I have so missed Chiles rellenos since I started Weight Watchers, and as this s a lifestyle change, I never imagined I could eat them again. I’m so looking forward to trying your stuffed poblano recipe!
Sometimes I think you’re speaking directly to me! Yes! I’m new to Skinnytaste. Yes! I want to cook more in 2018. I love your meal plans and I hope they never go away. Thank you for all of your efforts. I was very proud of the dinner I made tonight. It was your Salisbury Steak Meatballs with Creamy Cauliflower Puree and Easy Garlic Broccolini. I made it all. The cauliflower puree was so surprising. The whole family loved this whole dinner.
Thanks Gina for all your lovely recipes, I have both cookbooks and love them both, I live in Ireland, and sometimes it’s not easy to pick up everything, so I have to substitute. Happy New Year to you and your family.
Love Anne
i adore all of your recipes, but the skillet cheesy chicken and veggie rice dish was my absolute favorite!! I make it at least once a week, it’s so quick and easy, and filling to boot! Usually I miss carbs in my meal, even when i make things from your site, i usually have to add a carb to the mix to feel full, but for this dish, i really don’t miss the rice! thank you so much for sharing all year long, you give me so much inspiration and help to make a healthy meal that doesn’t take forever when i get home from work!!
More desserts next year please!
Thank you for your wonderful recipes and blog. I have both of your cookbooks and they are my go-to recipe sources when I am looking for something light and tasty. I especially love your soup recipes. Thank you for all of your hard work and dedication. Happy New Year!!!
I’m really looking forward to another year with your recipes, Gina! I have both cookbooks and use your site a ton. Happy new year and thanks for all you do!
I think Chipotle Chicken Bowls with Cilantro Lime Quinoa is going to be our NYE Dinner. Thank you for posting!
I just made the chunky beef cabbage soup except I used ground turkey and it was delicious! Thanks for all of your wonderful recipes. 🙂
We love the sheet pan balsamic herb chicken and veggies… so easy and minimal clean up! Cheers to a great 2017 and a bright 2018, Gina!
You too Katie!
Your enchiladas verde are the bomb diggity-my daughter makes them as soon as she returns home from college and we all dig in. Thank you for all of the wonderful recipes. Happy New Year!!
Thank you Laura!
