I often make this egg sandwich for my daughter Karina because he loves it! Plus it’s inexpensive and easy to make. You can make it a day ahead if you want to pack it to eat on the go! Before I left my previous job in Manhattan, there was a small cafe that served this simple egg sandwich that I was hooked on. It’s so simple but the flavors just work with the tomatoes and scallions. Now that I work at home, I make it quite often for myself and my daughter as she often requests it.
Helpful Tips:
- Keep hard boiled eggs in your refrigerator for a quick breakfast on the go, to add to sandwiches or even salads. It only takes a few minutes to boil a few eggs, here’s a foolproof way to make perfect hard boiled eggs every time.
- If possible, boil older eggs first. Fresh eggs are harder to peel once hard boiled.

Egg Tomato and Scallion Sandwich
Ingredients
- 100 calorie sandwich roll deli thin flats, Martin potato rolls, etc
- 1 tbsp chopped scallions
- 1 large Hard Boiled Egg sliced
- 1 tbsp light mayonnaise
- 1 thick slice ripe tomato
- salt and fresh cracked pepper to taste
Instructions
- Assemble the sandwich by placing the egg on the bread, then the tomato, then scallion.
- Top with salt and pepper and spread mayonnaise on the top of the bread.
Loved this! I only found your website last week and have already made and loved all 4 recipes I tried so far. I think this simple sandwich will be a staple in my meal plans. I did not have low fat mayo so i used .5 TBS of what I had and I also added half a mini avocado. I weighed everything and entered into MFP for a total of 289 calories! Awesome!

I made this as breakfast when it snowed us in today and LOVED IT! I used Tony Cachere spice on it to improve the whole effect! Here’s the best part. My normal frozen breakfast sandwhich is 400 calories and 26 grams of fat. WOW! I’M HOOKED!

SO GOOD. I have this a couple of times a week because its such a refreshing sandwich.
I can’t find 100 calorie rolls so I usually make this as an open toast sandwich on a slice of wholemeal or rye bread. It’s SO GREAT !
