like the George Forman grill, which is perfect because it requires little oil. You can also make this on a cast iron skillet. I have found many low point tortillas available in various stores. Usually if they are low carb, low fat, they are 1 pt. La Tortilla Factory - Low-Carb/Low Fat Large Size are huge and also great for wraps and quesadillas.

Servings: 4 servings Old Points: 4 pts Points+: 5 pts
Calories: 192.1 Fat: 5.5 g Carb: 16.7 g Fiber: 8.3 g Protein: 25.5 g 
  • 16 oz boneless skinless chicken breasts
  • 1 bell pepper, cut into strips
  • 1 poblano chile, cut into strips
  • 1 onion, cut into strips
  • 3 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ancho chile powder or chipotle chili powder, to taste
  • salt and pepper to taste
  • 2 tsp olive oil
  • 4 low fat, low carb tortillas (La Tortilla Factory)
Marinate the chicken with lime juice, and season with chile powder, salt, pepper, garlic powder and cumin.

Season vegetables with salt and pepper and toss with olive oil.

Heat George Forman grill. Grill chicken until well browned, but not hard to the touch. Transfer to a plate when done. Cut into strips. Grill vegetables until tender (about 15 minutes). Once cooked, combine with chicken. Serve immediately with tortilla and toppings.

Optional 0 point toppings: Salsa, chopped serrano chiles, chopped fresh cilantro, sliced green onions.

  7. I wish it would print w/o all of the pictures, as that takes up the expensive ink. Thanks for a great site otherwise; I just don't use a lot of them because of the printing costs. Social security too low...bah humbug..lol....great job on what you do.

  10. I love this site.... I really wish you had a cookbook out... I would buy it in a heart beat.. My BF makes fun of me cause I love looking at recipes & printing up tons of them... Now I just need to make some more of them.. I can't wait to try this one & the Chicken Enchiladas... Made the Spinach rolls Awsome.. Made the Chocolate Zucchini Bread... Yummy So So Moist

  13. I'm presuming the serving size is one fajita, and not 4 points for all 4? lol that would be great!

    I usually steam my peppers and onions together, rather than cooking them in a pan. I can't stand anything oily.

    I'm looking forward to trying the chicken marinade though. I'm from England and I don't seem to be able to find a seasoning over here (like cajun) that I like.

  16. I just have a few questions. First, can I omit the poblano chile. Second, the carbs are very high, are these good carbs or bad carbs. Lastly, do you have recipes that I can use for two people?

  18. I was wondering if there is something I could use instead of onions and bell peppers. I suffer from migrains and they are both triggers for me. In most recipes I can just omit them but in this case that leaves me with just chicken. Which is fine but I have always wanted to make this with something else for more flavor and texture.
