
Nothing beats the flavor of homemade salad dressing. Making your own salad dressing gives you control of what ingredients go into it. Serve this with a wedge of iceberg lettuce, as a dip for skinny buffalo wings or one of my favorite ways to enjoy this is on a roast beef sandwich on a good whole wheat crusty bread with arugula.
Low Fat Creamy Blue Cheese Dressing
Gina's Weight Watcher Recipes
Servings: 8 • Serving Size: 2 tablespoons • Old Points: 1 pt • Points+: 1 pt
Calories: 46.8 • Fat: 3.0 g • Protein: 2.8 g • Carb: 2.2 g • Fiber: 0.3 g
Ingredients:
- 1/2 cup crumbled blue cheese
- 6 oz fat free Greek yogurt
- 1 tbsp light mayonnaise
- 1 tbsp lemon juice
- 1 tbsp white wine vinegar
- 1/8 teaspoon garlic powder
- salt and freshly ground black pepper
Directions:
In a small bowl, mash blue cheese and yogurt together with a fork. Stir in mayonnaise, lemon juice, vinegar, and garlic powder until well blended. Season to taste with salt and pepper. Makes 1 cup.

ReplyDeletei make one similar but reduce make it healthier. it's amazing! skip the mayo. mix in olive oil. also, use non-fat greek yogurt instead of plain yogurt.
ReplyDeletesometimes if i plan ahead, i actually roast spring onions (chopped) or green onions (chopped) w/ olive oil and then mix that into the blue cheese dressing (no need to double up on the EVOO). i always get rave reviews on that one!

ReplyDeleteI made this tonight and I thought it was a good start but too 'yogurty'. Another low fat recipe uses 2 oz yogurt, 2 oz fat free sour cream and 2 oz buttermilk. I may try that variation next time. I also added fresh tarragon as new shoots are just poking up.
ReplyDeleteI made this and it tasted great. The problem was I mixed it, covered it and placed it in the fridge while I made the salad. Some kind of chemical reaction occurred and when I took it out (about 30 minutes later), the conisstency had broken down and it was now as thin as water. Did I do something wrong?

ReplyDelete@myra- that's strange, it should remain creamy, even the next day. Not sure what went wrong. I never had that problem, in fact I have a fresh batch in my fridge from yesterday and it's fine.
Maybe I'll try Greek yogurt next time.

ReplyDeleteI read this recipe yesterday...and knew I wanted to make it last night. I ran to the store and got "all" the ingredients so I could make it. BUT I forgot the vinegar. So I made it as you suggested with adding the same amount of water as you would vinegar. Turned out delicious. AND, I added only 1/2 of the blue cheese and left out the salt. I was awesome. No doubt that Gina's recipe made properly is better, but I thought mine was tasty...and probably an smidge less in points :)

I also made a yummy Spinach Salad as well because I don't typically keep iceberg on hand. Dinner will be yummy tonight! (if I stop dipping carrots in it!!)

ReplyDeleteMy husband and I LOVED this recipe, and he usually hates "low-fat" versions of dressings. I used nonfat Greek yogurt and a vegan low-fat mayo. He did comment on the tanginess, but I think the minor modifications I suggest on my blog would take care of that. I'm looking forward to trying more of your recipes!

ReplyDeleteMade this the other day. It is the best blue cheese dressing I have ever tasted. I had it three days in a row on lettuce wedges. My whole family loved it . From now on it will be the only blue cheese dressing I will ever use. Followed the recipe to the letter and it did not separate even after being in the fridge for three days.
