  1. Toast the bread – Toast slices until golden and crisp.
  2. Mash or slice the avocado – Scoop and mash with a pinch of salt, or simply slice if you prefer more texture.
  3. Cook the eggs your way:
    • Scrambled: Soft, creamy scrambled eggs.
    • Sunny-side up: Runny yolk, cooked gently in a nonstick pan.
    • Poached: Simmer in water with a splash of vinegar.
    • Hard-boiled: I have several methods to make hard boiled eggs, you can make basic stove-top hard boiled, air fryer eggs, or instant pot eggs.
  4. Assemble – Spread avocado on toast, top with egg, and finish with seasonings or toppings of choice.

  • To store unused ½ of avocado, wrap tightly with plastic wrap and place in refrigerator. They also sell avocado keepers (affiliate link) that claim to keep them fresher longer.
  • Leave the pit in and get the wrap as close to the surface of the fruit as possible.
  • If browning occurs, gently scrape the exposed flesh with a butter knife and voila, beautiful green avocado lies within!
  • For meal prep, it’s best to use the hard boiled egg option.

Ingredients

  • 1 slice sourdough bread, whole grain or gluten-free bread, toasted (I love Dave's Killer Bread good seed, thin sliced)
  • 1 ounce mashed, 1/4 small haas avocado
  • olive oil spray
  • 1 large egg
  • kosher salt, and black pepper to taste
  • hot sauce, or red pepper flakes, optional

Instructions

  • Mash the avocado in a small bowl and season with salt and pepper.

For Sunny Side Up Egg Option:

  • Heat a small nonstick skillet over low heat, when hot spray with oil and gently crack the egg into the skillet. Cover and cook until the egg sets and the yolk is to your liking.

Hard Boiled Egg Option:

Scrambled Egg Option:

  • Beat the egg in a small bowl with a fork and season with a pinch of salt. Heat a small nonstick skillet over low heat, when hot spray with oil and pour the egg into the skillet. When the edges start to set, gently fold the eggs until the eggs are cooked through, about 2-3 minutes.

Poached Egg Option:

  • Bring a small pot of water to a boil. Crack the egg into a small bowl. When the water is boiling stir 1 teaspoon of white vinegar into the water and stir in a circular motion to create a vortex. Lower the heat then carefully add the egg to the middle of the pot and cook for 3-4 minutes, until the yolk is cooked to your liking. Remove the egg with a slotted spoon and place on a paper towel.

To finish the avocado toast:

  • Place mashed avocado over toast, top with egg, sprinkle with salt and pepper and/or hot sauce or red pepper flakes, if desired!

There’s many great bread options to make avocado toast. If I am using a fresh bread, I usually like to use my homemade sourdough bread, rye or pumpernickel. For a shelf stable bread, Dave’s Killer Bread thin sliced is my favorite. If you need a gluten-free bread, schar gluten free bread is a great option.

  1. I chop the toast up into cubes and then put poached eggs, avocado cubes and everything bagel seasoning in. The toasted cubes soak up the runny yolk, making a very yummy breakfast bowl

  2. I love avocado toast and I love sunny side up eggs so this was delicious! Next up: adding lox, thanks!
    One thing I like to add to avo toast is burst cherry tomatoes- I sauté them with a spritz of oil and herbes de Provence, until they’re blackened and burst. With the avo and egg it’s really yummy & filling, without adding more than a few calories.

    I’ve already been using Dave’s killer bread for a few years now. 2nd choice is Angelic Sprouted Wheat if you can’t handle seeds. I add 1/8 t salt, half that of pepper and a small squeeze of lemon to avocado half.
    Top with egg and PENZEY’S (spice company out of Wisconsin) FORWARD, a spice mix! Delicious 😋

  5. Tried it with hard boiled egg. Added a little bit of vegan mayonnaise to the avocado to thin it out. Not a fan of avocado but enjoyed toast this way. Will be doing it again and trying other variations as well.

    Always start my day with porridge, blueberries and honey but if I know I might not be catching my lunch I’ll have avocado toast. Avocado and cherry tomatoes topped with a drizzle of hot sauce and balsamic drizzle.

