What can be more kid-friendly than chicken nuggets, even the pickiest kids like them! Serve them with ketchup, BBQ sauce or whatever you like to dip your nuggets into. Adults can serve them over your favorite salad for a satisfying lunch. If you have an air fryer, you can also try Air Fryer Chicken Nuggets.

Kids love finger foods or anything you can eat with toothpicks so when my daughter was young I would make her a dish of bite-sized goodies she liked such as tomatoes, olives, pasta, etc. and served them with toothpicks and she always cleaned her plate! Give it a try, your kids will be so excited!

I make these nuggets for Madison for lunch, I often make some at night and put them in her lunch box the next day, she doesn’t mind eating them cold. I’ve even made a bunch and served them as appetizers, because who doesn’t love chicken nuggets!

These also happen to be egg-free, for those with egg allergies, I use oil instead of an egg and it works great and helps get the breadcrumbs golden. Once I’m in breading mode I usually make breaded zucchini sticks as well and bake them all at the same time along with some pasta and a salad for a complete meal. Double these for more or make half for less servings.

Tips for perfect baked chicken nuggets:

  • Start with organic chicken, when possible. Trim any excess fat.
  • Baking pans will give you different results, these work best in an aluminum pan for even browned and crisp edges. Nonstick doesn’t work as well.
  • Spray the pan with oil to prevent sticking.

Ingredients

  • 16 oz 2 large skinless boneless chicken breasts, cut into even bit sized pieces
  • 1/2 teaspoon kosher salt and black pepper, to taste
  • 2 tsp olive oil
  • 6 tbsp whole wheat Italian seasoned breadcrumbs
  • 2 tbsp panko
  • 2 tbsp grated parmesan cheese
  • olive oil spray, I used my Misto

Instructions

  • Preheat oven to 425°F. Spray a baking sheet with olive oil spray.
  • Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.
  • Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.
  • Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet.
  • Lightly spray the top with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked through.

  3. My son adored these! He just turned 4 and helped me pick a ton of recipes from Pinterest. These are the best looking and best tasting breaded chicken I have ever made!

    I did not find them soggy at all. Mine were wonderful and juicy on the inside, and quite crunchy on the outside.

    I misread the recipe and was dunking each piece of chicken (we had grabbed organic thighs) in the oil, and then coating. So we went through a lot more oil, and I think thus ended up with a lot more coating on each nugget, no complaints here 😉

    I had a dark cooking tray, with parchment paper laid down. I also did not have an oil spray, so we skipped that step.

  6. These healthy chicken nuggets are by far the best we have ever tasted! They are way better than any frozen nuggets you might find at the supermarket and they have no questionable ingredients! I used Trader Joe’s All Natural Boneless Skinless Chicken Breasts, which we love, and we have made them three times already! I’m sure they would taste great with good quality chicken breasts from any source, Not only are they perfect for kids but adults love them too! While I would never have eaten a fast food or
    a packaged frozen chicken nugget, I love these and they taste amazing!

  11. I made these last night and they were a big hit. I didn’t have Panko on hand so I just skipped it. The process of mixing the raw chicken with the olive oil in a bowl makes sense! The coating stuck on the each piece nicely and it got crispy!

  26. AIRFRYER UPDATE: used airfryer tonight on nuggets, they were amazing… preheat at 330 degrees; cooked for 10 mins, flipped half way and sprayed olive oil when flipped.

Have made many times and even made with crushed corn flakes when we were out of bread crumbs-of course the points are all different at that point, but we make Skinnytaste recipes because they taste good and not because we are counting points.     • Panko are Japanese breadcrumbs. They’re bigger and fluffier than packaged Italian breadcrumbs. They’re used for tempura. 🙂

  58. What brand of parmesean do you use… I’ve used some that have 20 cals for 2TBSP and I’ve also had some that have 110 cals for 2TBSP. It’s a big difference. Please help!

    • Off the top of my head, you could increase the panko ratio in the crumb mixture, or you could deep-fry them in oil. I’ve fried chicken bits in my wok for General Tsao’s etc. and they come out pretty crunchy. You can use batter if you do that too; a tempura-style batter would be very crunchy.

