Healthy Chicken Fajita Recipe

My husband Tommy is a creature of habit. Anytime we eat at a Mexican restaurant, he always orders chicken fajitas. When we went to Mexico years ago, he may have ordered them almost every night!  So naturally, these healthy chicken fajitas have become a regular in our home. We make them for dinner at least once a month and the whole family enjoys them. Why These Chicken Fajitas Will Become a Meal Plan Staple

True story, when I started dating Tommy, he invited me over for dinner and made these chicken fajitas! A man that can cook? I fell in love instantly, so I guess you can call this Marry My Chicken Fajitas. They are quick, flavorful, and perfect for busy weeknights. Here’s why we make them again and again!

  • Family-friendly—and great for picky eaters. Fajitas are easy to deconstruct if your kids like to eat their foods separately! When Madison was younger, she only liked her bell peppers raw, so I would chop some up and set them aside for her with some chicken and a tortilla.
  • Protein-packed. Chicken breast is a great source of lean protein, making these fajitas a nutritious and filling meal.
  • Versatile. Switch up the toppings, skip the tortillas and make a chicken fajita salad instead, cook the fajitas in a skillet if you don’t want to fire up the grill—there are so many ways to do this recipe!

Ingredients You’ll Need

Here’s a quick list of ingredients you’ll need to make these easy chicken fajita recipe. Scroll down to the recipe card below for exact measurements.

  • Chicken breasts – I use boneless skinless chicken breasts, which is a great source of lean protein and works so well here. Boneless skinless thighs can also be used if you prefer dark meat.
  • Vegetables – I use a combination of red bell pepper, green or poblano pepper, and onion. If I don’t have poblano peppers I just use more bell peppers.
  • Lime juice – For a bright, tangy flavor.
  • Seasonings – Ground cumin, garlic powder, ancho or Mexican chili powder, salt and pepper to season the chicken.
  • Olive oil – You can substitute with avocado oil or another oil you use for cooking.
  • Tortillas – I use whole wheat or low carb tortillas. You can use corn tortillas for a gluten-free option.

For garnish:

  • Shredded Mexican cheese – I buy reduced-fat cheese. Feel free to swap in another variety like pepper jack, cotija, or cheddar.
  • Sour cream – For a healthier substitute for sour cream, try plain Greek yogurt!
  • Guacamole – I like to use my Best Guacamole Recipe.

Ingredients

  • 16 oz boneless skinless chicken breasts
  • 1 red bell pepper, cut into strips
  • 1 green or poblano pepper, cut into strips
  • 1 medium onion, cut into strips
  • 3 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • pinch ancho or Mexican chili powder,   to taste
  • salt and pepper to taste
  • 2 tsp olive oil
  • 8 reduced-carb whole wheat flour tortillas, or corn tortillas for GF

For garnish:

  • 1/2 cup reduced fat shredded Mexican cheese
  • reduced fat sour cream, optional
  • guacamole, optional

Instructions

  • Marinate the chicken with lime juice, and season with chile powder, salt, pepper, garlic powder and cumin.
  • Season vegetables with salt and pepper and toss with olive oil.
  • To grill the onions and peppers outside on the grill, use a cast iron skillet and grill covered over medium heat until tender, about 15 minutes. Or, to cook them indoors, you can use a large skillet on the stove over medium heat for 16 to 18 minutes, covered until the onions and peppers are soft.
  • Heat an outdoor grill or indoor grill pan over medium heat; grill chicken until cooked through, about 8 minutes on each side.
  • Transfer to a cutting board when done and cut into strips. Once cooked, combine with the peppers and onions.
  • Serve immediately with warmed tortillas, cheese and toppings.

How to Make Chicken Fajitas

This chicken fajita recipe is simple, quick, and delicious! Here’s the step-by-step photos and directions. See the recipe card for printable instructions.

  • Marinate the chicken. Combine the chicken breasts with the lime juice, chili powder, salt, pepper, garlic powder and cumin.
  • Prep the veggies. Toss the vegetables with the oil, salt and pepper.
  • Cook the veggies. You can do this in a cast iron skillet on an outdoor grill or a skillet on the stovetop.
  • Grill the chicken. This can also be done outdoors on the grill or in a grill pan. Cook both sides until heated through.
  • Serve. Cut the chicken into strips and combine with the peppers and onions. Serve with tortillas and your favorite toppings.

Tips and Variations

Here are some helpful tips and variations to customize your chicken fajitas.

  • Don’t overcook the chicken. Overcooked chicken can become dry and tough, so it’s best to use a meat thermometer to ensure it reaches (and doesn’t exceed) an internal temperature of 165°F.  
  • Preheat your grill or skillet. Making sure your cooking surface is blazing hot before adding the chicken or vegetables helps achieve a nice sear and better flavor.  
  • Cut the vegetables evenly. For even cooking, make sure your peppers and onions are sliced into similar-sized strips.  
  • Don’t overcrowd the pan. If you’re cooking inside, give the vegetables and chicken space to cook evenly so they caramelize nicely instead of steaming.
  • Make it low carb. To save carbs, use a big lettuce leaf instead of a tortilla to wrap around the fajita fillings. You can also serve the chicken and veggies over lettuce as a salad. Add fresh avocado and use salsa as a dressing.

Serving Suggestions

Mexican chicken fajitas are usually served with rice and beans, but corn is another great side. If you’re looking to keep the carb count down, cauliflower rice is an excellent option. And don’t forget the margaritas!