  10. I decided to try this recipe using Trader Joe’s pumpernickel panne and jammy eggs_ cooked in the microwave until the yolks were cooked about have way between soft and hard. This is amazing! Definitely a new favorite breakfast, or even lunch or light dinner!

  11. Best way (IMHO): Find a really good multigrain bread for toast (bakery, not supermarket). Mix lots of lemon juice into the avocado mash – need not be fresh squeezed – and salt to taste. Top with sprouts, alfalfa, radish, etc., or with microgreens. Add egg (up or over easy) on top. Delish!

  13. Made this recipe with a few alterations, was so good I made a second one. Used sourdough bread for the toast, fried egg over easy. Mashed half an avocado onto the toast, and then coated that with a layer of newman’s medium black bean salsa. Easily the best breakfast sandwich I’ve ever had, and super easy to whip up. The black bean salsa really brought it all together. Highly recommend.

    This is my favorite breakfast. I use light bread to save on points and I like it with Everthing but a Bagel. However, it is even good without ir. I find this to be quite filling and after the first time or two it just takes minutes to make. I scoop and mash the avocado while the egg is frying and I cook it in 1 tsp olive oil.

  18. Yum!! Loved using a sunny side up egg, I usually do poached. I like to add just a bit of garlic powder to the avocado too!

    BEST AVOCADO HACK EVER- run it under cold water immediately after cutting it in half, it stops the oxidation process and your avocado will stay bright green for days, even in a ziplock bag!!

  23. My favorite way to eat an egg! I slightly guacamol-ize the avocado by adding a spritz of lime juice and a little chopped cilantro. Great breakfast!

I mix some lemon juice in with the mashed avocado – spread on toast, then put thin ribbons of cucumber on top (use a peeler long ways down the cucumber) egg on top then some “everything but the bagel” seasoning on top.  I’ve also seen it with just sesame seeds on it opposed to the everything.

    When I have no time to cook an egg, I mix I/4 to 1/2 medium avocado with an Instant Pot hard boiled egg and put it on Trader Joe’s Sprouted toast. It’s egg salad without the mayo. I use Jane’s crazy salt, or TJ’s Everything but the Bagel salt.

  27. What about browning slices of Avacado using olive oil. Scramble the eggs then stuff them in a hot biscuit. Top it off with a slice or two of the fried Avocado and s slice of cheese if that is your thing.Since I do not eat anything that is not cooked especially runny egg yolks this seems like it would be tastier than half cooked eggs on toast..

  28. My wife showed me this a few weeks ago, & it’s like all I ever want for breakfast nowadays. Suggestion: add slap-ya-mama Cajun seasoning to the egg (or avacado) before cooking. Not to mention, when I break it down by cost, this meal runs only $0.80 here in Alaska where the cost of living is a bit higher than most places in the lower 48. Well worth it imo

    I don’t eat eggs but started working out and knew pancakes and French toast were not a good idea. Gave it a shot and is was delicious to say the least!  I even tried hot sauce for the first  time!

  31. This is amazing! My 15-year-old daughter and I both loved it. We used a homemade guacamole instead of just the avocado because we had just made some over the weekend. The added onion, tomato, and jalapeno are great. I’m sure it’d be good with just avocado, which we’ll experience after the quac is gone!

  32. I prefer sliced avocado to mashed because I like the slightly firmer texture. Also, if it’s a large avocado, I’ll do half and then spray the unused side with olive oil Pam, wrap and save. That works well to keep it from browning. I spread the half avocado (or if a very small avocado, I use the whole thing) across the plate in slices, use an over-easy egg that’s nice and runny, salt and pepper the whole thing. Then here’s my secret extra-yummy ingredient: on the whole wheat toast, I’ll spread a very thin layer of a “smoky bacon flavored” mayo that I found in a store. If you’re using butter or margarine on the toast, it’s an even swap. A bit more calories than the stated recipe, but OMG incredibly delicious! With a bacony flavor without all the calories of the actual bacon. Yum!