      • Anytime I want crisp in my fry or faux fry I add some corn starch to my breading mixture. A little goes a long way.

  69. Just letting everyone know that I prepped everything as Gina did and then froze them raw. It has been a few days and they come out awesome every time. My babies LOVE them!! I placed them in a sprayed pan and spray the top with a bit of olive oil. I baked at 425 for 8 minutes on each side. You would never know they were frozen! Love this recipe and so does my husband! Im so glad I decided to make a large batch. Quick and easy meal for my twins.

  79. I’ve been making your recipe for these for years now, and tonight I decided to experiment with hot sauce. I cut the chicken in strips instead of nuggets, coated them in this breading, and then tossed them in Buffalo Wing Sauce. The result was AMAZING!!! And the wing sauce only added 30 calories and no carbs! So glad to have this recipe!!

      I’m pretty sure that the nutrition information, including calorie count is for 1/4 of the given recipe. Since I doubled it, I would eat 1/8 of the pieces.

I made these about a week and a half ago but wasn't crazy about the parmesan and felt like they needed a little bit more flavor to make me truly love them (and I hadn't baked them long enough, so they were lacking the crisp coating that I wanted). Tonight I've modified them to my liking: Omitted the parmesan completely, but added in some ground flaxseed, and two McCormick seasonings (Perfect Pinch Salt Free Garlic & Herb, Perfect Pinch Original Chicken). They were perfect 🙂

  144. Make your own whole wheat bread crumbs. I use the heels of light whole wheat bread. Dry them on cookie sheets and then put them through the food processor to break down. You may end up with a few large chunks that won't break down so throw them away. Season with any herbs and/or spices you want. Much less expensive than buying seasoned bread crumbs. Don't know about you, but we usually throw the heels away and this is a great way to use them. Store in air tight container.

  155. When I make homemade chicken nuggets, I just put all my dry breading mixture and seasoning into a ziploc bag, shake to mix well, then add the raw chicken and shake to coat. My chicken is always sticky enough to hold onto the breading on its own. Then I just spray liberally with cooking spray and bake. It may not be quite as crunchy, but it does help cut down on time and energy expended, and it also might help cut down on oil used. I also usually add some ground flax seed and/or wheat germ to the breading to bulk it up and make it a bit healthier, but I'm not sure I've ever tried adding Parmesan to it. And the Panko would definitely add some of that sought-after crunch. I'm definitely going to have to try it.

When I was cooking them, it seemed like a lot of work to do when there are so many easy ways to get chicken nuggets, but when we tried them, it was totally worth it!! It is so nice to be able to eat tasty chicken nuggets that are all white meat and not filled with all of the nasty bi-products you get in the commercial brands.   188. While searching for low sodium recipes, this one popped up. Strange, because it doesn't give the sodium level in the nutrition guide. I'm looking for recipes to make, freeze and transport to my 87 y.o. MIL a couple hours away. She can't cook for herself anymore. My BIL (her main caregiver) can't be with her all the time to prepare her meals, so I've been cooking & freezing a lot of different foods for her to pop in the microwave when she's hungry.
    I looked up the sodium levels for the ingredients. I think I'll make them with only panko (7% sodium) and the parm (8% sodium)(whole wheat bread has higher sodium) and add Italian spices. Of course, leave out the salt & only use pepper. I'm also thinking of using a bit of Dijon (5% sodium) the olive oil (0% sodium) for more flavour. She is a very picky eater but loves white chicken meat, so I'm really hoping this will help with a few meals.
    I don't like white meat, but I might even try these using thigh meat for my husband and myself…after reading all the rave reviews. Thanks!

  253. I'm confused by the WW points value of this recipe. When I enter it in recipe builder, I get 6 points per serving not 4. I think the discrepancy is from the chicken. Two large chicken breasts are 6 points; however, if you use 16 oz of chicken breasts as stated in the recipe (1 lb) it should actually be 16 points.

    Overall, it was worth the 6 points (ate it with WW spicy fries – a healthy version of my favorite MCD meal).

    Here's a tip that saved me a lot of time and might help some fellow cooks–I used a bamboo strainer/skimmer tool to bread them–it made it really easy to move them from the olive oil mixture to the breading mixture without getting my fingers wet and crumby.

