Red, White and Blueberry Trifle



A heavenly mixed berry trifle made with summer fresh blueberries, strawberries, white chocolate pudding, angle foods cake and cream. A beautiful guiltless dessert that would make your July 4th table proud.

I gave some of this to my dessert-loving brother and he raved about it and told me to make sure I let you all know how fabulous this is. He's right, this exceeded my expectations and I probably ate more than I should have, oops!

Using store bought angel foods cake makes this quick and easy to prepare and no need to heat up the kitchen, but you can use a box mix or make it from scratch if you prefer, whatever you decide this will still be fabulous!



Red, White and Blueberry Trifle
Gina's Weight Watcher Recipes
Servings: 14 • Serving Size: 1 cup  Old Points: 3 pts Points+: 4 pts
Calories: 169.1 • Fat: 0.4 g Protein: 2.5 g Carb: 38 g Fiber: 3.0 g Sugar: 16.5 g 

Sodium: 102.8 mg  


Ingredients:
  • 10 oz angel food cake, cut into 1-inch cubes*
  • 2 pints strawberries, sliced
  • 2 pints blueberries

For the cream filling:
  • 6 tbsp fat-free sweetened condensed milk (I used Borden Eagle)
  • 1 1/2 cups cold water
  • 1 package sugar-free white chocolate instant pudding mix
  • 12 oz fat-free frozen whipped topping, thawed

Directions:

Whisk the condensed milk and water in a bowl. Whisk in the pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set; fold in the whipped topping.

Arrange half of the cake in the bottom of a 14-cup trifle dish. Sprinkle evenly with a layer of blueberries. Spread half of the cream mixture over the blueberries and gently spread (I piped it using a plastic bag and cut the corner off). Top with a layer of strawberries. Layer the remaining cake cubes on top of the strawberries, then add more blueberries and top with the remaining cream mixture. Finish with the remaining strawberries and blueberries, arranging them in a pretty pattern. Cover and refrigerate at least one 1 hour.

*I only used 10 oz of a 16 oz cake.

  16. Wow this looks wonderful! Sweet condensed milk also comes in fat free, it is not evaporated milk so dont make that mistake. Condensed milk is very thick. It is found on the baking isle.

  17. Christina, a trifle dish is a clear dish that sits on a pedistal. If you have a local walmart they have them for $7-10. You can use any clear dish that has depth. The beauty of this dessert is the layers so you need something you can see through. If you do not care to see the layers you could use any large container.

  18. The fat-free sugar-free white chocolate pudding is VERY good!! The milk Gina is talking about is fat-free sweetened condensed milk. When I make a trifle, I use about 1/4 cup less milk than the recipe calls for. I use skim milk for half the milk and fat-free half and half for the rest of the milk. It is thick and creamy!

    Christina, as someone mentioned a trifle dish is a must so you can see the layers. You should be able to find them wherever they sell kitchen gadgets.

    They sell fat free sweetened condensed milk in a can, Borden sells on, so does Carnation.

    1. I made this for a dinner party, and not only was it the most beautiful thing I've ever made, it was absolutely delicious!!!! The whole trifle was eaten with only 1/2 cup left for me to take home. I will make this again and again, something so beautiful and light in calories/fat is amazing!!!

  20. I make various versions of this...sometimes I only use fruit, mo cake or pudding and serve with whipped cream on the side BUT I buy cheap trifle bowls at Ikea or Christmas Tree Shop and bring them when I go to friends house for a BBQ and let them keep the bowl as a gift.

  29. You don't cut it, you spoon it! Get a large spoon and serve it in bowls.

    And yes you should keep this refrigerated before serving. Leftovers can be refrigerated too. I ate this for 3 days and it was just as tasty on day 3!

    Raquel no but many bites I took were just fruit and it was yummy! I don't know off hand the n.i. for just the cake.

    Sharon I don't think white chocolate pudding contains any chocolate.

    Susan D - I personally used a measuring cup to serve since I wanted to see how many cups it made, but any large spoon should work.

  45. I've made a dessert just like this twice in the last few months. I add raspberries when I make it to make it extra berry-y. I was making it from memory and forgot about doing pudding between the layers -- I was just using FF Cool Whip. It's a very satisfying dessert without a ridiculous amount of calories, esp. when you use FF/sugar free ingredients. Yum!

  49. For the people asking about the condensed milk.... I just have to say that I am too cheap to pay for that (over $2 a can at my local store) and you don't really need the extra sugar as there is plenty of sweetness already in the cake, the pudding and the whipped cream. I made this using 1 1/2c fat free milk instead of water, leaving out the condensed milk completely, and it turned out great!

I also couldn't find sugar free white chocolate pudding. I bought cheesecake flavor instead, hope its just as good!

  66. Made this spectacular dessert yesterday for our cookout! Easy to assemble...looked just as amazing (well, almost) as Gina's did! Was THE hit of the party! Not one single blueberry was left in the bowl. Easy to find the FF sweetened condensed milk at my local grocery store. It was about double the price though. With about half the can left over, I will make another batch of this delicious dessert this week. Maybe my husband will get some this time!

    You may want to assemble it without adding the top layer of fruit until you are closer to the party. It won't turn to mush, but you want the fruit on top to look fresh. Enjoy!

  104. For those challenged by slicing the strawberries, use a handy dandy egg slicer! For this recipe, remove the strawberry stem first. But in the past I've kept the stem on, don't cut all the way through, and then fan the strawberry slices for a pretty decoration.

    I know it's gross and against all the rules but I was really feeling the need for berries lately even though it's December and I totally made this recipe with frozen berries. It was not as good, I'm sure, but it fed my berry needs and made my family very happy!