  33. I use a of SaraLee 45 calorie bread. I poach the egg. Use 1/4 of an avocado sliced. Put the avocado slices on the toast, top them with the egg, then sprinkle fresh dill on top. Add a few flakes of red pepper flakes too when I want some zing.

    Made this as suggested and it is so delicious! Found my new go-to breakfast! Give it a try, you will not be disappointed.
    When I cook my egg(s) I:
    1. pre-heat the pan
    2. spray with Pam
    3. crack 1-2 eggs
    4. add 2-4 tablespoons water
    5. put on tight fitting lid
    6. let cook for 40-45 seconds on medium heat, remove lid and slide eggs onto a plate, YUM!
    Best way to cook eggs with no added calories!

    1. This is a great breakfast. Add crushed red pepper to it. Also: the egg must be sunny side up for maximum flavor!!! U

  36. How do you cook your sunny side egg in a way that it comes out looking so perfect?  If my heat is too low, my egg runs too thin. Do I need a smaller pan, or am I just not getting the temperature quite right yet?  I don’t usually cover my pan, I flip the egg. Does covering prevent you from having to flip? If so, how long do you keep it covered?

    Instead of salt, have you tried crystalized citric acid (Eastern European “sour salt”)? It keeps the avocado from browning.

    I made this today. Whole Grain breads vary fairly significantly by calorie count. I saw up to 120 calories per slice on the store shelves. I bought Nature’s Own Lite Sugar Free 100% whole wheat/100% whole grain bread, with 11 grams of whole grain per slice. It is 50 calories per slice.

    Given the savings of up to 60-70, calories, I fried the egg in olive oil, patting it down with a paper towel afterwards, and used a full half of the avocado in slices, beneath the crisply fried egg. On top of the egg I put five slices of thin sliced turkey pepperoni (5 cals per slice) and about a 1/2 ounce of shredded jack cheddar cheese, which I melted in the microwave. With the S&P, and a couple of shakes of habanero hot sauce, it was flipping delicious. I highly recommend it, and look forward to having it again tomorrow morning.

    My best guess is that between the cals saved on the bread choice, and those added via the use of olive oil to cook, the turkey pepperoni (25) and the cheese, the calorie count might come up to 350-ish. To me, the taste easily justifies 4-5 more minutes/day on the treadmill, but that’s just me. 😉

    Avocado storage without browning!!!
    -clean the entire avocado
    -slice or mash all the fruit as required
    -place in a plastic storage container in small piles so that you can easily remove a section
    -place container in freezer
    -when ready to use, remove the slices or mashed “blob”
    -microwave for about 20-30 seconds prior to using

    I, too, am obsessed with avocado on toast…..have been eating this for breakfast for quite a while……I love it and it is so healthy.

  46. Instead of salt & pepper, try this exact some thing but with everything bagel seasoning from Trader Joe’s, it’s incredible. Also, if you want to add a little kick, put some sriracha on it. Avocado on toast is one of my favorite foods.

    Another favorite combo is goat cheese, avocado, and strawberries.

  47. I really like avocado toast, and not just for breakfast. I don’t use hot sauce, that being a personal preference, but I have on occasion topped the hot egg with a very thin slice of extra sharp cheddar cheese. While it doesn’t fully melt, it adds so much good flavor, and the piece is so small it doesn’t add much at all in the way of sodium or fat, it’s totally worthwhile, and my cardiologist has no issues with it (as long as the cheese isn’t added on every time I make the toast 🙂 ).

  56. I by my Ezekiel Bread in Safeway in freezer section with other Gluten Free products. It is perfect toasted. I notice when I use other whole grain breads the slices are bigger and are way more calories. One slice EZ bread = 2 WW smartpoints. It has such great texture and taste.   57. I like mine as follows. Ezekiel bread toasted, some harissa on top of that then mashed avocado with a bit of sundried tomatoes in it, then a poached egg on top and a bit of goat cheese, delicious.

  61. Crushed red pepper on these instead of the hot sauce is awesome, too! I like to warm the avocado in the pan next to the egg so the whole dish is warm.

