  1. I used large bell peppers and it was delicious. I don’t know how to count the carbs though.

  4. I made this tonight.  It was great!  Definitely going into the cooking rotation as a favorite!

  5. Yumm!! I used taco seasoning… my ground turkey was frozen, so after 25min I just added the taco seasoning into the IP and then topped my peppers with the meat and cheese 💜 topped with sour cream (I didn’t dilute it) and black peppers. Thanks!!!

  6. I need to calm down, these are the best “nachos” I’ve ever cooked let alone eaten!!
Followed the recipe exactly as written. This is absolutely going to be a routine staple in my home!!

  7. My husband went from “so…the nachos don’t have chips?” to “I’m going to eat the WHOLE PAN RIGHT NOW” so quickly! Thanks for a great recipe.

  8. Where can I purchase mini peppers? I don’t think Safeway has them…I’m located in San Francisco.

  9. It was excellent.! Did not use the cilantro or jalapeno,

  12. Made this for dinner tonight and it was awesome!! I am so happy I found your recipe for this as I was craving nachos for forever!! Thank you so much for sharing!! Another amazing recipe from you!!

  13. Gina,
This was fabulous. I had hoped to make it for Superbowl but was sick with a bad head cold. I had leftover turkey taco meat and made this tonight. I garnished with shredded lettuce, tomatoes, onions and chopped avocado. I loved it. A new staple for us — especially as I am maintaining my 76 pound weight loss by eating low carb. Who needs taco chips or shells (well I still really like those) when you have the crunch from the peppers.

  14. OMG…..I made these tonight for dinner & they are amazing. My husband & I loved them & the best part my 5 yr. old could not stop eating them. I can not wait to try more of your recipes.

  15. Made these tonight for dinner. Used a combination of Morningstar crumbles and Morningstar chorizo as we are trying not to eat meat. Added roasted corn and chili powder and it was fantastic. Highly recommend and will definitely make again.

  16. These were so yummy on a Sunday night when we just wanted “fun” food! I actually used 1 lb of taco seasoned shredded chicken breast in the air fryer., then added to the veggies, added broth/tomatoes, 1-2 tsp. of chipotle powder and simmered. SO GOOD. Was just what I had on hand 🙂

I skipped olives because of BF (he’s crazy), used a full jalapeno, Monterrey jack cheese and it was simply divine.

Thank you for another fantastic recipe! I actually felt good after eating nachos for the first time!!!
