Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers.
Skinnytaste Dinner Plan (Week 79)
Monday: Spicy Breakfast Fajitas with Eggs and Guacamole
Tuesday: One Pot Chicken Fajita Pasta
Wednesday: Chicken and Mushrooms in a Garlic White Wine Sauce with roasted asparagus
Thursday: Cajun Shrimp in Foil
Friday: Broiled Miso Salmon with sauteed snap peas
SPICY BREAKFAST FAJITAS WITH EGGS AND GUACAMOLE
- extra-virgin olive oil
- red, yellow, or orange bell peppers
- white onion
- ground cumin
- chili powder
- Pinch of red pepper flakes
- fresh lime juice
- corn tortillas
- olive oil spray
- large eggs
- crumbled feta or queso fresco cheese
- fresh cilantro
- Hot sauce and/or your favorite salsa
ONE POT CHICKEN FAJITA PASTA
- olive oil
- boneless, skinless chicken breasts
- ground cumin
- chili powder
- garlic powder
- white onion
- red bell pepper
- yellow bell pepper
- less-sodium chicken broth
- Mild Ro-Tel Diced Tomatoes & Green Chiles
- pasta (use gluten-free pasta for GF)
- light sour cream
- chopped cilantro
CHICKEN AND MUSHROOMS IN A GARLIC WHITE WINE SAUCE
- chicken tenderloins
- olive oil
- all-purpose flour* (use rice flour for gluten free, omit for paleo, w30)
- sliced mushrooms
- white wine (omit for w30, paleo)
- fat free chicken broth
- fresh parsley
CAJUN SHRIMP IN FOIL
- Cajun or Creole seasoning
- large shrimp
- fully cooked Turkey/Chicken Andouille sausage (Applegate)
- red bell pepper
- corn kernels
- fresh Italian parsley leaves
- fresh basil leaves
- dry white wine, such as Pinot Grigio
- olive oil
BROILED MISO SALMON
- wild salmon, skin-on
- white miso (available at amazon, or Asian, gourmet markets)
- grated ginger
- snap peas

These meal plans are wonderful! They save me so much time. I wake up on Monday morning, print out the meal plan, go grocery shopping, and ta-da, dinner for the week! More importantly, they are meals that I feel, are nutritious and health-conscious, and I feel good feeding my family. Oh! And they are delicious!

I love your recipes and site, but I’ve found that when I print from the button on a particular recipe, the margins are outside standard 8.5×11, so I lose some of the details and steps. And I have no way to adjust the print setting. Have you checked your print margins on those files? I love printing the recipes but am always frustrated by having to go back and write in the parts that are cut off.
That doesn’t happen to me, perhaps it’s your print settings?

Gina, please do continue providing the weekly meal plans. A little over a year ago my husband was diagnosed with coronary artery disease. He has already lost both parents and a brother to this. The damage done to his arteries is caused by his body making too much cholesterol. There is nothing that can be done about the amount of cholesterol his body makes–it is genetic. But what we CAN do is make sure he eats a very low saturated fat diet. That’s where you and Skinneytaste come in. For the past year (since his diagnosis) I’ve been cooking only from your recipes. I love the weekly planner and that you mix the recipes up in a pleasing, varied menu for me. Thank you so much for all you do. We’ve seen my husband’s numbers come down in most of his blood work, and the doctors are very pleased. I can’t make this go away, but you are helping me to battle what I CAN control to keep my sweet husband alive. We are high school sweethearts and have been married for 41 years now. Thank you for what you are doing. You bless me EVERY day,

I made your sofrito chicken last night since I hadn’t made it in a while. My boyfriend took one bite and said it was delicious. Tonight I’m making Salisbury steak which is one of his favorites.