  62. I like mine with soft boiled eggs and sea salt flakes or with coconut flakes and a little coconut oil! I also use red pepper flakes or sriracha!

  63. Just had this for breakfast this morning and was thinking about what a life-changer this recipe has been! I have to be out the door early every morning and have less than 10 minutes to make and eat my breakfast and this is the absolute perfect solution to that. I LOVE LOVE LOVE this!

  64. I use Dave's bread, the mashed up avocado, sliced hard boiled egg ( which I precooked and pre peeled), salt and pepper and a little cayenne pepper. Very yummy and filling! On a side note I learned new technique for preparing my hard boiled eggs….by steaming! I used a steamer pan that fits on top of my saucepan…20 minutes…plunge in cold water….easy peasy peeling!!

    2. Excellent! I used whole wheat English muffins too, an avocado from a neighbors tree and steamed the eggs in an electric egg steamer that does 6 eggs in 7 minutes! Yum! Hot sauce adds a lot of flavor. Hubby was impressed!

    I do something similar. I make smashed avocado mixed with lemon juice and pink salt. I put it in a bowl and top with sunny side up with sriracha drizzle and I eat it with whole wheat wasa crackers mmmm gets me so energized!

  67. I absolutely love avocado toast! I first had it at a restaurant in NYC called Gitane. Sadly, it closed down. 🙁 They sprinkled red pepper flakes on top of the mashed avocado, which gives it a kick! So, now that is what I do when I make it. Love a runny egg on it, too, Gina. Whole Foods makes a bread called Seeduction bread, which is absolutely delicious–they even cut it into slices, if you don't want to slice it yourself. It keeps great in the refrigerator and the freezer.   69. Yummy! I'm from New Mexico, so I used green chile instead of the hot sauce. Delicious! Although I've had this dish with the hot sauce and it's still wonderful. Hot sauce gives it a little kick from the southeastern region of the US.

      I just read that farm fresh eggs can be hard boiled boiled in the instant pot. They peal easily that way.

  71. I have been thinking about this recipe since I read it yesterday. It combines one of my favorite breakfast (egg on toast) with another favorite. I would have never thought to combine these. Brilliant and so simple! I had to restrain myself from licking my plate.

  72. I have been eating Avocado Toast for a couple of years now. I usually just take half the avocado and spread it on two pieces of Rye and sprinkle the mashed avocado with Chipotle Pepper on both pieces of Rye. Then I add Baby Spinach to both pieces of toast. Each day at lunch is a different option. Many times it is a fried egg or a sliced hard boiled egg with my choice of cheese for the day. Sometimes Feta. Sometimes Goat, Sometimes Cheddar. When I don't use an egg I use tomatoes and peameal bacon. It is my healthy fat for my lunch and it keeps me full until dinner.

  73. This looks so good! We moved to Florida a couple of years ago and I've discovered the Florida Avocado which I actually prefer to the Haas now (plus they're twice as big and half the price). They've got half the fat of a Haas avocado too! Definitely will try this recipe soon!

  76. I have been having something similar for breakfast lately! Ezekiel sprouted bread, mashed avocado, saurerkraut (Farmhouse Culture!) and a sunny side up egg. Also sometimes hemp seeds sprinkled on top!

    1. If you have a pinterest account, you can pin the recipe. What I usually do is copy and paste the recipe into my gmail account. Gmail allows you to create documents, spreadsheets, etc.

I'm going to see if I can get better results from my crockpot now that I'm retired and will be able to monitor the length of cooking more easily.   79. I have used swiss cheese to top my avocado toast. Sometimes I add a layer of chicken breast. Sliced avocado works well.

  80. I love egg on toast with avocado! I don't mash my avocado. I score it in the shell and scoop it out onto the toast and smush to spread lol. I prefer my egg over easy. Yum!

    This with a sprinkle of cheese. Yum!

    To keep my avocados we wrap them in foil. If you get a brown layer just scrape it and the vibrant green is just beneath. Lime works well to help them keep too.