Proper Storage

  • Refrigerator: Store any leftovers in an airtight container in the refrigerator for 3-4 days.
  • Freezer: You can also freeze cooked chicken fajitas in an airtight container or zip-top bag for up to 2 months.
  • To reheat: Thaw in the refrigerator overnight if frozen, then heat up your leftovers in the microwave or on the stovetop over medium heat until warmed through.

  1. This tasted like restaurant quality! So light and fresh! I had the chicken marinating in the fridge all day. My chicken breasts were thick so I cut them in half, but the cooking instructions were still perfect. I did the chicken on a cast iron grill pan while the onions and peppers cooked on a normal grill pan. I served it all sizzling in the grill pan on the table, family style. It looked gorgeous and tasted delicious. I cannot wait to make it again this summer when we get our grill going!

  2. This was an easy and delicious meal! We grilled the chicken but sautéed the veggies and everything came out perfect. Added some fresh guac to the tortillas. The whole family loved it.

  19. I made this for dinner tonight! It was excellent. I made the mistake of cutting the chicken before cooking and marinated it cut up. Cooked it in my black cast iron pan. I will definitely make this again. Yum!

  22. I made this tonight and it was delicious . The only thing I did different was add a poblano pepper to the green/red bell peppers. And I put guacamole on the wraps. It still work in my calories, was filling, and delicious. Easy to make too. I had everything on hand that I needed to make this.

  24. We veganized this, using Morningstar Farms strips instead of chicken, and barbecued it, keeping the lid on the grill to make it extra smokey. We also used Trader Joe’s corn/flour tortillas to minimize the points. The fajitas were a huge hit, and even my kids loved them. Definitely will be making them again–thanks!

    I have a question. This is listed as 4 Freestyle points, but when I put it in the recipe calculator, it comes out at 11 Freestyle points. I’m wondering where I’ve gone wrong. My wife and I super love this recipe, it’s a staple for us in the summer!

  30. When I calculate 8 low carb tortillas on MyFitness Pal at 80/90 calories each for the serving size for four, it’s more like 359 calories. Two tortillas alone would be about 180 calories so I don’t know how all the other ingredients only amount to another 119 calories. I’m confused.

I cooked these up tonight and they are DELICIOUS! I ate 3 and I’m stuffed!  My hubby is still going strong! All I changed was I did onion, red pepper, green pepper, yellow pepper and orange pepper- I went pepper crazy. But they are so beautiful and colorful I just love cooking with them!   39. I made this this week and it was delicious. I didn't use the tortilla shells I didn't have any in stock in my cupboard, so I had it over rice excellent. I will try it with tortilla shells next. But over rice was a good change too. Thank for the easy to do recipe.

    I made these last night and they turned out wonderfully. Your marinade rocks my socks.

    We ended up putting some tinfoil down on our grill and grilling the veggies like that (I also tossed in some mushrooms because for some reason we had a million of them in our fridge.) So good.     Tried this last night, just wonderful. We added some salsa and light sour cream so the calories were still down. Besides the wonderful flavor, we actually were full with the serving size of two.   46. Gina – This chicken was great! Didn't have limes but worked great with lemons. For a lower calorie idea, I made everything and put it on top of butter lettuce, added salsa as a dressing and crushed Food Should Taste Good multigrain chips on top. DELISH!

    2. Me too..but the Kroger brand (From Smith's in my area) 0% Fat Greek Yogurt is awesome and creamy, not tangy like the other ones..which is nice as it is the generic brand and I like it better than the name brands.

  61. I have been trying to kick the habit of bottled marinades and this is perfect for that! Thanks for the simple marinade/rub. 🙂 We have fajitas all the time, year round. I even freeze a pepper/onion mix for when the peppers are out of season. If you are watching carbs, you can make a 'bare' fajita by serving the above over quinoa instead of using a tortilla. YUM!

  68. I made this tonight. I admit, I was skeptical on whether it would have enough flavor. I make fajitas a lot but usually just buy the seasoning packet and make it that way. I've never made it without. I used chicken tenderloins, because it's all I had and ended up marinating it for a couple hours before dinner time finally rolled around. It had great flavor. The chicken was tender and moist. And the veggies were so good! I've never thought to grill veggies on my Foreman grill like that. The flavors were so much better than making them in a pan. The marinade made the chicken moist and delicious. I cooked the chicken and the veggies in a very hot skillet with Pam (no olive oil). The results were awesome and so filling.   73. I was wondering if there is something I could use instead of onions and bell peppers. I suffer from migrains and they are both triggers for me. In most recipes I can just omit them but in this case that leaves me with just chicken. Which is fine but I have always wanted to make this with something else for more flavor and texture.

      Chicken fajits are made with onions and bell peppers. If you can't eat them, then you can't eat fajitas. Stop with the stupid requests.

    2. wow, so nice of you, not everyone thinks the same way. I would try maybe zucchini julienned, mushrooms, fajita can be interpreted as more the style of cooking the meat and serving it in tortilla's than what is actually in it. Be creative and put together a combo that sounds good to you.

  80. Where do you live? It's hard for me to know what is not available to you in your area unless you tell me. You can also find a lot of ingredients for sale online.

  81. please remember that some of us live in places that the stores don't have some of the ingredients. Maybe you could be a substitute along side.

      same ere i have the same problm as i Live in Pakistan.. so there few of the ingredients r not available but the dish sounds deliciouss.

      I just go online and order – Amazon is great for ingredients you can’t get regionally. I order ingredients frequently and many times shipping is free and they always  come quickly.  Many times they are much cheaper than stores also, like vanilla beans. I ordered some items on Sunday and they were here by tuesday. 

    1. Hi the recipe sounds really tasty and I would like to try it but as I'm doing S/W I wondered how it would translate, I wouldn't want to jeopardize my progress.