    I made these last week for dinner, and they were simply amazing!

    My small local store doesn't carry any whole wheat breadcrumbs, so I had to use reg. italian breadcrumbs. I used a bit more panko, for some extra crunch, and a bit more parmesan (what? I like things cheesy! 🙂 ). To season the chicken, I used some extra things, to use less salt nad still have tons of flavor– a bit of garlic and onion powder, a pinch of Mrs. Dash and Salad Supreme, etc. Oh, yum!

    I couldn't believe how crispy these came out–much better (and healthier) than fast-food nuggets and this time I actually KNEW what kind of meat (or lack thereof…) that I was eating.

    I will definitely be using this recipe again–this week I think I'll make chicken strips instead, serve them on a salad for a quick dinner!

  296. We loved these as well! I did it on the fly. I had no Panko or bread crumbs so I put six slices of whole grain bread in the toaster. After it was toasted, I broke it up into small pieces and put it in the blender on "crumb" mode. The end result was so tasty that I plan on making lots to freeze for quick cooking. I put the rye bread in the food processor then baked them for a few minutes and added Italian seasoning and paprika. Then I gave the corn flakes a spin in the food processor.     Since I sent my fiance to the store, I ended up having Roasted Garlic Bread Crumbs and Pam Spray instead of olive oil spray, but a few dashes of dried Italian spice mix and the substitutions were no problem at all!   362. I've been making variations of baked/healthy/fried/panko crusted chicken for years. I've never tried "nuggets" and also never thought about olive oil before coating them with crumbs. I wasn't too emotional about the whole thing but was so pleasantly surprised by how unbelievably moist they were! I left out the parm because I wanted to dip them in sweet chili sauce for me and my husband. Of course 10 year old son had ketchup. LOL. And I served them with roasted red potatoes and steamed asparagus. Very nice simple meal.

    After my sweet and sour chicken turn out a disaster I decided to make these because it's extremely quick and easy!

    However, I used regular Italian bread crumbs as I couldn't find whole wheat at Target and did not use parmesan cheese since I had none.

I actually liked the olive oil better than a buttermilk wash. It stuck better, didn't come off as much on the pan and were crispy. Plus the recipe was downright simple.     I see people keep asking about freezing but with the simplicity of the recipe, there seems little point. If you just froze the chicken pre cut, the prep tim would be 5 min. No point in possibily sacrificing texture by frezing.

  543. If you want to make your own breadcrumbs, just dry out slices of bread first. Place them on a rack over a cookie sheet and put into a 250 degree oven. Test them every few minutes to see when they have dried out. It depends on the bread so I can't tell you how long this takes.

    Cool. Break up into large pieces and put in a blender or food processor and give a whirl. I like mine a little larger so they are crunchier. Then season before using in any recipe. Gina's recipe is good, but sometimes I add some Italian Seasoning Blend too.

    This is a good use for bread that is past it's prime and you can avoid HFCS or any other ingredient necessary.

    • I made my own. I think the taste is far better plus its a lot cheaper. I was giggling to myself while reading all the posts about not being able to find WW breadcrumbs since it is sooo simple to make your own. Plus you can avoid some of the nasty ingredients used to preserve them. I make big batches at one time and freeze it so they stay fresh.

    I always list the raw weight so weigh it raw ad you'll be accurate but 4 oz generally becomes 3 when cooked. 8 oz becomes 6.

    I used 8 tbsp bread crumbs since I didn't have any panko – and I had at least 2 full tbsp of breadcrumbs leftover after I finished dipping – so you might be able to get away with something even lighter :).

    Definitely will eat again. I think the panko would have made it crunchier, maybe even given it a bit more taste, but they were delicious without it.

    I also had to bake mine for about 5 minutes longer than suggested – which is common with my oven – to get them to be as crispy as the ones in the picture.

    • Maybe you can prepare them and freeze uncooked…then cook them as you need them. I have done this before with making breaded chicken and it seems to work out fine.

    • Hey! I made these and a ginger sesame version of the same kind too. I then portioned them into snack baggies (the right portion size for me), and froze them inside of quart size bags. They've lasted me over 6 weeks so far in the freezer and they do really well!
