
I'm always looking for new crock pot recipes and have been meaning to make these for quite some time. This is a great way to make "baked" potatoes on a hot summer day without heating up the house. I loved the fact that the potatoes were ready when I got home from work. All I had to do was throw some steaks on the grill, make a quick salad and dinner was done in less than 20 minutes. The potatoes come out with a deeper yellow color when cooked in the crock pot but they taste just like they do in the oven and the clean-up is quick and easy. Top with your favorite fixins!
Crock Pot "Baked" Potatoes
Gina's Weight Watcher Recipes
Servings: 4 • Serving Size: 1 potato • Old Points: 2 pts • Points+: 4 (large is 5 points+)
- 4 medium russet potatoes
- aluminum foil
- Toppings (extra pts): light sour cream, fresh chives, bacon bits, broccoli, cheese
Wash and scrub potatoes until clean. Dry thoroughly. When dry, prick potatoes with a fork and wrap in aluminum foil.
Cook on low for 8 hours or on high for 4.

ReplyDeleteI've been doing this for years! I have never pricked them with a fork, though. It is so easy and they taste exactly like oven-baked. Much better than microwaving!

Yes, you put the foil covered potatoes in the crock pot and that's it. No water. Someone recently told me they make it in the crock pot without the foil and it works great too.

I wash potatoes real well, sprinkle w/Montreal Steak Seasoning & roll in foil then put on grill turning occassionally...probably about 20-30 minutes depending on size of potatoes; grill meat & all done!!! Easy clean up!

ReplyDeleteWhat a great idea! I thought of a great topping for these.. Green Giant makes those "Just for One" vegetable trays & there's a broccoli with cheese sauce that is 0 Points! I would think that would be a great topping! Will have to try it out this weekend. Thanks for all the great recipes, I am really loving your site!

We are finding the recipes from your site not only healthy and within the WW guidelines, but the best part is that they are truly far superior to those suggested by WW themselves. I am now a true follower of Gina's. We keep a folder of the "Keeper" recipes and so far we haven't thrown any away !!

I am making these today b/c on Wednesdays we have dog training class and usually either we have to pick up fast food and scarf it on the way, or we don't eat until 9 or 10pm when we get home after class. Now we'll have something yummy waiting for us right when we get home, and we'll be able to eat before class!

ReplyDeleteI never thought to "bake" potatoes in the crock pot. I gave it a go and they are wonderful!! I like to make a meal out of baked potatoes, so I topped mine with frozen broccoli w/ cheese sauce that is WW friendly and I believe only 2 PP. I had leftovers the next day for lunch at work. What a great idea!

ReplyDeleteI need to bring a dish for a LARGE family party, many of whom are Vegetarians, and several of us are WW....so, my question is, I have the large All Clad crock-pot..Can I just keep wrapping up potatoes until it is full and let it run? I would think maybe I would need to cook longer, and or rotate the batch 1/2 way thru the cooking process. What do you think? And a few sweet potatoes in the pot sound like a good idea too!

ReplyDeleteI do this a lot but I use crock pot bags.. putting the potatoes under the crock pot bag (with no wrapping).. then the main course over/inside the bag (just to keep the food separated) Its worked well! but FYI- I have a large crockpot and I only cook for 2..

ReplyDeleteI'm 50/50 on this one. How is running the crock-pot all day for some potatoes "better" than just microwaving them just before serving? Right now, I microwave my baked potatoes. I'm willing to do them in the crockpot but it seems like a lot of effort for the same result.

ReplyDelete@BSewingLady, the amount of effort is the same, but making potatoes in the slow cooker allows people to not use microwaves (lots of us aren't convinced of their safety, or just don't have one, or don't like the flavor of a potato cooked in one). Just another alternative!

I've got mine in the crock pot right now! I am eating these with a smaller portion of the coconut chicken salad. I absolutely despise how long it takes to make baked potatoes in the oven.. and how hot it makes the house. This seems like a really good alternative.
ReplyDeleteThank you for all of the wonderful, healthy recipes. My weight watcher journey would be practically impossible without them. I would say we use at least 5-6 of them every week. I love that they don't taste like 'diet' food and I don't think I have ever tried one that I didn't like. I cannot wait for your cookbook!

ReplyDeleteThere have been many times when I wanted to serve potatoes with dinner but chose (rice-cooker) rice, instead -- because I wasn't going to be home in the last two hours before serving dinner (which is typically when the potatoes should be in the oven)...

ReplyDeleteURGENT-Answer needed for tomorrow. I am going to furnish the potatoes for an after church dinner party for eight. I couldn't find and answer to an often asked question about the crock pot baked potatoes. How do you use this recipe for 8 or more potatoes. Can you stack them?
ReplyDeleteI made this last year for a very large party. I wound up baking my potatoes in the oven and then putting them in the crockpot at the party to keep them warm. (I transported the hot potatoes in the crockpot and then plugged it in when I got there.)
