This fast and easy Air Fryer Cajun Shrimp recipe is a meal-in-one, made with shrimp, sausage, and lots of colorful vegetables such as zucchini, yellow squash and bell peppers.

Air Fryer Cajun Shrimp and Vegetables
This is the best Cajun shrimp recipe! It’s colorful and packed with flavor. The best part is it takes less than thirty minutes to make! I like to add lots of color to my food, after all we eat with our eyes! So I went with zucchini, yellow squash, and red bell peppers here, but any stir fry vegetables can be used here. Try this with eggplant, broccoli florets, etc.
When purchasing an air fryer, looks for an air fryer that is easy to clean with a large basket like the Skinnytaste Vremi Air Fryer that you can order on Amazon. If you don’t have an air fryer, you can cook this in a large skillet. To do so, I would cook it in two batches on high heat for 5 to 8 minutes per batch.

Air Fryer Cajun Shrimp Dinner
Ingredients
- 1 tablespoon Cajun or Creole seasoning
- 24 (1 pound) cleaned and peeled extra jumbo shrimp
- 6 ounces fully cooked Turkey/Chicken Andouille sausage or kielbasa*, sliced
- 1 medium zucchini, 8 ounces, sliced into 1/4-inch thick half moons
- 1 medium yellow squash, 8 ounces, sliced into 1/4-inch thick half moons
- 1 large red bell pepper, seeded and cut into thin 1-inch pieces
- 1/4 teaspoon kosher salt
- 2 tablespoons olive oil
Instructions
- In a large bowl, combine the Cajun seasoning and shrimp, toss to coat.
- Add the sausage, zucchini, squash, bell peppers, and salt and toss with the oil.
- Preheat the air fryer 400F.
- In 2 batches (for smaller baskets), transfer the shrimp and vegetables to the air fryer basket and cook 8 minutes, shaking the basket 2 to 3 times.
- Set aside, repeat with remaining shrimp and veggies.
- Once both batches are cooked, return the first batch to the air fryer and cook 1 minute.

Just made this…. We served it on a brown rice and quinoa blend to break up all the spice, and it was very good! I can see how some people felt it was dry though. So we plan to make it again and serve it on fettuccine Alfredo. I’m excited to try that! Thanks for doing what you do.  🙂
I’ve made your Creole Shrimp previously for Mardi Gras, but I got myself an Air Fryer for Christmas so I decided to try this recipe this year. Thank you for including weights in the recipe because putting ounces made it easier for me to make a single portion. I reduced the cooking time for a single serving. I think you should add Mardi Gras to the holiday section of your site..
This was very yummy and so easy to make. My mom and I made it 2 nights in a row. I shared this recipe with friends and family and now they are making it. I added a chopped red onion as well.Â

I’m wondering if the shrimp are raw or cooked when you start the recipe? In the video the shrimp look grey which makes me think they should be raw but it doesn’t specific in the recipe 🤔. Clarification on this is appreciated!
Hey Sarah, you can buy frozen, but they should be thawed (raw) before putting them in the air fryer. It’s a delicious recipe; I’ve made it several times!
Sorry that’s not quite the answer. Thawed does not mean raw. You can buy shrimp in a number of ways. Raw means it isn’t cooked; you can buy raw shrimp  either frozen or thawed. Or you can buy cooked shrimp, again either thawed or frozen.
You should buy raw, frozen shrimp on this recipe and defrost just before you want to eat it. Since the shrimp needs to be cooked in the air fryer, you don’t want it to be pre-cooked before going in. That will cause it to be tough and chewy since it will be over-cooked.

This was delicious. No need to add the salt if you use Tony’s. We used poblano instead of the red bell pepper and also added a jalapeño to up the spiciness. We also sliced some sweet onion and put this in the air fryer with the rest of it. This was such an easy and quick weeknight dinner. We will be making this one again for sure!
I just made this for dinner tonight and it was delicious; my husband loved it! I made my own creole seasoning from a recipe online and didn’t use quite enough in the first batch, a little concerned that it might be too spiced. Well it wasn’t so I added a little more to the second batch. I think I read in the reviews that someone added red onion so I did that as well. Will DEFINITELY make it again and grill some corn to go with it.Â

So easy, and so delicious!  I didn’t add the Kosher salt…the Penzey’s Cajun seasoning had plenty of salt.  We’ll definitely make this again.
I added onions, and put in 1.5 times the spice. Â Flavor was good, but I thought it was a little dry.