    I make this exact breakfast often when I have a busy day ahead. And if I don't want the carbs from the bread, I do it over lightly sauteed baby spinach. Either way its yummy and healthy!

  84. I love to top my avocado toast with sliced banana and a sprinkling of chia seeds. Sounds a little odd, but it's very good!
    The egg on top sounds yummy though!

    How do you keep the leftover avocado from browning? Do you just douse it with lemon juice? Often times when I do that, it still seems to turn grey or brown. I guess it doesn't really matter since it doesn't impact the taste, just the visual appeal.

    1. if you only use half the avo, leave the pit in the other half and tightly wrap it with plastic wrap and store in the fridge. It will be great for a day or so. Make sure you wrap the plastic tightlyso no air bubbles are on the flesh, it shouldn't go brown.

    2. I also found that storing the leftover avocado in a container with diced red onion helps preserve the avocado almost impeccably for a few days. I've tried the lemon juice and/or plastic wrap thing, but this is the only trick that prevents pretty much any browning. I figured this out by accident since I happened to have both red onion and avocado leftover one day, but it was a happy accident!

      I keep it in the skin and wrap it with plastic, nothing on it. Then if I use it for dinner it's still good, or if I use it the next day and a little brown skin forms, I scrape it off. The rest is still perfect.

  86. This sounds wonderful, and a great use for my avocados. You mentioned that you keep them in the fridge. Does this keep them longer? Or if you have any tips for keeping them without turning brown, please share. I can never seem to use them fast enough!

    1. once they reach the desired ripeness, put them in the fridge, this stops them from getting any riper and they keep really well.

    2. I agree with Anonymous. I put my avocados in the fridge as well once they've reached desired ripeness to keep longer.

      Actually yes, I usually buy a bunch, leave one out to ripen and the rest in the fridge since it slows down the ripening.

    4. We leave ours on the tree and they last longer but since that isn't possible for everyone, keep the seed inside the cut half you aren't using and that delays ripening further.

    5. I just read that leaving the pit in the unused half does not stop browning. The thing that works the best is plastic wrap directly on the cut surface. It will still brown a little but easily scraped off.

      Yes that's what I do, plastic wrap works great, plus leaving the pit keeps the whole covered so that doesn't brown.

  87. What's in the whole grain bread though? We usually stay away from store bought bread because of all the added preservatives. I make my own bread.

      I bought this in the bakery, it's fresh baked whole grain bread. No brand, but of course if you bake your own even better!!

    3. Try the Ezekiel 4:9 Bread. Its kept in the frozen section. It's a sprouted grain bread. It's a sprouted,flourless grain bread with no preservatives. For some it may be an acquired taste but for me it was love at first bite. I agree with you. I stay away for other breads.

      So then don't use the store bought bread just because the recipe is using it. If you are smart enough to make your own bread, then I think you can figure that one out. Humblebrag in the form of a question. Classic.

      1. Me too! Love the Raisen Cinnamon bread from Food For Life. There is no such thing as “healthy Wheat Flour” bread…only bread that is sprouted or made with non-wheat is healthy! Do I get a gold star too? And what’s wrong with saying “I make my own bread”? Kudos! I wish I had time to do that but then I would have to sprout my own grains, etc. No time for that! Thank God for Food For Life!

    5. The Ezekiel bread is 100% natural ingredients. My late mother was so allergic to commercially made soft breads that she was forced to eat E-bread–she did love having her toast with coffee!–and she was into all natural, organic eating for her and Dad. It’s not loaded with chemicals, and MUST be kept either refrigerated or frozen, or it will spoil in an extremely short time, especially in a house that has no a/c. The bread is filling–somewhat chewy, not being made of flour–and has good flavor when toasted, as Vivian noted in her comment.

    1. I didn't have hot sauce which would have made a big difference but still enjoyed it. Next time I will poach my egg instead of using the spray to fry it.

    2. P.S I forgot to mention I used the "Ezekial Bread". It's flourless made with grain/sprouts. When toasted it enhances the flavor and texture so well. I buy the low sodium one. Trying to get off the blood pressure med and the diuretic.
